Spicy peanut sauce:
THAI Chicken Pizza
1/2 cup peanut butter
1/2 cup hoisin sauce
1 TBSP honey
2 TSP red wine vinegar
2 TSP minced ginger
2 TBSP roasted sesame seed oil
2 TSP soy sauce
1 TSP Vietnamese chili sauce (or dried chili flakes)
1 TBSP oyster sauce
2 TBSP water
THAI CHICKEN PIECES:
1 TBSP olive oil
10 oz. boneless/skinless chicken breast, cut into 3/4" cubes
FOR THE PIZZA:
1 recipe basic Pizza Dough (given)
2 cups shredded mozzarella cheese
4 scallions, slivered diagonally oriental style
1/2 cup white bean sprouts
1/4 cup shredded carrot
2 TBSP chopped roasted peanuts
2 TBSP chopped fresh cilantro

Steps:

  • To Make Spicy Peanut Sauce: Combine sauce ingredients in a small pan over medium heat. Bring the sauce to a boil gently for one minute. Divide into two portions for use on chicken and pizza; set aside. TO MAKE Thai Chicken: Cook the chicken in olive oil over medium-hi heat, stirring, until just cooked, 5 to 6 minutes. Do not overcook. Set aside in fridge until chilled through. Once chilled, coat the chicken with ¼ cup Spicy peanut sauce. Set aside in fridge. TO MAKE Pizza: Use a large wooden spoon to spread peanut sauce evenly over the surface of the prepared dough within the rim. Cover the sauce with 3/4 cup shredded mozzarella. Distribute half the chicken pieces over the cheese followed by half the green onions, sprouts and carrots, respectively. Sprinkle an additional ¼ cup shredded mozzarella over the other toppings and top the pizza with 1 TBSP chopped roasted peanuts. Transfer the pizza to the oven; bake until the crust is crisp and golden and the cheese at the center is bubbly, 9 to 10 minutes. When cooked through, carefully remove the pizza from the oven. Sprinkle with 1 TBSP chopped fresh cilantro over the hot, cheesy surface. Slice and serve.

1 tablespoon oyster sauce
2 tablespoons water
1 tablespoon olive oil
10 ounces boneless skinless chicken breasts, cut into 3/4 inch cubes
1 pizza dough, use your own recipe
cornmeal or flour, for handling
2 cups shredded mozzarella cheese
4 scallions, slivered diagonally
1/2 cup white bean sprouts
1/4 cup shredded carrot
2 tablespoons chopped roasted peanuts
2 tablespoons chopped fresh cilantro

Steps:

  • Combine sauce ingredients in a small pan over medium heat.

  • Sprinkle an additional 1/4cup cheese over the toppings and top the pizza with 1 TBSP chopped peanuts.
  • Transfer the pizza to oven; bake until crisp and golden and the cheese is bubbly, 9 to 10 minute.
  • When cooked through, remove pizza from oven.
  • Sprinkle 1TBSP chopped cilantro over the hot cheesy surface.
  • Repeat with remaining ingredients for a second pizza.

An easy version of the California Pizza Kitchen favorite. I like to use the Italian pizza crust (Boboli) because it is quick, but you could also adapt it to use your own favorite pizza crust. A good one I like here on Zaar is Recipe #8497 posted by Steve Sickenberger.

1 italian pizza dough (Boboli)
3 1/2 tablespoons peanut butter
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 teaspoons chili oil
1 tablespoon ginger, minced
2 teaspoons honey
1/2 teaspoon sesame oil
2 tablespoons sesame seeds, toasted
1/8 cup green onion, sliced thin
1/2 lb chicken breast
salt
cayenne pepper
2 tablespoons olive oil
1/2 cup mozzarella cheese, shredded
1/2 cup monterey jack cheese, shredded
1 medium carrot, shredded
1/4 cup cilantro, chopped

Steps:

  • In food processor or blender, combine peanut butter, vinegar, soy sauce, chili oil, ginger, honey and sesame oil.
  • Set aside.
  • Season chicken to taste with salt and cayenne pepper (use sparingly).
  • Saute in olive oil until done (about 6-8 minutes).
  • Cut chicken into bite sized pieces and coat with 2 tablespoons of the peanut sauce.
  • Spread peanut sauce over the surface of the Italian pizza crust.
  • Scatter chicken pieces over top and sprinkle with sesame seeds and green onions.
  • Sprinkle with 1/2 cup of mozzarella cheese and 1/2 cup of the Monterey jack cheese.
  • Bake, uncovered in 400°F oven for 12 minutes.
  • Remove from oven and sprinkle with shredded carrot and cilantro.

