Steps:
- Pulse the bread in a food processor to make coarse breadcrumbs; transfer to a large bowl. Add the crab, mayonnaise, green onions, lemon zest, Worcestershire, seafood seasoning, hot sauce, 1/4 teaspoon salt and a few grinds of pepper. Mix gently to combine. Add the egg and mix gently but thoroughly.
- For the mixture into eight 3-inch-wide crab cakes. Refrigerate for about 30 minutes to set slightly.
- Melt 3 tablespoons of the butter in a large nonstick skillet over medium heat. Cook the crab cakes, in batches if necessary, turning once, until golden brown on both sides and heated through, about 4 minutes per side. Transfer to a large plate and cover loosely with foil.
- Melt the remaining 2 tablespoons butter in a large pot over medium heat. Add the garlic and cook, stirring, until fragrant, about 2 minutes. Add the spinach, in batches if necessary, and cook, tossing, until just wilted. Season with salt and pepper.
- Divide the spinach among four plates and top with the crab cakes. Serve with Cocktail Remoulade and lemon wedges.
- Mix together the mayonnaise, ketchup, horseradish, parsley, mustard, vinegar, capers, green onion and some salt and pepper in a bowl. Cover and refrigerate at least 1 hour. The remoulade keeps, refrigerated, for up to 3 days.
JUMBO LUMP CRAB CAKE SANDWICH
Steps:
- Combine mayonnaise, egg, Dijon mustard and hot chili sauce in a large bowl and using a whisk, mix well. Add green onions, dill, parsley, bread crumbs, diced red pepper, lemon zest and lemon juice and salt and pepper. Mix all ingredients well.
- Gently fold in crabmeat and mix gently trying not to break up the crabmeat. Carefully divide mixture into 6 patties and dust with flour. Place patties into saucepan with peanut oil. Saute on medium heat for 4 to 6 minutes and carefully turn and cook for 4 to 6 minutes on the other side.
- Top each crab cake with a piece of crispy pancetta and serve on a focaccia roll with Roasted Tomato Remoulade Sauce.
- Whisk all ingredients together and refrigerate or serve immediately.
- Preheat oven to 200 degrees F.
- Take fresh Roma tomatoes and cut in half lengthwise. Place tomatoes cut side up on sheet tray. Drizzle olive oil, and sprinkle with salt and pepper. Place in oven for 8 hours or overnight.

- To make sauce, combine all ingredients in a medium bowl and whisk well. Cover and hold in refrigerator.
- To make crab cakes, combine mayonnaise, egg, red onion and parsley in a large bowl, stirring well with a fork.

- Crab cakes:.
- Heat olive oil in pan and add peppers, onions, hot pepper sauce, old bay and parsley. Cook until veggies are tender.
- Break up lump crab meat and check for shells and remove.
- Add veggie mixture, crab, eggs and bread crumb and mix well. Mixture should just stick together and not be too wet, you can add more bread crumbs a little at a time.
- Refrigerate for a 1/2 hour, shape into patty's and heat butter and olive oil over medium high heat. Cook 4 to 5 minutes on each side until golden brown.
- Remoulade sauce
- Mix all ingredients together and chill until ready to serve.

- In a medium bowl, beat the egg. Add the mayonnaise, parsley, seafood seasoning, Dijon mustard and lemon zest, then mix well to combine. Add the crabmeat and panko and mix gently but thoroughly to combine. Form 8 crab cakes by pressing them into shape with a 1/3-cup measure. Place on a buttered baking sheet.
- Place an oven rack 8 inches from the broiler element. Heat the broiler to a high setting. Brush the tops of the crab cakes with the melted butter. Broil until golden on top and heated through, 4 to 5 minutes. Serve immediately with the lemon wedges and Remoulade.
- Add the mayonnaise, capers, garlic salt, pepper and lemon juice to a bowl and whisk.

- Heat the olive oil in a medium skillet over medium heat. Saute the onions until translucent and tender, 3 to 4 minutes. Add the seafood seasoning and garlic and saute 1 minute longer. Let cool completely.
- In a large bowl, combine the crab meat, mayonnaise, parsley, mustard, salt, pepper, bread, egg, lemon zest and sauteed onions. Scoop the crab mixture using a 1/3-cup measure and form cakes (they may be slightly loose; see Cook's Note). Transfer to a baking sheet and refrigerate for 30 minutes.
- In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Cook the crab cakes in batches, adding more oil if needed, until golden brown, about 3 minutes per side. Serve atop salad greens with a drizzle of Remoulade Sauce.
- Whisk together the mayonnaise, ketchup, capers, relish, mustard and lemon juice in a medium bowl until well combined. Season with salt and pepper.
CRAB CAKES WITH REMOULADE SAUCE
This uses homeade mayonnaise, part of it is used for the cakes, and to the rest of it, dill pickles and chopped capers are added to create a lovely mayonnaise sauce. Fry the cakes in cornstarch a little, if a crust is desired. Make sure all mayonnaise ingredients are very solidly at room temperature before beginning.

