4 oz Butter
3 Tbl Minced garlic
Favorite hot sauce to taste
2 tsp Cayenne
3 tsp Worcestershire sauce
3 Tbl Ppaprika
1 bottle Heinz Chili Sauce
1 Bottle Bottle of Lobster or Clam juice
15 oz 15-count peeled and deveined shrimp
8 oz Scallops
8 oz Crab (You can get Blue Crab at one of the Big Warehouses)
1/2 cup White wine (Your favorite)
2 Tbl Brandy ( I love the taste of B & B)
1 pint Cream
White pepper and salt to taste
1/2 cup Parsley, chopped

Steps:

  • Melt your butter in a saute pan add your garlic, hot sauce, Worcestershire sauce and cayenne.
  • Saute each type of seafood separately. Pull out each type when 2/3 cooked and place in one separate bowl.
  • Add wine to sauce and scrape bottom of pan to absorb any dark bits into your sauce.
  • Put left over sauce into a dutch oven and add clam/lobster juice, chili sauce, and Bandy.
  • Simmer sauce for a few minutes; add the seafood. Cook till seafood is done.
  • Add cream and season with white pepper and salt to taste.
  • Garnish the dish with chopped parsley.

1 pound fresh lump crabmeat
3 tablespoons butter, melted and cooled
2 tablespoons olive oil
2 (8 ounce) filet mignon steaks
coarse sea salt and coarsely ground black pepper to taste

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Toss the crabmeat in the melted and cooled butter. Set aside until ready to serve.
  • Pat filets mignons dry and season with salt and pepper. Heat olive oil in large heavy skillet over medium-high heat until hot, but not smoking. Brown filets on both sides, about 3 minutes per side. Transfer filets to an oiled baking pan and roast in the middle of the preheated oven until they start to firm, and are reddish-pink and juicy in the center, about 10 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Top each filet with the crabmeat and butter mixture.

6 Dungeness crabs, about 1 1/4 pounds each, cooked, cleaned, and cracked
3 cups extra-virgin olive oil
20 garlic cloves, finely minced
Gray salt and freshly ground pepper
1 cup freshly squeezed lemon juice
1 cup finely chopped fresh flat-leaf parsley
8 (#10) tin cans, lined with newspaper

Steps:

  • Cleaning dungeness crab:
  • Holding the body backside up, place your right thumb in the joint between the upper and lower shell on the side opposite the mouth. Your palm will be stretched across the top of the shell. Hold the bottom of the crab in your opposite hand. Force your thumb in and pull up and back to your right until shell snaps off. Pour any juices in the shell into a small bowl. Cut the body into quarters with a large knife. Twist the legs off the body. Crack lightly in several places with a nutcracker and set aside.
  • Heat the olive oil in a very large ovenproof saute pan over medium-high heat until hot. (You may need 2 pans.) Add the crab and garlic, and toss well. Saute for about 10 minutes. Season, to taste, with salt and pepper and mix in lemon juice. Saute for another 5 minutes, then add parsley. After another 1 or 2 minutes, remove the crab and serve in the newspaper lined cans.

¾ cup unsalted butter
2 heads garlic, chopped

1 pound uncooked medium shrimp, peeled and deveined
1 pound Snow Crab legs
2 lobster tails, split in half lengthwise

Steps:

  • Remove grit from clams by soaking in salt water for 20 minutes. Repeat this step twice. Scrub shells clean.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Melt butter in a medium saucepan over low heat with garlic, Cajun seasoning, seafood seasoning, and cayenne until garlic is fragrant, 1 to 2 minutes. Remove from heat.
  • Place clams, shrimp, crab, and lobster on a sheet pan. Add sausage and corn. Pour seasoned butter over and mix to ensure all is covered.
  • Bake in the preheated oven until shrimp just turns opaque, clams open, and sausage is browned, 25 to 30 minutes.

