CRAB AND CAVIAR TWICE-BAKED POTATOES



Crab and Caviar Twice-Baked Potatoes image

4 russet potatoes, scrubbed
6 tablespoons unsalted butter
1 shallot, minced
1/2 cup creme fraiche, plus more for garnish
2 tablespoons minced fresh chives, plus more for garnish
1 teaspoon lemon zest
Kosher salt and freshly ground black pepper
8 ounces lump crabmeat
2 ounces caviar or salmon roe

Steps:

  • Preheat the oven to 425 degrees F.
  • Pierce the potatoes with a fork a few times on all sides. Place on a baking sheet and bake until fork-tender, 1 hour to 1 hour 20 minutes. Let cool slightly. (Leave the oven on.)
  • Meanwhile, melt 4 tablespoons butter in a small skillet over medium heat. Add the shallot and cook until softened but not browned, about 5 minutes. Transfer to a small bowl. Melt the remaining 2 tablespoons butter in a small bowl in the microwave.
  • Once the potatoes are cool enough to handle, use a paring knife to make a slit lengthwise down the top of each, cutting about halfway through. Make another small slit across the first to make a "t". Gently push the sides of the potato with your hands to loosen the filling. Scoop out the flesh to a large bowl with a spoon or melon baller, leaving a 1/4 inch of flesh in the skins to preserve the shape of the potatoes. Return the potato skins to the baking sheet.
  • Mash the potato flesh until smooth. Add the shallot butter mixture, creme fraiche, chives and lemon zest, then season with salt and pepper. Gently fold in the crabmeat.
  • Spoon the mixture evenly into the potato skins. Drizzle with the remaining melted butter. Bake until browned, 20 to 25 minutes. Top each potato with a dollop of creme fraiche, a sprinkle of chives and a spoonful of caviar. Serve immediately.

6 large baking potatoes
2 tablespoons plus 4 to 6 tablespoons butter, depending on size of potatoes, divided
2 medium shallots
3 cloves garlic, minced
2 tablespoons fresh thyme leaves
2 cups cooked crabmeat, preferably Alaska king crab
1 to 2 cups grated cheese, depending on size of potatoes (provolone, Muenster or Jack - something mild)
1/2 cup sour cream
1 tablespoon freshly chopped Italian parsley leaves
Salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Prick holes in the potatoes with a fork and place directly on the oven rack. Roast until cooked through, about 45 minutes, depending on the size of the potato.
  • While the potatoes are cooking prepare the crab: Add 2 tablespoons of butter to a frying pan. Add the shallots and cook until translucent. Next add the minced garlic and saute in the frying pan to gently brown the shallots and garlic. Add the thyme and crab and cook until heated through. Then set aside.
  • Lower the oven to 350 degrees F.
  • Once the potatoes are cooked and cool enough to handle cut, off a small portion of the top making an opening in the potato.
  • Take a spoon and scoop the pulp into a bowl. Place the potato skins on a cookie sheet and put in a 350 degree F oven for about 5 minutes to dry them out and ensure they will be crispy when done.
  • To the potato pulp, add the shallot/crab mixture, remaining butter, cheese and sour cream and mix. Then add parsley, salt and pepper, to taste. Fill the potato shells with the potato/crab mixture. Bake until cheese has melted around 35 to 45 minutes.
  • Sprinkle with parsley.

1 large Yukon gold potato

6 large eggs
1/2 cup half-and-half
1 teaspoon grated lemon zest
1/2 teaspoon smoked paprika
1 teaspoon olive oil
1 cup jumbo lump crabmeat
1/2 cup baby arugula, chopped

Steps:

  • Put the potato in a pot with enough water to cover. Season the water generously with salt and place over high heat. Bring to a boil and simmer for 10 minutes. Drain well and let cool slightly. Cut into quarters and slice into thin pieces.
  • Preheat the oven to 375 degrees F.
  • In a medium bowl, whisk together the eggs, half-and-half, lemon zest, paprika and 1 teaspoon salt.
  • Grease an 8-inch square baking dish with the olive oil. In the baking dish, combine the crab, arugula and sliced potatoes, making sure the potatoes are all lying flat. Pour the egg mixture over the top.
  • Bake until the center is just set and the top is brown, about 30 minutes. Allow to cool for 10 minutes before cutting into 1-inch squares.

