1 pound ground beef
1 medium onion, chopped
2 tablespoons all-purpose flour
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon rubbed sage
1 can (14-1/2 ounces) stewed tomatoes, cut up
1/3 cup butter
4 to 6 garlic cloves, minced
1/2 cup all-purpose flour
1 can (14-1/2 ounces) beef broth
1 can (15 ounces) tomato sauce
1 to 2 tablespoons chili powder
1 to 2 teaspoons ground cumin
1 to 2 teaspoons rubbed sage
1/2 teaspoon salt
10 flour tortillas (6 inches), warmed
2 cups shredded Colby-Monterey Jack cheese, divided
Optional toppings: Halved grape tomatoes, minced fresh cilantro, sliced jalapeno peppers, chopped or sliced red onion and cubed avocado

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 6-8 minutes, breaking meat into crumbles; drain. Stir in flour and seasonings. Add tomatoes; bring to a boil. Reduce heat; simmer, covered, 15 minutes., In a saucepan, heat butter over medium-high heat. Add garlic; cook and stir 1 minute or until tender. Stir in flour until blended; gradually whisk in broth. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in tomato sauce and seasonings; heat through. , Pour 1-1/2 cups sauce into an ungreased 13x9-in. baking dish. Place about 1/4 cup beef mixture off center on each tortilla; top with 1-2 tablespoons cheese. Roll up and place over sauce, seam side down. Top with remaining sauce. , Bake, covered, until heated through, 30-35 minutes. Sprinkle with remaining cheese. Bake, uncovered, until cheese is melted, 10-15 minutes longer. Serve with toppings as desired.

3 cups beef, shredded
1 small onion, diced
3 tablespoons canola oil
2 tablespoons all-purpose flour
2 tablespoons chili powder
2 cups water
4 ounces tomato paste
1/2 teaspoon cumin
1 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 teaspoon salt
1/4 teaspoon sugar
1 dozen corn tortilla
1 cup oil, for frying tortillas
4 cups cheddar cheese, shredded
1 (4 ounce) can black olives, sliced, drained
1 cup sour cream, for topping (optional)

Steps:

  • In a medium size mixing bowl, add shredded beef and diced onions, mix well and set aside.
  • In a medium size sauce pan, add the oil, flour, and chili powder. Turn to medium heat and whisk the ingredients together.
  • Continue to whisk as the mixture begins to boil for one minute, then whisk in the water, tomato paste, cumin, garlic powder, and cayenne pepper until smooth. Allow the sauce to come up to a simmer. Once it reaches a simmering boil it will begin to thicken slightly after about 20 to 30 minutes.
  • Add salt to taste and 1/4 teaspoon sugar, mix to combine and then add about 1/4 cup of sauce to the shredded beef mixture and stir to combine. Set aside remaining sauce for enchiladas.
  • In a small size skillet, add oil to medium-high heat. Gently add one tortilla at a time and fry to a semi soft stage. Dab each tortilla with paper towels to remove excess oil.
  • As each tortilla is fried and dabbed with paper towels, stack them to keep them soft for rolling.
  • Preheat oven to 350 degrees F. Grease or spray with a nonstick cooking spray a 9x13 baking dish. Set aside.
  • Lay (one at a time) fried tortilla on a flat surface, add about 2 tablespoons shredded beef mixture to the middle of the fried tortilla and top with about 1 teaspoon shredded cheese.
  • Roll the tortilla tightly and place in the baking dish (seam side down). Repeat until all 12 tortillas are filled. (For best results, line the enchiladas into two rows of 6).
  • Pour the enchilada sauce evenly over the top of the filled tortillas, and then add remaining shredded cheese evenly to the top of the sauce and top with the sliced olives.
  • Cover baking dish with foil and bake in preheated oven for 35 to 40 minutes, or until bubbly and hot. Serve with sour cream, optional.
  • Makes: 6 servings.

Although they do take some time to prepare, the work is definitely worth the reward! The ingredients are mostly things that you probably already have stocked in the cupboard. 1 lb ground beef or 1 lb ground turkey
1 medium onion, chopped
2 tablespoons flour
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon ground sage
1 (14 1/2 ounce) can stewed tomatoes
4 -6 cloves garlic, minced
1/3 cup margarine
1/2 cup flour
1 (14 1/2 ounce) can beef broth
1 (15 ounce) can tomato sauce
2 tablespoons chili powder
2 teaspoons cumin
1 teaspoon sage
1/2 teaspoon salt
1 dash garlic powder
10 large flour tortillas
2 (8 ounce) cups shredded cheddar cheese or 2 (8 ounce) cups Mexican blend cheese

Steps:

  • In saucepan, cook beef or turkey and onion until browned; drain.
  • Add flour and seasonings.
  • Mix well.
  • Stir in tomatoes and bring to boil.
  • Reduce heat, cover, and simmer 15 minutes.
  • In another saucepan, saute garlic in butter.
  • Stir in flour until blended.
  • Gradually stir in broth and bring to boil.
  • Cook and stir for 2 minutes until bubbly.
  • Stir in tomato sauce and seasonings and heat through.
  • Pour 1 1/2 cup sauce in 13x9 inch pan.
  • Spread about 1/4 cup beef mixture down center of tortilla and top with 1-2 Tbsp cheese.
  • Roll up tightly and place seam side-down over sauce in pan.
  • Repeat with remaining tortillas and top all with remaining sauce.
  • Cover with foil and bake at 350 degrees for 30-35 minutes.
  • Sprinkle with remaining cheese and bake uncovered for 10-15 minutes until cheese melts.

