Steps:
- Melt margarine and place in the bottom of 9" by 13" baking pan.
- Spread potatoes (still frozen is okay) in bottom of the pan.
- Sprinkle chopped vegetables over potatoes.
- Add salt and pepper to taste.
- Sprinkle meat over potatoes and vegetables.
- Note: At this point you may continue or casserole may be refrigerated overnight.
- Pour beaten eggs over potatoes.
- Bake at 350 degrees for 45 minutes.
- Remove from oven and sprinkle cheese evenly over top.
- Bake another 5-10 minutes or until cheese is hot and bubbly.
- Remove from oven and let set for approximately 5 minutes.
- Cut into 2.5"-3" squares and serve with a spatula. Enjoy.

COUNTRY CLUB EGGS- A GREAT MAKE AHEAD BREAKFAST CASSEROLE
I've tried alot of breakfast casserole recipe but this is the one that my family loves and I always come back to. We always have this on Christmas morning and it's also good for a make ahead dinner on a busy week night. I usually serve this with fruit of some kind and either a sweet roll or coffee cake.

Steps:
- Brown sausage in skillet, stirring until browned and crumbled. Then drain.
- Combine all ingredients in a large bowl and mix well.
- Pour mixture into a greased 9x13 casserole dish.
- Regfrigerate at least 8 hours or overnight.
- Preheat oven to 350 degrees.
- Bake for 45 minutes or until center tests done.
MAKE AHEAD EASY CHEESE-FREE BREAKFAST CASSEROLE
A variation of Diane in Nebraska's Breakfast Casserole recipe. Great for large groups or working parents. Have the kids help with prep the night before, bake in the morning while the family gets ready for the day. Double the cheese if you want to make the entire pan cheesy. Gives you something to wake up for, and leftovers that work for any time of the day! Also a great option for Breakfast for Dinner night.

Steps:
- Spray a 9"x13" baking pan with non-stick cooking spray.
- Melt butter and drizzle in the bottom of the pan.
- Spread the potato cubes mixed with onions and peppers (I use Ore Ida's Potatoes O' Brien) in the bottom of the pan.
- Layer mushrooms, meat and any additional vegetables you would like. At this point you might like to add the optional cheese. We usually make half the pan cheesy.
- Whisk eggs, milk, salt and pepper.
- Pour egg mixture evenly over the top.
- Cover and refrigerate overnight.
- Bake uncovered at 350 for 1 hour until set.

- Spread bread cubes in large buttered casserole. Top with sausage and cheese.
- Combine eggs, milk and seasonings. Beat well and pour gently over cheese.

- Brown sausage; drain.
- Add bread cubes, broccoli, mushrooms and cheese; mix lightly.
- Spoon into 13 x 9 baking dish.
- Pour combined eggs, milk, dressing, flour and seasonings over bread mixture; cover.