1/2 pound lump crab meat
1 teaspoon lemon juice

4 tablespoons unsalted butter

1 cup grated Parmesan cheese.

Steps:

  • Preheat oven to 450.
  • Scrub potatoes under running water; dry them, and rub the skin of each with the oil and a little salt. Pierce the skin of each in three or four places with the tines of a fork.
  • Place the potatoes in the oven, and roast for 45 minutes to an hour, depending on the size of the potatoes, until they offer no resistance when a knife is inserted in their centers.
  • While the potatoes are baking, lightly toss the crab meat in a bowl with the lemon juice, olive oil, shredded mint, diced jalapeño and sour cream.
  • When the potatoes are done, remove them from the oven, slice them open down the middle and use a spoon to scrape out their flesh into a bowl. Add the butter, salt and pepper and mash to combine. Spoon the mixture back into the empty jackets, place on a baking sheet, top with the crab-meat mixture and shower with cheese. Return to the oven for approximately 15 minutes, until the cheese is melted and golden.

2 tablespoons dried dill
2 tablespoons mustard seeds
2 tablespoons chili powder
2 tablespoons sweet paprika
2 tablespoons coriander seeds
2 tablespoons white peppercorns
2 teaspoons celery seeds
2 teaspoons red pepper flakes
3 bay leaves
10 sprigs thyme
1/2 bunch parsley
1 head garlic, cut in half horizontally
4 leafy stalks celery, halved crosswise
Kosher salt
12 live jumbo blue crabs or 6 Dungeness crabs
1 1/2 pounds new potatoes
2 pounds extra-large shrimp (unpeeled)
Melted butter, for dipping

Steps:

  • Combine the dill seeds, dried dill, mustard seeds, chili powder, paprika, coriander seeds, peppercorns, celery seeds, red pepper flakes and bay leaves in a small bowl. Transfer to a blender or spice grinder in batches and pulse until coarsely ground.
  • Fill a large deep pot with 8 quarts water. Add the spice mixture, thyme, parsley, garlic, celery and 1/4 cup salt. Cover and bring to a boil over high heat. Uncover, reduce the heat and simmer, 30 minutes.
  • Meanwhile, put the crabs in a large colander in the sink. Holding each crab with tongs, run under cold water to wash away sand. Transfer to a large container of ice water and soak 15 minutes. (This relaxes the crabs and helps remove the grit.) Remove the crabs and discard the water. If the crabs are still sandy, repeat.
  • Bring the spiced broth to a boil over high heat. Wrap the potatoes in cheesecloth and tie closed. Add the crabs to the broth, then the potatoes; cover and cook, stirring once or twice, until the crab shells are bright red, 15 to 20 minutes. Remove the potatoes after 15 minutes.
  • Transfer the crabs to a platter or newspaper with tongs, letting the excess liquid drain into the pot. Let sit at least 5 minutes before eating.
  • Meanwhile, add the shrimp to the pot, stir once and cook until the shells are pink, 5 to 6 minutes. Remove with a slotted spoon. Season the crabs, shrimp and potatoes with salt. Serve with melted butter and the broth, for dipping.

1-1/2 tsp. seafood seasoning
1/2 cup KRAFT Real Mayo Mayonnaise
1 Tbsp. chopped fresh parsley
1 Tbsp. GREY POUPON Dijon Mustard
1 tsp. garlic powder
3 eggs, divided
3 cans (6 oz. each) lump crabmeat, drained
2 green onions, sliced
1 cup flour
2 cups dry bread crumbs
6 Tbsp. butter, divided

Steps:

  • Microwave potatoes as directed on package; place in large bowl. (Do not mash.) Cool slightly.
  • Meanwhile, heat 1 Tbsp. oil in large skillet on medium heat. Add yellow onions, peppers and celery; cook 8 to 10 min. or until tender and lightly browned, stirring frequently. Add Worcestershire sauce and seafood seasoning; cook and stir 1 min. Remove from heat.

