This frittata makes a great breakfast, brunch, or even lunch. Serve with some warm flour tortillas, sliced avocado, and some salsa for a complete meal.

- Preheat an air fryer to 350 degrees F (175 degrees C). Spray a 6-inch cake pan with nonstick cooking spray.
- Whisk eggs and cream together in a bowl. Add bacon, Jack cheese, chiles, tomatoes, onion, salt, and pepper. Stir until well combined. Pour into the cake pan and place inside the air fryer basket.
- Air fry for 10 minutes. Cover the pan with foil if the top is browning too fast; continue cooking until a toothpick inserted in the center comes out clean, 6 to 10 minutes more.

This frittata is ready in less than 20 minutes. Take a little bit of leftover breakfast sausage, a few chopped veggies, some shredded cheese, and some eggs, and create a hot breakfast! Make it a meal with some whole wheat toast and juice, or just wrap it up in a napkin and eat as you run! If there is any left, it reheats well.

- Preheat a 5.8-quart or larger air fryer to 350 degrees F (175 degrees C) according to manufacturer's instructions.
- Spray cooking spray on the bottom and sides of a small metal container, designed to be an inner pot, about 6 inches round and 4 inches high.
- Add butter for flavor, insert inner pot into the air fryer, and melt butter for 45 seconds. Add bell pepper and onion and fry for 2 minutes.
- Carefully remove the inner pot and stir in sausage crumbles. Sprinkle with Colby Jack cheese and set aside.
- Crack eggs into a bowl and stir until yolks and whites are well combined. Season with salt, pepper, and hot sauce; stir to combine. Pour egg mixture over the other ingredients in the inner pot and lightly mix everything together.
- Return inner pot to the basket of the air fryer and cook until the top of the frittata is lightly brown and a toothpick inserted in the center comes out clean, about 12 minutes. Continue air frying in 30-second intervals until frittata has set. Serve warm or at room temperature with salsa.

AIR FRYER SPINACH, PEPPER AND HAVARTI FRITTATA
You may not have thought to make a frittata in your air fryer, but you can! You'll get a gorgeous brown crust with a creamy interior-and clever use of a cake pan makes it a cinch to unmold. We used Havarti for its mild flavor and superior melting qualities, but substitute another good melting cheese such as Cheddar, jack or fontina if you like. Serve the frittata warm or at room temperature.

- Spray an 8-inch round nonstick cake pan with cooking spray. Whisk the eggs in a large bowl with 1 teaspoon salt and several grinds of pepper. Add the spinach, pepper, scallions, basil and parsley and stir to combine. Fold in the Havarti and Parmesan.
- Preheat a 3.5-quart air fryer to 310 degrees F. Pour the mixture into the prepared cake pan and place in the basket. Cook until the frittata is slightly puffed, deep golden and a tester inserted in the center comes out clean, about 25 minutes.
- Let the frittata cool in the pan for 10 minutes before unmolding. To unmold, invert onto a plate, then invert again, browned-side up, onto a serving plate.

- Preheat an air fryer to 400 degrees F (200 degrees C).
- Place prepared apples in a medium saucepan. Drizzle lemon juice over top, then add water and stir. Sprinkle brown sugar and 1/4 teaspoon cinnamon over the apples; stir again. Cook over medium-low heat, stirring occasionally, until apples reach your preferred softness, about 40 minutes.
- Sprinkle apples with white sugar, then stir again. Cook for 5 more minutes. Remove saucepan from heat. Let mixture cool for about 10 minutes.
- Set a small bowl of water by work area. Lay an egg roll wrapper in front of you so the point is top and bottom. Scoop 1 to 2 tablespoons of the apple mixture along the middle of the wrapper.
- Fold the bottom point of the wrapper up and over the filling, tucking the end around it. Gently roll up one time. Wet the sides of the roll and fold over edges (so it makes a little purse).
- Roll up the wrapper the rest of the way and brush with water to seal. Lightly brush completed roll with water. Mix 1/4 cup white sugar and remaining 1 teaspoon cinnamon together in a bowl. Gently roll egg roll in cinnamon-sugar mixture. Repeat with remaining filling and wrappers.
- Line the air fryer basket with parchment paper and carefully lay completed egg rolls on it. Air-fry for 7 minutes, then turn over. Continue to air-fry until light golden brown, about 7 minutes more.