1/4 cup olive oil
2 tablespoons minced garlic
1 tablespoon minced shallot
1 1/2 teaspoons dried crushed red pepper
2 large Dungeness crabs, cooked, cleaned, and cracked (about 4 1/4 pounds)
2 tablespoons chopped fresh thyme, divided
2 tablespoons chopped fresh parsley, divided
1/2 cup blood orange juice or regular orange juice
1 teaspoon finely grated blood orange peel or regular orange peel

Steps:

  • Preheat oven to 500°F. Melt butter with oil in heavy large ovenproof skillet over medium-high heat. Stir in garlic, shallot, and dried crushed red pepper. Add crabs; sprinkle with salt and pepper. Sprinkle 1 tablespoon chopped thyme and 1 tablespoon chopped parsley over crabs. Stir to combine. Place skillet in oven and roast crabs until heated through, stirring once, about 12 minutes.
  • Using tongs, transfer crabs to platter. Add orange juice and peel to same skillet; boil until sauce is reduced by about half, about 5 minutes. Spoon sauce over crabs. Sprinkle with remaining 1 tablespoon thyme and 1 tablespoon parsley and serve.

42 ounces red snapper fillets, skin on
3 teaspoons seafood seasoning (store-bought, your own recipe or Seafood Seasoning Mix)
1 cup flour
1/2 cup clarified butter
1 cup fish stock or 1 cup clam juice
1 1/2 cups crabmeat, picked over for shells (16 ounces)
1 cup butter, room temperature
1/4 cup sun-dried tomato packed in oil, minced
1/4 teaspoon salt
1 teaspoon fresh basil, minced
1/8 teaspoon cayenne pepper
2 tablespoons garlic, roasted

Steps:

  • To make the butter: whirl all ingredients in blender or food processor until smooth. Refrigerate until ready to use.
  • Preheat oven to 450F; spray two large saute pans with cooking spray and place in oven to heat.
  • Warm serving plates.
  • Season fish with 1/2 teaspoon seasoning and dust the skin side with flour.
  • Add 1/4 cup clarified butter to each saute pan.
  • Place fish in hot butter, skin-side down and cook for a minute.
  • Bake in oven for about eight minutes or until flesh flakes easily.
  • Place a fillet on each serving plate; discard butter and return pans to high heat.
  • Add 1/2 cup stock or clam juice to each pan and bring to a boil.
  • Add half the tomato butter to each pan and heat until butter is nearly melted.
  • Add 3/4 cup of crab meat to each pan and cook until heated through.
  • To serve: Divide the crab meat and sauce evenly over the top of each piece of fish.
  • Serve immediately.

6 teaspoons Louisiana caviar, for garnish

6 small sprigs fresh dill, for garnish
6 small sprigs fresh chervil, for garnish
1 quart heavy cream
1 pound Silver Queen corn kernels
Kosher salt
Cayenne pepper
10 eggs
2 tablespoons butter
1 1/2 pounds jumbo lump crabmeat, picked over
6 ears fresh baby corn, blanched and sliced into rounds
1 teaspoon lemon juice
Hot pepper sauce
Sea salt
2 stalks lemongrass
2 cups fish stock or fumet
1 cup Silver Queen corn kernels
Sea salt
1 tablespoon butter

Steps:

