SPICY GARLIC GREEN BEANS
These green beans are so good they basically taste like candy! Doused with garlic, lemon zest, shallots and a decent amount of spice, you'll get anyone to love them!

Steps:
- Bring a large pot of water to a boil.
- Add the green beans and cook for 3 minutes. Drain the green beans and set aside.
- In a large heavy bottom skillet, heat the olive oil over medium high heat. Add the shallot, garlic and red pepper flakes and sauté for 2 minutes until the garlic becomes fragrant. Add the green beans and mix everything together, making sure the garlic and shallots are evenly distributed amongst the green beans.
- Season with salt and the lemon zest and serve immediately.

Add the garlic, peppers, turmeric, cumin, and cayenne, and cook, stirring, until the garlic begins to turn golden, about 2 minutes. Add the green beans, water, salt, and stir well. Cover and cook over medium-low heat, stirring occasionally, until the beans are tender, 4 to 5 minutes. Add the sesame seeds and cook uncovered, stirring, until toasted, 2 to 3 minutes.
- Remove from the heat and adjust seasoning, to taste.

- Heat the olive oil in a large skillet or wok over medium-high heat. Add the green beans and cook, stirring every minute or so, until they get little blackened spots all over, about 8 minutes total.
- Combine the remaining ingredients in a measuring cup. If you like it HOT, add 2 Tbsp or more hot sauce. If you like it a bit more mild, just add 1 Tbsp.
- When the green beans are almost done, carefully pour the sauce into the pan. It'll sizzle viciously and make lots of angry noises. Just stand back and let it do its thing for a bit. Then stir and stir until the beans are totally covered in the sauce. Remove from the heat and serve right away!

- Wash and cut stems off green beans. Heat up skillet with 2 T olive oil. When hot toss in half the garlic. Just as it starts to pop add sesame oil and green beans and toss until lightly coated. - In a large pot, boil the green beans for 3-4 minutes, until tender-crisp. Then immediately place the green beans into a large bowl with ice and cold water (ice bath). Set aside.
- Heat a large skillet at medium-high heat and add the oil, garlic, and ginger to the skillet. Sauté for 1-2 minutes until the garlic just begins to brown.

- Prepare your canner and jars.
- Wash and trim vine ends off beans. Remove strings from string bean varieties. Cut beans into jar-length pieces, being sure to leave enough room for a ½ inch of headspace between the top of the beans and the top of the jar.
- In a saucepan, bring salt, water and vinegar to a boil over medium high heat. Heat, stirring until salt has completely dissolved.
- Remove jars from the canner and place one clove of garlic, ¼ teaspoon of dried chilli flakes OR one whole chilli pepper and one head of dill in each hot jar.
- Pack each jar full of beans until you can't pack any more in. Then, cover with hot vinegar brine, leaving a ½ inch of headspace at the top.
- Jostle jars gently to allow any trapped air bubbles to escape. Wipe rims, place lids on top and screw bands down to fingertip tight.
- Process jars in a boiling hot water bath for 10 minutes. Then remove canner lid and wait another five minutes before removing jars. Allow to cool completely before storing in a cool dark place.
