16 oz bag of frozen green beans
1 medium yellow onion (chopped)
1 large jalapeno pepper (chopped ( optional))
1 lb bacon ends (chopped)
1 1/2 tbsp minced garlic
1/2 tsp cracked black pepper
1 lb baby red potatoes (cut in halves or quarters)
3 cups chicken broth.

Steps:

  • Add all of the ingredients into the slow cooker.
  • Turn the slow cooker on high.
  • Place the lid on top, and let cook for 4 hours.
  • Serve and enjoy!

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

Cover and refrigerate bacon until serving., In a 5-qt. slow cooker, combine the remaining ingredients; stir in reserved drippings. Cover and cook on low for 6-8 hours or until potatoes are tender. 1/2 lb green beans (about 2 Cups)
4 small new potatoes, Scrubbed, Cut in 8 pieces
1 1/2 teaspoons salt
5 slices bacon, cut in 1-inch Pieces
1/4 cup onion (Chopped)
1/4 teaspoon pepper

Steps:

  • In a medium saucepan, place water, beans, potatoes and 1 teaspoon of the salt.
  • Over medium-high heat, bring to a boil.
  • Reduce heat to low, cover and simmer for 10 to 12 minutes or until tender.
  • Drain.
  • Cover and set aside.
  • Meanwhile, in a 12 inch skillet over medium-high heat, cook bacon and onion until bacon is crisp and onion is tender.
  • Drain off all but 1 tablespoon of the bacon drippings.
  • Add beans and potatoes and toss until well coated with bacon and onion.
  • Sprinkle with remaining 1/2 teaspoon salt and pepper and serve.

These are just like my German grandmother made (the lemon is my addition) -- she always used fresh green beans from the farmer's market -- but canned green beans will do just fine. Delicious! A really great side dish (can be made ahead) for the holidays, or anytime.

4 slices bacon, diced (thick slices)
1 medium onion, chopped
4 (14 1/2 ounce) cans cut green beans, the liquid from 2 cans reserved (or use farm-fresh green beans, cooked and drained, reserving about 1 1/2 cups of the cooking liquid)
1/4 cup all-purpose flour
1 teaspoon finely grated lemon zest (optional)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup fresh parsley, finely chopped divided use
1 squeeze fresh lemon juice

Steps:

  • In a large heavy skillet (I use my large cast iron pan or Le Creuset) over medium heat, cook the bacon and onion,stirring often, until bacon is lightly browned and the onion is softened (about 15 to 20 minutes).
  • In a large measuring cup, stir the flour into the reserved liquid (or 1 1/2 cups water), whisking briskly with a fork until smooth.
  • Pour the flour mixture all at once into the bacon and onion mixture; use a wire whisk and whisk briskly to combine. Use a wooden spoon to gently scrape browned bits from bottom of pan and incorporate them into the sauce.
  • Cook and stir constantly (I use a wire whisk or wooden spoon) over medium-high heat until mixture comes to a boil. When mixture comes to a boil, continue to cook and stir on medium-high heat for 3 minutes more (at this stage you may want to add a touch more of water or flour, depending on how thick you want the sauce to be).
  • Add the green beans, lemon zest, salt and pepper, and the fresh parsley (except one tablespoon snipped parsley, for garnish); stir to combine. Reduce heat to medium, stir occasionally until beans are hot (8 to 10 minutes).
  • Remove from heat. Finish with a squeeze of fresh lemon juice and garnish with snipped parsley. Serve immediately.
  • If making beans ahead, to serve later:.
  • At this point, spoon hot bean mixture into a 1 1/2 to 2-quart size casserole dish; let cool slightly then cover and refrigerate. About 1 hour prior to serving, remove from fridge and let sit at room temp for 15 to 30 minutes. Place the covered casserole into a preheated 350 degree F oven for 30 to 40 minutes, until hot. Garnish with snipped parsley and serve hot.