  • In a shallow bowl, combine Parmesan cheese and flour. Lightly score the skin side of the fillets several times to form a cross hatch pattern without cutting into the flesh of the fish. Season the portions of the blackfish with salt and a touch of lemon juice. Dredge the seasoned fish into the Parmesan/flour mixture.
  • In a large heavy skillet over medium heat, add olive oil. Add fillets, skin side down. Cook until skin is crisp, about 4 minutes. Flip fish and cook until fish is just cooked through, about 2 minutes. Once the fish is cooked, remove it from the pan and place on absorbent towels to rest in a warm place for a moment, while the plate is being composed.
  • To serve, remove the Silver Queen Corn Pudding from molds and place into large, shallow bowls. Over the warm pudding, place a portion of fish. Over the fish, spoon on the Saute of Crab and Baby Corn. Carefully pour a small ladle of Silver Queen Foam around the fish. With 2 demitasse spoons, form the caviar into quenelle or egg shapes and place over the fish next to the bed of corn and crab. Lightly garnish the fish with chives, chive blossoms, dill and chervil.
  • Preheat oven to 275 degrees F.
  • In a 4 quart saucepan, bring cream and corn to a boil. Reduce heat and simmer until corn is tender, about 5 minutes. Pour mixture into a blender and blend until smooth, season to taste with salt and cayenne pepper. Strain the mixture through a fine strainer into a bowl.
  • In another mixing bowl, beat the eggs. Slowly pour the hot corn mixture into the eggs, whisking constantly to avoid curdling the eggs. Pour the custard into individual custard cups or molds, preferably nonstick. Place the molds in a roasting pan and pour hot water in the pan to come halfway up the sides of the mold. Bake until custards are just set, about 20 minutes.
  • In a medium skillet over medium-high heat, melt butter. Add crab and corn, cook, stirring, until mixture is just heated through, about 2 to 3 minutes. Stir in lemon juice, remove from heat and season with hot pepper sauce and salt.
  • Cut lemongrass into 2-inch pieces and bruise with the back of a knife. Place lemongrass in a piece of cheesecloth and tie closed.
  • Combine lemongrass, stock and corn in a saucepan. Gently bring to a boil, simmer 15 minutes, remove from heat and let steep 15 minutes. Remove cheesecloth, puree mixture in blender, and pour through a fine strainer, pressing on the solids to extract as much flavor as possible.
  • When ready to use, bring the broth to a boil, season to taste with salt, whisk in butter and froth with a hand-held immersion blender.

Teaspoon of garlic
Teaspoon of shallots
Pinch of basil
Teaspoon of Tabasco

One ounce of white wine
Two ounces Heavy Whipping Cream
Two heaping tablespoons of tomato paste
Three ounces of mixed peppers( green, red, and yellow peppers)
Twelve ounces of Sea Clam Juice
Eight ounces of Lump Crab

Steps:

  • Over medium heat in a saucepan add butter, garlic, Basil, and shallots. Then de-glaze with white wine. Add peppers and cook for two minutes. Then add tomato paste, Tabasco, Worcestershire, and ten ounces of Sea Clam Juice. Stir items together until even consistency. This should be very lose at this time if not add more clam juice. Let it reduce then add crab. Bring back to temperature then add heavy cream. Serve immediately with white rice.

FAMOUS ROAST GARLIC CRAB FOR FOUR

6 Tbs. unsalted butter
6 Tbs. extra-virgin olive oil
4 Dungeness crabs, about 1-1/4 lbs. each, cooked, cleaned and cracked
sea salt (preferably Gray salt) and freshly ground pepper
3 Tbs. freshly squeezed lemon juice
1/4-cup finely chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 500 degrees F.
  • Heat the butter, olive oil and garlic in a very large ovenproof saute pan over medium-high heat until hot. You may need two pans for this. Add the crab, season to taste with salt and pepper and toss well.
  • Transfer to the oven and roast until the garlic turns light brown and the crab is heated through (about 12 minutes). Toss once halfway through. Pour the contents of the pan into a large warm serving bowl, add the lemon juice and the parsley and toss well.

GARLIC ROASTED CRAB

Crustacean restaurants in CA are famous for their garlicky roasted crab, which is a highly guarded secret recipe. This recipe is a great substitute. I especially like to make it on a cold day, and it ranks high on my all-time favorite recipes list.

