2 pounds sweet Italian sausage
1 pound fresh mushrooms, sliced
1 onion, chopped
1 green bell pepper, chopped
1 tablespoon minced garlic
2 (28 ounce) cans tomato sauce
2 tomatoes, diced
1 (6 ounce) can tomato paste
1 (6 ounce) can sliced black olives, drained
1 teaspoon dried oregano, or to taste
1 teaspoon dried basil, or to taste
salt to taste
1 (16 ounce) package spaghetti, or as needed
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Cook and stir sausage, mushrooms, onion, green bell pepper, and garlic in the hot oil until sausage is browned and crumbly, about 20 minutes; drain and discard grease.
  • Stir tomato sauce, diced tomatoes, tomato paste, and olives into sausage mixture; season with oregano, basil, and salt. Simmer mixture until flavors infuse, about 30 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain and transfer to a serving bowl; top with tomato-sausage sauce and Parmesan cheese.

My kids will give up a steak dinner for this spaghetti. It is a recipe I have been perfecting for years and it is so good (if I may humbly say) that my kids are disappointed when they eat spaghetti anywhere else but home! In fact they tell me I should open a restaurant and serve only this spaghetti and garlic bread. In response to requests, I have posted the recipe for Recipe #28559 that uses approximately 1/2 of the sauce from this recipe. Have spaghetti one night and lasagna later! Thanks to all of you who have tried my recipe and have written a review. I read and appreciate every one of them! Chef Note: After I posted this recipe I remembered a funny incident--my dear husband usually has a nice bottle of wine handy so when I make a batch of spaghetti I just help myself to a splash of it. On one occasion, there wasn't a bottle opened, but there was a bottle sitting on the counter so I got out the corkscrew and helped myself. For some reason, the spaghetti that night was the best ever. My husband asked what wine I put in it and I showed him the bottle. He nearly fell off the chair. I had opened a rather expensive bottle he had bought to give his boss. Goes to show you--don't use a wine for cooking you wouldn't drink. You get the best results from a good wine!

2 lbs Italian sausage, casings removed (mild or hot)
1 small onion, chopped (optional)
3 -4 garlic cloves, minced
1 (28 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
2 (15 ounce) cans tomato sauce
2 cups water (for a long period of simmering for flavors to meld. If you don't want to simmer it as long, add less)
3 teaspoons basil
2 teaspoons dried parsley flakes
1 1/2 teaspoons brown sugar
1 teaspoon salt
1/4-1/2 teaspoon crushed red pepper flakes
1/4 teaspoon fresh coarse ground black pepper
1/4 cup red wine (a good Cabernet!)
1 lb thin spaghetti
parmesan cheese

Steps:

  • In large, heavy stockpot, brown Italian sausage, breaking up as you stir.
  • Add onions and continue to cook, stirring occasionally until onions are softened.
  • Add garlic, tomatoes, tomato paste, tomato sauce and water.
  • Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper.
  • Stir well and barely bring to a boil.
  • Stir in red wine.
  • Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce, just be careful not to let it burn!
  • Cook spaghetti according to package directions.
  • Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.

I usually serve this over spaghetti, but sometimes I use linguine, fettucine, or penne. Good with garlicky bread and a salad. You can also make the sauce ahead and freeze it (it freezes quite well); just thaw and heat.

1 lb 95% lean ground beef
1 -2 garlic clove, minced
1 small onion, chopped
2 stalks celery, chopped
1 cup sliced mushrooms (or use 2 small cans sliced mushrooms, drained)

2 (14 1/2 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
3 -4 tablespoons mixed Italian herbs
2 dried bay leaves
salt

1 pinch brown sugar (optional)
2 (12 ounce) packages dry pasta
1/2 cup shredded parmesan cheese

Steps:

  • Brown beef in a saucepot or large, deep skillet over medium heat; drain.
  • Add garlic and saute until just turning white.
  • Add onion, celery, and mushrooms. Saute until tender, about 5-7 minutes.
  • Add tomatoes with juice and tomato sauce. Stir to combine. Add tomato paste and mix together. Stir in herbs and bay leaves. Season to taste with salt and pepper. Add a pinch of brown sugar, if desired.

