COUNTY FAIR FUNNEL CAKES
What would the fair be without these delicious deep-fried pastries? To make these timeless treats, slowly swirl batter into oil, brown it to perfection and lightly dust with confectioners' sugar.

- In a large bowl, combine the eggs, milk and brown sugar. Combine flour, baking powder and salt; beat into egg mixture until smooth. , In an electric skillet or deep-fat fryer, heat oil to 375°. Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into funnel. Holding the funnel several inches above the skillet release finger and move the funnel in a spiral motion until all of the batter is released (scraping funnel with a rubber spatula if needed). , Fry for 2 minutes on each side or until golden brown. Drain on paper towels. Repeat with remaining batter. Dust with confectioners' sugar; serve warm.

- You will also need a small kitchen funnel with about a 1/2" hole at the bottom, and a deep-fry thermometer. (If you don't have a funnel, you can pipe the batter from a plastic baggie, or pour it directly from a spouted measuring cup.).
- Preheat oil in an 8-inch round skillet to 360° - 370°F over medium/medium-high heat. (I used a non-stick skillet.) Use a deep-fry thermometer for accuracy.
- While the oil heats, whisk together the flour, baking powder, and salt in a small bowl. Set aside.
- In a medium mixing bowl and using a mixer, beat together the egg and milk on low speed for about 10 seconds, just to blend well. Beat in the flour mixture until smooth. (The batter should be able to pass through the funnel hole at the bottom, if it's too thick, add a dab more milk. If too thin, add a bit more flour. I did not need to add either.).
- When oil is ready, put your finger over the funnel hole and spoon about 2/3 cup batter into the funnel. (My funnel was small so I filled it to the top, worked out perfect.) Holding the end of the funnel close to the oil, remove finger from the opening and release batter into the oil in a circular motion. Fry until bottom side is light golden, then using a wide spatula and tongs, carefully flip it over and fry second side for 1 minute. Remove to a paper towel lined wire rack to drain. Repeat process for the other funnel cake.
- Transfer cakes to 2 serving plates and dust with a humongous amount of sifted confectioners sugar! Then pull it apart with your fingers and enjoy!

I like to use these as a base for a very large ice cream sundae. i sometimes change up the flavor by simply changing the type of extract used.

- In a mixing bowl combine eggs and milk and vanilla.
- sift dry ingredients together and add to egg mixture beating until smooth.
- test batter to see if it flows evenly through funnel. If to thick add milk, if to thin add flour.
- Pour about 2 cups cooking oil in 8 inch skillet and heat to about 360 degrees.
- cover funnel tip with finger and add about 1/2 cup or so to funnel.
- uncover funnel tip and release into hot oil in spiral patterns.
- Fry until golden (about 2 or 3 mins). flip and fry other side (about 1 or 2 mins).
- drain on paper towels and lightly dust with powdered sugar.

These American funfair favourites are a cross between a doughnut and churros - fill a funnel or piping bag with batter and drizzle into hot oil to make squiggly round cakes

- Pour enough oil into a large saucepan to come halfway up the sides, it should be about 7cm deep. Heat until the oil reaches 170C-180C on a thermometer, or if you don't have one drop in a chunk of bread - the oil is hot enough when it browns in about 30 secs.
- Whilst the oil heats up, whisk together the flour, icing sugar, baking powder, milk, eggs and a good pinch of salt. Transfer the batter to a disposable piping bag and secure the end with a peg (you'll need another peg for the other end, once you've cut it open.)
- When the oil is hot, snip off the end of the piping bag to make an opening about 1cm wide - the batter will drizzle out so pinch it closed until you're ready. Hold the piping bag over the oil, release your finger and drizzle the batter in in a swirly circle shape. Pinch the opening to close it, then make another cake, you should fit about 3 in the pan it one time, depending on the width of your pan. Secure the piping bag with another peg whilst the cakes cook, they'll need about 1 min on each side, or until they're golden brown and crisp. Drain on kitchen paper and dust generously with icing sugar, best eaten straight away.

- In a large bowl, beat milk and eggs together. Combine flour, baking powder, cinnamon and salt. Stir into the egg mixture until smooth.

- Combine the eggs and the milk in a mixing bowl.
- Sift together the flour, baking powder and salt.
- Add the dry ingredients to the egg blend, and beat with an electric mixer until you have a smooth batter.
- Test the mixture and see if it flows easily through a clean plastic funnel. If it's too thick, beat in a little milk. If it's too thin, add a little sifted flour.
- In an 8-inch skillet, heat the canola oil to 360-degrees F.
- Covering the bottom opening of the funnel with a finger, pour in at least 1/2 cup of batter into the top of the funnel. A partner will be very helpful.
- Remove finger and release batter into the hot oil, moving the funnel in a spiral as you do so. Fry the funnel cake until golden brown, about three minutes. Use a wide spatula and some tongs to carefully turn the funnel cakes in the hot oil and fry the second side for about 1 minute.
- Drain on paper towels and sprinkle with confectioner's sugar.
- Serve the funnel cakes hot, with syrup if you wish.

- Beat eggs and sugar together and then add the milk slowly--beat. Add the dry ingredients and beat until smooth and creamy.
- Pour batter into a funnel and at the same time, use your finger to plug the hole. In a large cast iron pot, add 2 inches of oil to the bottom.
- When the oil becomes hot, move your hand over the pot and slowly release your finger so the batter can start cooking.
- Move the funnel around to make designs.
- Brown on both sides--then immediately remove and drain extremely well.
- Top with brown sugar, or honey, or cinnamon sugar, or powdered sugar as a topping.

- In a medium bowl, mix flour, salt, baking soda, sugar and baking powder.
- In another medium bowl, mix egg and 1 C.
- milk together, beating until smooth.
- Slowly add the flour mixture to the egg mixture and beat until smooth.
- Add remaining milk, a little at a time, if needed, until batter has the consistency of pancake batter.
- Heat 1 inch of the vegetable oil in a heavy-bottomed pan to 365°.
- Place 1/4 C.
- of batter into a clean funnel while holding a finger over the bottom hole.
- Place funnel over hot oil and remove finger, swirl funnel in a circular motion over hot oil until all of the batter is in the oil.
- Fry cake until golden brown, about 90 seconds.
- Flip and fry remaining side until golden.
- Remove to brown paper to drain and dust with confectioners' sugar while still warm.
- Serve immediately.
