Ginger Highball Food
UPDATED WHISKEY-GINGER HIGHBALL
A dressed up version of an easy favorite, galvanized by fresh ginger and orange.

Steps:
- Muddle one slice of ginger with syrup and a bit of ginger beer in the bottom of a highball glass. Fill glass with ice cubes.
- Add rye and stir with a bar spoon. Add ginger beer to fill.
- Run the other slice of ginger around the rim of the glass, then discard. Twist orange peel over drink to release oils, then drop into glass.

- Pass the ginger through a garlic press into the glass.
- Add 2-3 ice cubes and top with soda.

Steps:
- Combine the wine, ginger syrup, and lime juice in a cocktail shaker. Add a small piece of cracked ice and shake until chilled. Strain into a collins glass filled with ice, top with soda water, and garnish with the candied ginger.
- Note:
- To make the ginger syrup: Combine 2 cups sugar and 1 cup fresh ginger juice in a small pot over very low heat. Cook, stirring constantly, until the sugar is dissolved. Remove from the heat and let cool completely. Transfer to a plastic or glass container and store in the refrigerator for up to 1 month.