1 yellow onion, chopped

3 lb italian pork sausage cut into 2 or 3 in. links (hot, sweet, or mild)
3 Tbsp olive oil, extra virgin
1 medium onion (diced)
3 clove garlic (finely choped or crushed)
2 can(s) (6 oz.) tomato paste
1/2 c red wine
1 Tbsp parsley flakes
2 tsp oregano, dried
2 tsp sweet basil, dried
1 1/2 tsp dried mint (cuts acid in tomatoes)
4 can(s) (28 oz.) crushed tomatoes
to taste salt
to taste black pepper
to taste crushed red pepper (if you want to add a kick)
1/2 c parmigiano-reggiano, grated

Steps:

  • 1. In a large dutch oven or heavy sauce pan heat olive oil. Place sausage links in pan. Turn until evenly browned. Remove to a platter.
  • 2. Add onion to pan stirring until translucent. Add garlic. Be careful not burn the garlic. Stir for about a minute. Add tomato paste, parsley, oregano, basil,and mint and stir for about a minute. Add red wine and stir for a couple minutes while scraping all the goodness off the bottom of the pan.
  • 3. Add crushed tomatoes and stir to mix paste and wine into the tomatoes. Stir in parmigiano cheese. Add the sausage back to the pan. Bring to a boil, stirring constantly. Reduce heat to very low and simmer for 2 1/2 to 3 hrs. Stir occasionally to keep from sticking to bottom of pan.
  • 4. About 15 min. before the sauce is done sprinkle in some more parsley, oregano, basil, and mint to freshen the flavor and add color. Serve over your favorite pasta.

2 medium onions...chopped
4 can(s) 14.5 ounce diced tomatoes (strained)
2 can(s) 8 ounce tomato sauce

2 Tbsp brown sugar
8 clove minced garlic
4 tsp dried basil
4 tsp dried oregano
1 Tbsp salt
2 tsp dried thyme

  • 1. In skillet, cook Italian or wild game sausage (ground beef if you choose) and onion over medium heat until meat is no longer pink; drain (unless using wild game sausage where there will not be any meaningful liquid to drain)
  • 2. Transfer to slow cooker (crockpot)
  • 3. add the remaining ingredients and stir well to mix. Cover with bay leaves on top.
  • 4. cover and cook on low for 7-8 hours. Take lid off slow cooker for the last hour to allow liquid to cook off...
  • 5. discard bay leaves and serve over spaghetti/pasta...do not rinse the pasta as you will loose the starch (rinsing of pasta is not recommended)
  • 6. We now sprinkle parm cheese on the plate before the pasta as a nice touch and to mop up any liquid separation from the sauce (although there will be none)...and of course parm cheese on top. Enjoy!

This is my favorite method of making Italian sausage spaghetti. By browning the sausages first and then cooking them in the sauce at a long, slow simmer, the sausage is loaded with flavor and firm, but tender--almost meatball-like in texture. And we hardly need any seasonings because the long cook time allows the sauce to get infused with all the sausage-y goodness!