- Make the mayonnaise by putting the egg yolks, seasonings, and vinegar into a bowl. Whip until the salt dissolves. Add the oil, drop by drop, until the sauce begins to thicken, then begin adding in a slow, steady stream, stopping, to incorporate the oil fully. When all of the oil has been used, stir in the water, this will keep it smooth, an disallow it to separate, once it has been made. Measure 1/2 cup of it, and put it into a bowl where the cakes will get made. Set the remainder aside, at room temperature.
- In the bowl with the measured mayonnaise, add the egg, creole seasoning, mustard, scallions, capers, and some chopped parsley, if desired. Taste, and correct for salt and pepper. Stir in the crab. Moisten, then add the breadcrumbs, and bring together loosely.
- The cakes can be made any size desired, I usually form them from 1/4-1/3 cup fulls. They will hold together nicely. Heat a frying pan with half of the butter, and several tablespoons of vegetable oil. Fry in batches. Flip tenderly. Dust in a light coating of cornflour before cooking, if a crisp exterior is highly desired.
- Place the finished cakes on a sheet pan, fitted with a jelly rack. Place them into a moderate oven to finish baking for about 6 minutes. In the meantime, make the sauce, add chopped capers, to taste, and the pickles, season with about a teaspoon of lemon juice, more if desired, taste, and correct for salt and pepper. Serve at once.

A NEW ORLEANS PLATE WITH CRAB CAKES, CREOLE SAUSAGE, AND CAJUN RéMOULADE
The journey of French rémoulade sauce, a classic mustardy mayonnaise with herbs, capers, and gherkins, across the Atlantic Ocean to Acadia (now eastern Quebec), the Maritime provinces, parts of New England, and eventually on to the American South is a culinary story worth telling. In the early 1600s, the first French arrived in Acadia and took up a life of farming crops and raising livestock. A century and a half later, many descendants of those early Acadians were forced from their northern homes by the British, eventually winding up in South Carolina, Georgia, and Louisiana. Those who settled in Louisiana soon came to be called Cajuns, as did their language, a lilting patois unique to the area but universally understood in their joyous music. And rémoulade? Unfortunately, there is no accessible literature that describes how the sauce was interpreted on Acadian tables. However, as it wended its way to Louisiana, via the American Northeast and the French Indies, it underwent a gastronomic evolution, becoming more spirited with additions of minced bell pepper and celery, tomato paste, sometimes Worcestershire sauce, horseradish, and especially Louisiana's own feisty Tabasco sauce. Here is my interpretation of that well-traveled sauce, now a Cajun rémoulade, served on a New Orleans plate with crab cakes and Creole sausage.

- To make the rémoulade, combine the mayonnaise, mustard, scallion, parsley, capers, cornichons, and hot sauce in a small bowl and whisk to mix. Use right away, or cover and refrigerate for up to 3 days.
- To make the crab cakes, place the crabmeat, red bell pepper, chile, parsley, shallot, mustard, lemon juice, salt, egg, and 1/2 cup of the bread crumbs in a medium bowl, and mix gently with your hands until thoroughly blended. Divide the mixture into 8 equal portions, and pat each portion into a cake about 2 inches in diameter. Spread the remaining 1 cup bread crumbs on a plate. Coat each patty on both sides with the bread crumbs, pressing them to adhere. Place the patties on a plate, cover with plastic wrap, and set aside in the refrigerator to firm for at least 30 minutes or up to several hours.
- To cook the sausage, heat the 1 tablespoon oil in a large sauté pan over medium-high heat. Add as many sausage balls as will fit without crowding and sauté, turning 3 or 4 times, until browned all around and just cooked through, about 8 minutes. Transfer to a plate and set aside in a warm place. If necessary, continue with another round, adding more oil to the pan if needed.
- To cook the crab cakes, melt the butter in a second large sauté pan over medium-high heat. Add as many crab cakes as will fit without crowding and fry, turning once, until golden and crisp on both sides, about 8 minutes total. If necessary, continue with another round.
- To serve, spread the watercress on individual plates or a platter. Set the crab cakes on top and garnish each cake with a dollop of rémoulade. Arrange the sausage balls next to the crab cakes. Pass the remaining rémoulade at the table.
CRAB CAKE SANDWICHES WITH SAUCE RèMOULADE

This recipe really depends on the freshest ingredients for best results! Note: If cornichons are not available, substitute kosher dill pickles or green olives.

- Remove all cartilege from crab meat. Set aside in refrigerator.
- In a mixing bowl, combine the egg, mayonnaise, grain mustard, all the spices and salt to taste.
- Stir in the prepared crabmeat, mixing thoroughly. Gently fold in the toasted bread cubes.
- Using a 3 inch ring mold or 3 inch cookie cutter, shape the mixture into 6 patties of the same thickness without pressing too hard.
- Preheat oven to BROIL.

- Place each sandwich on a serving plate, second piece of bread placed off center and extra sauce on the side.

- Combine mayo, green onions, red bell pepper, green bell pepper, egg, parsley, Old Bay Seasoning, bread crumbs, and mustard. Mix together all the ingredients.
- Carefully fold in the crab. Do not over stir.
- Place in refrigerator for about an hour.
- Heat oil in skillet on medium high heat.
- Roll about 2 tablespoons of crab mixture into a ball and flatten.