Steps:

  • Place potatoes in a large pot with enough cold water to cover. Add kosher salt and bring to a boil over medium-high heat. Cook until fork-tender, 15 to 20 minutes.

Variation of a friend's recipe that I love. My husband loves macaroni noodles in his potato salad, however, please feel free to add the things that you love in your salad. This salad is meant to be served warm. Leftovers will need to be refrigerated and combined with additional mayonaise because the egg will separate from the mayonaise.

2 lbs baking potatoes, skin removed
1/2 cup mayonnaise
5 eggs, hard boiled and finely chopped
10 ounces imitation crabmeat
1/4 cup white onion, finely chopped
2 teaspoons salt

1/2 teaspoon garlic powder
1 teaspoon mild paprika

Steps:

  • 1) Boil potatoes in salted water until just slightly el dente (you will be baking salad an additional 15 mins in the oven).

1/2 teaspoon red pepper flakes
2 (6 ounce) containers fresh lump crabmeat, picked over for shells and cartilage
1 tablespoon Old Bay Seasoning
1 cup Italian breadcrumbs (made from Italian bread)
3 tablespoons extra virgin olive oil

Steps:

  • Cook potatoes in boiling water for 6-7 minutes, until tender; drain, then scatter potatoes across a large, flat surface to cool and dry for 5 minutes; then transfer to a mixing bowl.
  • Make a paste with the garlic and salt; add it to the potatoes along with the parsley, thyme, lemon zest, and red pepper flakes.
  • Add crab and Old Bay seasoning to potatoes; combine the mixture gently.

I had some crabmeat and didn't want to do crab cakes, also had some O'Brien potatoes I needed to use, so I came up with this concoction.

1 lb crabmeat (I used Phillips claw meat)
26 ounces ore ida o'brien frozen hash browns with onions and peppers (thawed)
1 cup mayonnaise
1 teaspoon creole seasoning
1 teaspoon Old Bay Seasoning
breadcrumbs
1 tablespoon oil
butter

Steps:

  • Heat oil in 12" skillet. Cook potatoes in oil for about 5 minutes.
  • Combine mayonnaise,Creole seasoning, Old Bay in a bowl. Whisk until smooth.
  • Add potatoes to mayo mixture, toss to combine. Add crab meat to potatoe mixture,toss lightly with a fork to combine.
  • Spray a 8x8 inch dish with non-stick spray. Add mixture to dish, sprinkle bread crumbs on top and butter on top of bread crumbs.

I'm not saying this is perfected in the least, and the ingredients are approximates, but I threw this together for hubby's dinner and he loved it! It's a crab cake sort of filling in a baked potato shell, so I guess crab cake twice baked potato might also be a good name for it. If you try it, I hope you like it! Note: you could add horseradish to the mixture as well, if you so desire!

1/4 cup fresh lump crabmeat
1/4 cup mayonnaise
1 tablespoon spicy brown mustard
1 dash lemon juice

1 tablespoon butter (I use Smart Balance Light)
1/8 cup crushed potato chips

Steps:

  • Scrub, then bake the potato in the microwave, about five minutes.
  • While potato is baking, chop crabmeat into small pieces; add mayo, mustard, lemon juice, garlic, salt and pepper (and horseradish, if you like; could also use sour cream in there as well).
  • Mix the crab mixture well.
  • When potato is done cooking, cut out top portion, scooping out insides of potato (leave about 1/4" potato to help shell remain stable) and placing them into the crab mixture bowl.
  • Mush the potato into the crab mixture, stirring well.
  • Melt 1 rounded tablespoons butter and stir into crab and potato mixture.
  • Pile crab and potato mixture into empty potato shell.
  • Sprinkle crushed potato chips on top.
  • Bake at 350* for about 15 minutes, or until potato chips start to brown.