1/2 bunch fresh cilantro
1 cup all-purpose flour
1 cup vegetable oil
1/4 cup beef bouillon

1 teaspoon garlic powder

Nonstick cooking spray, for the griddle
18 corn tortillas
2 cups shredded Cheddar
1 diced onion, optional

Steps:

  • For the filling: In large pot, cook ground beef, black pepper, chili powder, garlic powder and cilantro over medium heat until beef is browned all the way through.
  • For the gravy: In a large pot on low heat, add flour and vegetable oil. Cook, stirring often, for 30 minutes, to make a dark brown roux for the gravy. Add 1/4 cup water, the beef bouillon, chili powder, garlic powder, black pepper and salt. Continue to cook until you have the consistency for the gravy, another 5 minutes.
  • For the enchiladas: Heat a griddle or grill on medium heat. Spray cooking spray or put oil on griddle. Place tortillas on griddle until pliable for folding, about 15 seconds.
  • Place tortillas on a flat surface. Add meat to a tortilla and roll up, keeping the seam side down. Place on a microwave/oven-safe plate. Repeat until all tortillas are used.
  • Spoon gravy over enchiladas until covered. Top with Cheddar and place in microwave or oven until cheese melts. Top with onions, if using.

¼ onion, finely chopped
1 cup shredded Cheddar cheese
½ cup sour cream
1 tablespoon dried parsley
1 tablespoon taco seasoning

1 ½ teaspoons chili powder
1 clove garlic, minced

8 flour tortillas
1 (15 ounce) can black beans, rinsed and drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef with onion in a skillet over medium heat until meat is crumbly and no longer pink, about 10 minutes. Drain grease. Stir 1 cup Cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper into the ground beef until cheese has melted. Mix in enchilada sauce, chili powder, garlic, and salt; bring to a simmer, reduce heat to low, and simmer until meat sauce is slightly thickened, about 5 minutes.

Usually enchiladas are made using corn tortillas, I make this recipe using flour tortillas my family prefers them better. No need to double the sauce recipe this makes lots of sauce, and can be prepare the enchilada sauce early in the day to use later but it will thicken on standing just heat slightly, stirring over low heat before using, if you prefer a thinner sauce then you might want to give recipe#168653 a truy! For the beef mixture I really don't even bother to measure, if you prefer a more beefy flavor then increase the beef bouillon powder, the success of this recipe will depend on your taste, the amounts stated are only a guideline, start with the amounts listed and adjust all ingredients to taste. I like to also add in drained black beans to the ground beef mixture but that is only optional.

2 teaspoons cumin (or to taste)
1 teaspoon dried oregano
1 teaspoon seasoning salt
1/2 teaspoon cayenne pepper (or to taste, or use Tabasco sauce to taste)
1/3 cup flour, plus
2 tablespoons flour
1 3/4 cups canned beef broth
1 (398 ml) can tomato sauce

Steps:

  • Butter a 13 x 9-inch baking dish.
  • To make the sauce; heat butter in a saucepan over medium-low heat; add in garlic, chili powder, cumin, orgeano, 2 teaspoons seasoned salt and cayenne pepper and flour, cook stirring for 2 minutes.
  • Add in canned beef broth and bring to a boil; whisking/stirring until bubbly and thickened.
  • Add in tomato sauce; simmer for about 4-5 minutes over low heat.
  • Adjust all seasonings to taste; remove from heat.
  • Spread about 1-1/2 cups of the sauce into the buttered baking dish; set the remaining sauce aside.
  • For the filling; in a skillet cook the ground beef with onions, garlic and jalapeno pepper until no longer brown; drain all fat.
  • Add in flour, chili powder, cumin, oregano, beef bouillon powder, Worcestershire sauce, seasoned salt and black pepper; cook for 2 minutes.
  • Add in stewed tomatoes then break up the tomatoes with a fork; bring to a simmer; cook uncovered for about 25 minutes (adjusting seasoning to taste).
  • After the 25 minutes cooking time add in 1 cup shredded cheddar cheese; stir until melted then remove from heat.
  • To assemble the enchiladas; spread about 1/4-cup pf the beef mixture down the center of each flour tortilla, then sprinkle with 2-3 tablespoons shredded cheddar cheese (or to taste).
  • Roll up tightly and place seam-side down over the sauce in the baking dish.
  • Drizzle the remaining sauce over the enchiladas.
  • Cover and bake in a 350 degree oven for about 12-15 minutes or until heated through (do not overcook or the tortillas will become soggy).
  • Remove from oven and sprinkle with about 1 cup grated cheddar cheese and return to bake uncovered for another 8 minutes or until the cheese has melted.
  • Let stand for about 20 minutes or more before serving.
