FLUFFY STRATA RECIPE (OVERNIGHT BREAKFAST CASSEROLE)
Overnight Breakfast Strata Recipe: This easy make-ahead holiday breakfast is super quick to prep, then pop in the oven the next morning!

- Set out a large mixing bowl and a 9X13 inch (3 quart) baking dish. Grease the baking dish. Chop all necessary ingredients.
- In the mixing bowl, add the eggs, milk, salt, ground mustard, and garlic powder. Whisk well to break up all the yolks. Then stir in the cheeses, ham, scallions, and roasted red pepper.
- Tear the bread loaf into 1-2 inch chunks and place them in the baking dish.
- Pour the egg mixture over the top of the bread. Use a spatula to fold the bread over, gently, to make sure the ingredients are evenly distributed. Cover and chill until ready to bake.
- Let the strata recipe rest for at least one hour, so the bread soaks up all the eggs. Preheat the oven to 350 degrees F. (This is a fabulous make-ahead overnight recipe, so you can also preheat the oven in the morning.)
- Bake, uncovered, for 50-60 minutes, until the top is golden-brown and puffy in the center. Insert a sharp knife into the center to check that the eggs are set. If not, bake another 5-10 minutes. Then cool for 5 minutes before cutting. Serve warm!

Steps:
- Melt butter in a medium skillet over medium heat. Add onion and saute until soft, about 5 minutes. Add herbes de Provence, salt, and pepper; continue to cook for 1 minute more. Stir in spinach, remove from heat, and set aside.
- Spray the inside of a 3-quart (9x13-inch) baking dish with cooking spray. Layer the bottom of the dish with 1/3 of the bread cubes. Top with 1/3 of the spinach mixture and 1/3 mozzarella cheese. Repeat these layers twice more with remaining bread, spinach mixture, and cheese.
- Combine eggs, milk, salt, and pepper in a medium bowl. Whisk together until blended. Pour evenly over the bread and spinach layered in the baking dish. Cover with plastic wrap and chill for at least 8 hours, up to 1 day.
- Remove from the refrigerator 30 minutes before baking to allow pan to get to room temperature.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
- Bake, uncovered, in the preheated oven until puffed, golden brown, and cooked through, 45 to 55 minutes. Let stand at least 5 minutes before serving.

Steps:
- Whisk eggs, milk, cheeses, salt& cayenne until well blended.
- Combine tomato, bacon, onion and rosemary.
- Arrange half of bread cubes in 9x13-inch dish coated with cooking spray.
- Spoon half of tomato mixture over bread& pour half of milk mixture over tomato mixture.
- Repeat procedure with remaining bread, tomato and milk mixtures.
- Sprinkle with paprika and grated parmesan.
- Cover and refrigerate 8 hours or overnight.
- Bake at 350 degrees for 45-60 minutes or until set.
- Let it set 15 minutes before serving.
- ENJOY!

Steps:
- Cook bacon in a large nonstick skillet over medium heat until crisp, about 10 minutes. Remove bacon from pan, reserving drippings in the skillet. Crumble when cool enough to handle.
- Add onion to drippings in the skillet; saute for 4 minutes. Add garlic and saute for 1 minute. Remove from heat; combine onion mixture and bacon.
- Whisk milk, eggs, basil, thyme, salt, and pepper together in a bowl until well combined.
- Spray a 9x13-inch baking dish with cooking spray and arrange 1/2 of the bread cubes in the bottom.
- Top bread cubes with 2/3 cup Cheddar cheese, 1/2 of the onion mixture, and 6 tomato slices. Pour 1/2 of the milk mixture over tomatoes. Top with remaining bread cubes and 2/3 cup Cheddar. Top with remaining onion mixture, tomato slices, and milk mixture. Cover and place in the refrigerator to chill at least 8 hours or up to 24 hours.
- Preheat the oven to 325 degrees F (165 degrees C).
- Bake strata in the preheated oven, uncovered, for 55 minutes. Sprinkle with remaining Cheddar cheese and bake until cheese melts, an additional 5 minutes. Let stand 5 minutes before serving.

Steps:
- Sauté sliced mushrooms in a little olive oil.
- Add pinches of salt and black pepper.
- Sprinkle parsley on mushrooms right before you pull the mushrooms off the stove.
- Heat 1/2 ounce clarified butter.
- Add shrimp, rubbed with white pepper and salt. Cook until done.
- While shrimp are cooking, place fresh fettuccine in salted boiling water. Cook for one minute.
- Add shrimp, fettuccine, mushrooms, and remaining ingredients into sauté pan with Alfredo.
- Add cheese and cook for 30 to 45 seconds to meld flavors.
- Ladle 4 ounces of Alfredo sauce into sauté pan.
- Heat until it starts to boil around the edges. Remove from heat.
- To clarify butter:.
- Melt butter over low heat.
- When melted, remove from heat, and set aside for several minutes to allow the milk solids to settle to the bottom.
- Skim the clear (clarified) butter from the top, and discard sediment. (This can be done ahead.).