4 (1 1/4 lb) fresh cooked and cleaned dungeness crabs
6 tablespoons unsalted butter
6 tablespoons extra virgin olive oil
4 garlic cloves, peeled and finely minced
salt
fresh ground pepper
3 tablespoons fresh lemon juice
1/4 cup finely chopped fresh parsley

Steps:

  • Preheat oven to 500*.
  • In a very large oven-proof bowl, place butter and olive oil.
  • Put in oven to melt butter and heat bowl (the bowl needs to be hot when you add the crab).
  • Break crab legs apart from body, and break body into 2 sections per crab, but do not remove meat from shell.
  • Stir crab into hot butter and olive oil mixture; sprinkle in minced garlic and salt and pepper to taste.
  • Toss everything together well.
  • Bake for 6 minutes and toss well again.
  • Bake another 6 minutes, until crab is heated through and garlic is light brown.
  • Remove from oven and top with lemon juice and parsley; toss again.
  • Serve from hot bowl with lots of napkins and artisanal French or sourdough bread (such as La Brea Bakery's) to soak up the delicious juices.

1 tablespoon seafood seasoning (such as Old Bay®)
1 large egg, beaten
1 tablespoon milk
3 (4.5 ounce) soft-shell crabs, cleaned
3 tablespoons extra-virgin olive oil
½ cup mayonnaise
1 tablespoon minced fresh chives
1 tablespoon dill pickle juice
1 tablespoon Creole mustard
½ tablespoon seafood seasoning (such as Old Bay®)
1 teaspoon lemon juice
kosher salt and freshly ground black pepper to taste

Steps:

  • Combine flour and seafood seasoning in a resealable zip-top bag. Seal and shake to mix. Combine egg and milk in a bowl. Dredge crabs in egg mixture, then add to seasoned flour and shake to coat. Shake off excess when removing from bag.
  • Heat olive oil in a large saute pan or skillet over medium heat. Add crabs in a single layer and cook for 3 minutes; flip and cook until golden brown, about 3 minutes more. Remove to a serving dish.

Steps:

  • Preheat oven to 450°F. Brush 2 large roasting pans with 1 tablespoon olive oil each. Mix shallots, minced parsley, and lemon peel in small bowl. Arrange lobster tails, cut side up, in 1 roasting pan; brush with 2 tablespoons olive oil. Sprinkle with salt and pepper, then 2 tablespoons shallot mixture. Roast until just opaque in center, about 15 minutes.
  • Meanwhile, combine shrimp, scallops, 2 tablespoons olive oil, and 2 tablespoons shallot mixture in medium bowl; sprinkle with salt and pepper and toss gently to coat. Steps:

  • Make the ramps: Separate white and green parts of ramps, reserving green parts for potatoes. Place white parts of ramps in container and set aside.
  • In a large saucepan, mix together hot water, vinegar, sugar, salt, and schichimi togarashi, kochukaru, and white peppercorns, if using; bring to a boil over medium-high heat and cook, stirring, until sugar is dissolved. Remove from heat and let cool completely. Pour cooled mixture over ramps and cover; transfer to refrigerator for at least 3 days and up to 1 month. Drain before using.
  • Make the potatoes: Preheat oven to 375 degrees.
  • Place potatoes, garlic, and thyme in a large saucepan and add enough water to cover; generously season with salt. Place over medium-high heat and simmer just until tender, about 30 minutes. Drain and spread out on a baking sheet to cool completely.
  • Cut cooled potatoes lengthwise on the bias. Heat grapeseed oil in a large ovenproof skillet over medium-high heat and place potatoes cut-side down in skillet. Transfer to oven and cook until a nice brown crust appears, about 20 minutes. Return to stove over medium-high heat and add butter; cook basting with oil and butter mixture. Add reserved greens from ramps to skillet and season with salt; toss to combine and remove from heat.
  • Make the crabs: Meanwhile, heat canola oil in a large skillet over medium-high heat. Season crabs with salt and pepper and add to skillet. Cook until red and crisp, 1 to 2 minutes. Turn crabs and add garlic, thyme, lemon slices, if using, and butter. Cook, basting with butter, 2 to 4 minutes. Transfer to a paper towel-lined plate to drain.
  • Spread 1 tablespoon lemon puree on each of 4 plates. Top with potatoes and crab; garnish with pickled ramps and serve immediately.
