1 Dungeness crab (2 to 3 pound size), thawed if necessary
2 slices bacon, diced
1/2 cup chopped onion
1/2 cup green bell pepper, chopped
1 tablespoon flour
3 cups cooked rice
1 can (14.5 ounce size) tomatoes, undrained
1 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/8 teaspoon thyme, crushed

Steps:

  • Lift off back shell of crab. Remove and discard viscera and gills. Rinse crab thoroughly under cool, running water. Break off legs and crack along edges. Cut legs into serving-sized pieces. Break body section into several pieces, remove meat and reserve. Cook bacon until crisp. Add onion and green pepper. Cook until tender. Stir in flour and cook for 1 minute. Stir in remaining ingredients except crab meat. Break up tomatoes with spoon. Cook for 5 minutes, stirring occasionally. Stir in reserved crab meat. Arrange cracked crab legs over rice mixture. Cover and cook over medium heat for about 5 minutes or until crab is thoroughly heated.

  • In a Dutch oven over medium-high heat, saute the onion, celery and green pepper in butter until tender. Add garlic; cook 1 minute longer. Add the next 9 ingredients; bring to a boil over medium-high heat. Did a lot of research on jambalaya and reviewed a number of recipes and came up with the following. I like white fish and, while not traditional, added chunks of cod fillet to this dish. You want to add the shrimp and fish to the dish with about 10 minutes to go so it does not overcook. Cook uncovered if it is soupy and covered if it is not during these last 10 minutes. Finally, try to find andouille sausage if possible. It makes all the difference.

¼ cup butter
10 ounces andouille sausage, halved lengthwise and cut into 1/4-inch half-moons
1 cup diced onion
1 cup diced celery
1 cup diced green bell pepper

2 teaspoons Worcestershire sauce (such as Lea & Perrins®)

Steps:

  • Melt butter in a heavy-bottomed pot over medium-high heat. Cook andouille sausage in the melted butter until completely browned, about 5 minutes. Remove the sausage with a slotted spoon to a plate lined with paper towel.
  • Cook and stir onion, celery, and green bell pepper in the butter remaining in the pot until the onion becomes translucent, 5 to 10 minutes.
  • Stir garlic into the onion mixture; cook and stir together for 1 minute.

2 tablespoons all-purpose flour
2 teaspoons file powder
3 cloves garlic, peeled and minced
2 green onions, chopped
2 large sweet onions, chopped

  • Stir file powder, garlic, green onions, onions and green bell pepper into the roux. Cook and stir until tender, about 10 minutes. Stir tomatoes into the mixture. Season mixture with black pepper, cayenne pepper, allspice, cloves, salt and bay leaf. Cook, stirring occasionally, until the mixture is well blended, 10 to 15 minutes.

2 boneless skinless chicken breasts, cut into bite-size pieces
8 ounces kielbasa, diced
1 onion, diced
1 green bell pepper, diced
½ cup diced celery

salt and ground black pepper to taste

1/4 cup extra virgin olive oil
12 ounces andouille sausages, quartered lengthwise and cut into 3/4 inch pieces
1 large onion, coarsely chopped
1 red bell pepper, finely chopped
1 celery rib, finely chopped
2 large garlic cloves, very finely chopped
1 teaspoon Old Bay Seasoning
1 1/4 cups jasmine rice, rinsed
1 1/2 cups chicken stock or 1 1/2 cups low-sodium broth
1 1/2 cups water
1 sprig thyme
kosher salt & freshly ground black pepper, to taste
8 ounces lump crabmeat
3 scallions, finely chopped
hot sauce, for serving

Steps:

  • In a medium to large enameled cast-iron pot (or any thick, good quality cookware), heat the olive oil.
  • Add the andouille and cook over med-high to high heat, stirring occasionally, until lightly browned, about 3 minutes. Transfer to a bowl.
  • Add the onion, bell pepper, celery and garlic to the same pot.
  • Cover and cook over med-high heat, stirring occasionally, until the veggies are soft, about 3 minutes.
  • Add the Old Bay, rice, andouille and cook, stirring occasionally, until the rice is opaque, about 2 minutes.
  • Add the chicken stock, water and thyme, season lightly with salt and pepper and bring to a boil - then turn heat to very low.
  • Cover and cook over very low heat until the rice is tender and the liquid is absorbed, about 15 minutes.
  • Fluff the rice with a fork and stir in the crab and scallions.
  • Cover and let stand for 2-3 minutes, just until the crab is hot.
  • Discard the thyme sprig.
  • Serve the jambalaya in bowls, passing the hot sauce at the table.

2 tablespoons peanut oil
12 ounces smoked andouille or kielbasa sausage, sliced
2 boneless, skinless chicken breasts, cubed
1 medium onion, diced
2 stalks celery, diced
2 cloves garlic, minced
1 bell pepper, diced
1 (28-ounce) can peeled diced tomatoes
1/2 teaspoon hot sauce
1 teaspoon file powder
1 tablespoon Cajun spice blend
Cooked steamed rice, for serving

Steps:

  • Heat a large, heavy, dry stockpot or Dutch oven over high heat. Add 1 tablespoon peanut oil, and then brown the sausage. Remove the sausage from the pan, and reserve the drippings. Add another tablespoon peanut oil, and then brown the chicken, adding more peanut oil, if necessary.
  • Return the sausage to the pan with the chicken, and add the onion, celery, garlic, and pepper. Saute until the meats and the vegetables are cooked through. Add the tomatoes and the hot sauce, and stir with a wooden spoon to combine. Add the file powder and the Cajun spice, reduce the heat to low, and simmer for at least 1 hour. Serve over cooked, steamed rice.

1 garlic clove, peeled and chopped
2 tablespoons butter
1/2 chili pepper (powdered may be used, if desired)
1/8 teaspoon white pepper
1 dash cayenne
2 tomatoes, chopped (canned is fine)
2 cups broth or 2 cups water
2 cups crabmeat
1 cup rice, uncooked
1 teaspoon salt

Steps:

  • Brown onion and garlic in butter in deep skillet; add finely chopped chili pepper, white pepper and cayenne, and tomatoes, crushing them.
  • Add broth, crab meat, rice and salt; mix well, cover and heat to boiling point.
  • Lower heat and simmer slowly without uncovering for 20 minutes.
  • Remove from heat, keep warm and let stand for another 20 minutes.
  • At the end of this time, rice should be very tender and all liquid absorbed.

2 1/2 cups water
1 lb crab, cut into bite sized pieces
1/2 cup celery, diced
1/4 cup bamboo shoot
1/4 cup water chestnut, sliced
1/2 cup bean sprouts
1/2 cup snow peas
1/4 cup white onion, diced
1/3 cup carrot, shredded
1 cup cabbage, shredded
1/4 teaspoon black pepper
3 tablespoons soy sauce
3 tablespoons oil
4 -6 tomatoes, depending on size and preference
1/4 cup pecans or 1/4 cup peanuts, for a crunchier version (I prefer cashews) (optional)
other meat (beef, chicken, duck, game, pork or other types of seafood can be substituted in the recipe) (optional)

Steps:

  • Cook Zatarain's Jambalaya Mix according to package instructions, omitting the meat.
  • Reserve.
  • Heat oil in a wok.
  • Add crab and cook until done.
  • Add all the vegetables and lightly stir fry leaving vegetables crisp.
  • Add the tomatoes.
  • Do not overcook.
  • Add soy sauce, pepper, and pecans and mix well.
  • Add cooked Jambalaya, stir to mix well and cook until rice is hot.
  • Can be served as an entree or side dish.

  • Stir in tomatoes in puree, broth, rice and Old Bay seasoning; bring to a boil over high heat. Reduce heat to medium-low, cover and simmer until most of liquid is absorbed and rice is almost tender, about 20 minutes.
  • Fold in shrimp and cook just until shrimp are pink and firm, about 5 minutes.
