COWBOY BEANS
Steps:
- Brown 2 ounces diced chorizo in a skillet with olive oil. Add 1/2 diced onion and cook 4 minutes. Stir in 1/2 diced jalapeno, 1 teaspoon each dried oregano, chili powder and minced garlic, and 1 chopped tomato; cook 1 minute. Add a 15-ounce can pinto beans (undrained) and 3/4 cup water; simmer 15 minutes. Season with salt, pepper and hot sauce.

COWBOY BACON BEANS

- Rinse the beans under cold water, sorting out any rocks/particles. Set aside.
- In a heavy pot (cast iron), saute the bacon pieces until halfway cooked and the fat is rendered. Add the green peppers and onions to the pot and cook until starting to get brown, about 3 minutes. Add the beans and cover with water by 1 inch. Bring to a boil, and then add the brown sugar, ketchup, mustard, chili powder, salt, pepper and garlic. Reduce the heat to a simmer, place on the lid and cook until the beans are tender and the liquid is thick 3 to 4 hours.
COWBOY'S PINTO BEANS
This is my recreation of the pinto beans at our favorite BBQ restaurant. It took a while to get the spicy, slightly sweet flavor right and this comes pretty durn close to the original.

Steps:
- Spray a 1 1/2-quart casserole dish with cooking spray.
- Cook bacon until just crisp, pat with paper towels, and crumble. Reserve 2 tablespoons of bacon grease.
- In reserved bacon grease, sauté onion and garlic until tender, about 10 minutes.
- Put undrained pinto beans, onions and garlic, bacon pieces, and rest of ingredients into the casserole dish and mix well.
- Bake, uncovered, in a preheated 350°F oven for 1 hour.

TEXAS COWBOY BEANS
This Texas pinto beans recipe are cooked up with brisket burnt ends and barbecue sauce to make them the perfect cookout side dish.

Steps:
- Gather the ingredients.
- Wash beans and pour into a large saucepan or Dutch oven .
- Add all other ingredients, except the salt .
- Bring to a boil while stirring.
- Reduce heat and allow to simmer for 2 hours, covered.
- Stir occasionally, bringing up the beans from the bottom to prevent burning and so they will cook evenly.
- Add the salt after 1 hour.
- The beans are done when they're soft but still hold their shape.
- Serve and enjoy.

HOMESTEAD COWBOY BEANS
I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
- At the same time, heat another large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Place bacon, ground beef, onion, ketchup, and brown sugar in a slow cooker; mix well. Add baked beans, Great Northern beans, pinto beans, and pork and beans.
- Cook on Low, stirring often, about 4 hours.