2 (14 1/2 ounce) cans green beans (with juice, or 1 lb fresh green beans with enough water to just cover)
2 -4 slices bacon, ripped into natural pieces
1/2 tablespoon pepper sauce (Texas Pete, tabasco vinegar)
1/2-1 tablespoon salt (or to desired taste)
1/2 teaspoon fresh ground pepper
1/4 cup white onion (optional)

Steps:

  • Grab a good sized pot.
  • Set the heat on the stove to medium high.
  • Cook the bacon in the pot until brown, but not crunchy (include onion in this step cooked until translucent if desired).
  • Add canned beans with juice to pot, making sure to stir the bacon and its juices into liquid.
  • Add pepper sauce, salt, and pepper to pot.
  • Leave on medium-high heat, uncovered, until beans and liquid come to a slight boil.
  • When a boil is achieved, stir, turn the heat down to medium-low and cover (adjust the heat so the beans are just about boiling with the cover on but not boiling out of the pot).
  • Cook for 1 hour, stirring every 10-20 minutes.
  • Add more spices if desired (take a taste test every now and then).
  • For fresh beans, before cooking as directed above, boil beans in enough water to cover + 1 teaspoon salt for 5 minutes (I feel this helps get rid of the strange taste some fresh green beans have).
  • Drain.
  • Add fresh green beans to recipe as indicated, but add enough water to cover once more.

4 (14 1/2 ounce) cans green beans, drain 3 cans
8 slices bacon, cooked crisp and drained
pepper
1 onion, chopped
4 tablespoons butter
1 teaspoon dark brown sugar, divided
1 tablespoon good balsamic vinegar
salt and pepper
2 -4 tablespoons bacon butter pan drippings
1 tablespoon good balsamic vinegar, divided
2 tablespoons butter

Steps:

  • Fry bacon in pan til done sprinkling both sides as it cooks with coarse ground pepper.
  • Drain on paper towels, set aside.
  • Add half a stick of butter to bacon grease, (4 Tbl.).
  • Add chopped onion and 1 Tbl. balsamic vinegar and cook slowly over low heat for about 20 minutes til soft and sweet.
  • Remove from heat.
  • In crockpot, put 2 cans (drained) green beans.
  • Sprinkle with a little salt and pepper.
  • Sprinkle with half the bacon, broken into small pieces.
  • Sprinkle with half the cooked onions.
  • Sprinkle with half, (1/2 tsp.), dark brown sugar.
  • Drizzle with 1-2 Tbl. bacon/butter grease from pan. (Yes, do this.)LOL.
  • Drizzle with 1/2 Tbl. balsamic vinegar.
  • Repeat everything (*just draining one can, and add the fourth (last) can of green beans with the water from can pouring over evenly.).
  • Give all this a VERY gentle fold, folding only 2-3 times. Any more, and your green beans will begin to break up.
  • Cut up your 2 Tbl. butter into 8 pieces and dot top.
  • Cover and heat over high til hot throughout.
  • About 45 minutes.
  • You can also do this on the stove, or even in the oven in a casserole dish (covered.).

2 lb fresh or frozen whole green beans
4 c potatoes peeled & cubed
2 large onions peeled & cubed
1/2 c crumbled bacon bits
1/2 stick butter
1-1 1/2 tsp coarse black pepper
4-5 clove fresh garlic minced

Steps:

  • 1. Add green Beans to a large pot, cover with water.
  • 2. Add the chopped onions and minced garlic & BRING TO A BOIL. COOK TILL CRISP TENDER, ABOUT 20 MINUTES OR AS DESIRED. Add salt and pepper if desired.
  • 3. Drain water from green bean pot to a smaller pot. Add the cubed potatoes, and cook till potatoes are tender. Drain the liquid and add the potatoes to the pot of green beans.
  • 4. Add the crumbled bacon bits, and butter, stir to mix together. Taste first and see if additional salt and pepper is needed. I did not use salt because the bacon bits are already salty.
  • 5. Pour into a serving dish and serve while still hot. How could such a simple dish taste so good. It was very good, and rekindle memories of my childhood all in one.

  • In a dutch oven or large pot over medium heat, cook bacon until crisp. Transfer bacon with a slotted spoon to paper towels to cool. Leave bacon fat in pan.
  • Add diced onion to the bacon fat. Cook over medium heat for 2-3 minutes, or until onion softens.
  • Add green beans, chicken stock, 1 teaspoon of garlic salt, and 1/4 teaspoon black pepper. Stir together. Lower heat to a simmer, cover and cook for 30 minutes.
  • Uncover sprinkle 1/2 teaspoon garlic salt over beans. Arrange halved potatoes over the green beans. Dot tops of potatoes with cubed butter. Sprinkle remaining 1/2 teaspoon of garlic salt and 1/4 teaspoon pepper over top. Cover and simmer for another 30 minutes or until potatoes are done (fork-tender).