1 lb pizza dough
1/2 cup Chinese duck sauce or 1/2 cup plum sauce
1/2 teaspoon red pepper flakes
10 ounces provolone cheese (2 cups) or 10 ounces monterey jack cheese
1/2 red bell pepper, cored, seeded, and thinly sliced
1 tablespoon vegetable oil
2 tablespoons soy sauce
1 tablespoon peanut butter
2 teaspoons hot sauce
2 teaspoons grill seasoning, such as McCormick's Montreal Steak Seasoning (eyeball it)
2 tablespoons honey
1/2 lb chicken breast, cutlets (4)
2 tablespoons cider vinegar
1/4 seedless cucumber, peeled and cut into matchsticks
4 scallions, white and green parts, chopped
1 cup bean sprouts, a couple of handfuls
fresh cilantro leaves, chopped
1/4 cup peanuts, chopped

Steps:

  • Preheat the oven to 425°F Form the pizza crust on a pizza pan or cookie sheet. Top it with duck or plum sauce, spreading it around like you would pizza sauce. Sprinkle the pizza with some red pepper flakes, then top it with the cheese and bell peppers. Bake until golden and bubbly, 15 to 17 minutes.
  • In a small bowl, combine the vegetable oil, soy sauce, and peanut butter with the hot sauce and grill seasoning. Use the microwave to loosen up the peanut butter if it is too cold to blend into sauce; 10 seconds ought to do it. Coat the chicken evenly with the mixture and let it stand for 10 minutes. Preheat a grill pan or nonstick skillet over medium-high heat. Cook the chicken cutlets for 2 to 3 minutes on each side, or until firm. Slice the chicken into very thin strips.
  • While the chicken cooks, mix the honey and vinegar in a medium bowl. Add the cucumber and turn to coat in the dressing.
  • When the pizza comes out of the oven, top it with the chicken, scallions, sprouts, and cilantro. Drain the cucumbers and scatter them over the pizza. Garnish the pizza with peanuts, cut it into 8 wedges, and serve.

1 (13 1/2 ounce) can unsweetened coconut milk
2 tablespoons Thai fish sauce
2 tablespoons packed dark brown sugar
1 1/2 teaspoons fresh lime juice
1 boneless skinless chicken breast, cut crosswise into thin strips (14 oz.)
1/3 cup coarsely chopped fresh basil leaf
1/4 cup diced canned bamboo shoot
22 ounces california-style pizza dough (Tony's Pizza Dough)
unbleached bread flour, for dusting
2 cups coarsely shredded mozzarella cheese
1/2 red bell pepper, julienned
1/3 cup grated carrot
3 basil leaves, cut crosswise into thin strips, for garnish

Steps:

  • Position an oven rack on the second-lowest level in the oven; place a baking stone on the rack.
  • Position another rack in the upper third of the oven; preheat oven to 500°.
  • Prepare toppings: in a saucepan, warm the oil over low heat; stir in the curry paste.
  • Add in the coconut milk, fish sauce, brown sugar, and lime juice.
  • Increase heat to medium; bring to a simmer.
  • Add in the chicken, chopped basil, and bamboo shoots; simmer until chicken is cooked through, about 10 minutes.
  • Using a slotted spoon, drain the chicken and bamboo shoots and transfer to a plate to cool.
  • Increase heat to medium-high; boil the sauce until it is reduced to about 2/3 cup; set aside to cool.
  • Coat a 14-inch pizza screen or perforated pizza pan with cooking spray.
  • Place dough on a lightly floured work surface; lightly dust the dough with flour.
  • Using a rolling pin, roll the dough into a 10-inch round without rolling over the edges.
  • Lift dough and check to make sure the dough isn't sticking to the work surface.
  • Shake excess flour from the dough; lay dough on prepared pan and gently stretch dough into a 14-inch round.
  • Top the pizza: spread the reduced sauce over the dough, leaving a 1-inch border.
  • Drain and discard any juice from the chicken and bamboo shoots; arrange them in a single layer over the sauce; sprinkle mozzarella evenly over the top.
  • Place the pizza in the oven on the upper rack; bake 10 minutes, until the crust is crisp and golden brown.
  • Using a pizza peel, lift the pizza off the pan and place the crust directly on the baking stone (remove pizza pan from oven).
  • Bake about 3 minutes, until the bottom of the crust is golden brown.
  • Using the peel, remove the pizza from the oven and transfer to a cutting board.