1 tablespoon olive oil
4 (6 ounce) sweet Italian sausage links
¼ cup white wine
1 (32 ounce) jar marinara sauce
1 ½ cups water
1 (16 ounce) package spaghetti
½ cup freshly grated Parmigiano-Reggiano cheese
2 tablespoons chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Heat olive oil in a saucepan over medium heat. Transfer sausage links into the hot pot. Cover with a lid and cook until beautifully browned and just barely cooked through, about 5 minutes per side. You can increase the heat a little if you like, but make sure the oil does not smoke. Turn off the heat and remove sausages to a plate to cool completely.
  • While the sausages are cooling, add wine to the same pot over medium-high heat. As it comes up to a simmer, stir the caramelized bits on the bottom of a pan with a spoon or spatula. Simmer until it reduces by about half, 1 to 2 minutes.
  • Add marinara sauce. Pour water into the jar of pasta sauce, seal, and shake to rinse out the jar. Pour that liquid into the pot and return to a simmer. Reduce heat to low.
  • Slice each fully cooled sausage into 4 pieces. Transfer sausage and any accumulated juices into the simmering sauce. Stir and increase heat to just between low and medium-low. Cook at a gentle, steady simmer, stirring occasionally, for 1 hour. Taste and adjust seasonings. Skim about 1/2 of the fat from the surface, and continue to cook until reduced and thick, about 30 minutes longer.
  • Meanwhile, bring a large pot of generously salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until almost tender yet firm to the bite, 10 to 11 minutes. Drain spaghetti and transfer it directly into the pot of hot sauce. Mix until thoroughly combined. Cover with the lid and let sit for 1 minute so the pasta can absorb some of the sauce.
  • Evenly divide pasta onto 4 plates and top each serving with 4 pieces sausage. Sprinkle with Parmigiano-Reggiano and parsley.

If you want to use a 14 1/2 - 15 oz can of another brand, that works too. (Dei Fratelli doesn't sell a smaller can.) This recipe is at it's absolute best the day after making it.

1/2 large onion, chopped

0.5 (28 ounce) can tomato sauce (Dei Fratelli, plain)
6 ounces tomato paste

Steps:

  • In a large Dutch oven, melt the butter with the olive oil, add the garlic and onion, and saute until onion is soft/translucent.
  • Add the ground sirloin and Italian sausage and cook until no longer pink.
  • Stir in the remaining ingredients, adding the bay leaves last so as not to break them up during stirring. Adjust the seasonings as needed to suit your taste.
  • Bring the sauce to a boil, then turn heat down to the lowest possible heat and let simmer for 2 hours covered with an offset lid.
  • Serve with cooked spaghetti and parmesan cheese.

Never was I happier than when I discovered I could make a vegan version of my mom's spaghetti sauce that tasted just like hers! Make sure to include the fennel seed - it mimics the taste of sausage in the sauce. It is important to use a non-stick pot, so the veggie crumbles sear well and don't stick to the bottom.

2 tablespoons Earth Balance natural buttery spread
2 tablespoons olive oil
1/2 large onion, chopped
3 garlic cloves, minced
1 lb veggie crumbles (Smart Ground Original)
28 ounces petite diced tomatoes
15 ounces tomato sauce
6 ounces tomato paste
1 teaspoon salt
1/4 teaspoon pepper
1 -2 teaspoon sugar
1/2 teaspoon oregano
1 teaspoon fennel seed, crushed
2 -3 bay leaves

Steps:

  • In a large non-stick pot over medium heat, melt the Earth Balance and olive oil, add the onion and saute until it is soft and translucent. Add the garlic and cook for just a minute.
  • Continuing over medium heat, add the veggie crumbles, breaking them into very small pieces. Allow them cook, stirring only every minute or so. Doing this gives the crumbles time to brown/sear. Cook for 8-10 minutes, or until well browned.
  • Stir in the remaining ingredients, adding the bay leaves after all the other ingredients have been mixed together. Bring the sauce to a boil, then turn down the heat to a simmer and cook for one hour covered with an offset lid, stirring periodically.
  • Serve over spaghetti with a green salad and garlic bread made with olive oil.

  • Remove casing from sausage links by cutting with a knife down the length of the link, and removing the sausage. Discard the casing. Crumble the sausage into a large skillet.
  • Sauté the sausage and chopped onion on medium heat. Add the green pepper; cook until sausage is fully cooked. Drain the grease out of the pan (discard), and return skillet to stovetop.
  • Add tomato paste, can of diced tomatoes (including juice), and water to skillet. Add oregano, Italian seasoning, basil, garlic powder, salt, pepper and red pepper flakes. Add sliced mushrooms. Stir all ingredients well, to combine.
  • Bring sauce to a boil, then reduce heat to low and continue to cook for about 30 minutes. The sauce will reduce down a bit, and the flavors will permeate the sauce. Taste test the sauce and add additional salt or spices as desired.
