DELICIOUS AND EASY CORN ON THE COB
I learned this from a shopper in Stockbridge, Massachusetts when I was young. I have used this for 40 years and it has never failed to produce the most wonderful corn on the cob.

- Bring a large pot of water to a boil. Stir sugar into water to dissolve; add corn, cover pot, and turn heat off, leaving pot on hot burner.
- Steep corn in hot water until tender, about 25 minutes.

CORN OFF THE COB

Steps:
- Melt the butter in a large saute pan over medium heat. Add the onions and saute until softened, about 3 minutes. Add the chicken stock, heavy cream, corn and some salt and pepper and cook, stirring occasionally, until the liquid is mostly evaporated and the corn is soft. If the corn isn¿t done but the liquid is gone, add a little more stock and continue cooking. Stir in the vinegar and serve.

- Remove the husks from the corn and cut the kernels off the cobs with a sharp knife. You should get 5 to 6 cups of kernels. Place in a saucepan with the water, oil, butter and salt. Bring to a boil over high heat, stirring. Cover and continue to boil over high heat for 2 to 3 minutes. Serve as soon as possible.

FRIED CORN OFF THE COB
This is a delicious side dish and so easy and quick! It goes great with everything and adds a little color to your meal. I ordered this at a local restaurant and decided I would try to figure out how to make it! The waiter told me it was fresh corn. It is really close to theirs!! It is so yummy!!! I prepare my veggies early in the day and store in zip lock bag.

- Remove corn from the cob using a sharp knife.
- Chop red bell pepper and green onion tops.
- Melt butter in large frying pan.
- Add all ingredients to hot pan.
- Stir fry over high heat for 5-6 minutes.
- Do not overcook. Do not saute! Veggies should be crisp.

ORZO AND CORN OFF THE COB
This recipe from August 2003 BH&G magazine, using one of mine and my youngest DD's favorite pastas. This makes up into a very nice side dish served with a fish or chicken dinner, but good with roasts as well.

Steps:
- Cut kernals off 4 ears of corn on the cob (I use my mandolin for this chore), you should have about 2 cups. Set aside. Bring a large pot of lightly salted water to boiling. Add the orzo and cook, stirring occasionally, for 8 to 9 minutes or until just tender, adding corn the last 3 minutes of cooking. Drain well and place in a large serving bowl.
- Add the olives, sweet pepper, and green onions, toss well. Add the basil, parsley, oil, vinegar, salt and pepper. Toss gently to combine.
- Serve at room temperature.

MEXICAN CORN-OFF-THE-COB SALAD
This salad was inspired by the recipes I've seen for grilled Mexican corn on the cob--mayo, lime, cotija cheese--just adjusted for those that would rather not eat corn on the cob or to save time (and grill space) during your bbq! Can be served cold or at room temp.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Grill corn in the husks on the preheated grill, turning occasionally, to desired tenderness, about 15 minutes; some charring is fine. Remove from the grill. Remove and discard husks and silk when cool enough to handle. Cut kernels off into a medium bowl.
- Add lime juice and chili powder, then mix in cotija cheese, cilantro, mayonnaise, and pepper until thoroughly combined. Taste and add salt if necessary.

- Take the husks and silk off the corn.
- Use a large bowl to catch all the kernels and juice from the cobs. Using a very sharp paring knife cut the very tips of the kernels off the cob. Then use a fork to scrape what remains of the kernels plus all the juice.
- Transfer to a saucepan and add the milk, butter, salt. and pepper and heat over medium - medium low heat stirring constantly. Cook for 10 minutes.

MS.DELORES "FRIED CORN OFF THE COB" JUST LIKE GRANDMAS

Steps:
- Begin cutting corn off the cobb in a soft downward motion. After cutting corn scrap cobb for excess corn.
- Fry bacon until crisp; drain well, leaving about three tablespoons of the fat in the skillet.
- Add the corn, salt, pepper 3 tbl spoons of sugar and cornstarch or flour to the fat.
- Add water as needed stir occasionally.
- Sauté everything together for about 20 minutes or until the vegetables are tender.
- Add the fresh corn and crumble the cooked bacon over the top.
- Continue cooking for an additional ten minutes.
- Serve while hot.

"OFF-THE-COB" FREEZER CORN
This recipe allows you the fresh taste of sweet corn-on-the cob all year long. I've been making it for years and will today make it with Olathe corn I picked up at the market for 10 ears for $1. It stacks neatly in your freezer and is ready in a jiffy.

Steps:
- Preheat oven to 325°F.
- Shuck ears of corn; rinse to remove silks; place on paper towels to drain.
- Using an angel food cake pan and electric knife, stand each ear on tube part of pan and cut corn off cob.
- Your cuttings will fall neatly into the pan.
- As the cake pan fills, empty into large roaster pan.
- Season with salt and pepper to your taste.
- Cube butter and distribute onto corn in roaster pan.
- Pour half and half throughout corn.
- Roast for 1 hour, stirring gently every 15 minutes.
- Allow to cool for half an hour.
- Label freezer bags with contents, quantity and date.
- Ladle into bags at portions suitable for your personal use.
- Stack neatly in freezer for later use.
