Breakfast Sausage Seasoning Recipe image

Mix up a batch of breakfast sausage seasoning to make your own sausage patties, or use the seasoning in your favorite recipes to make them taste like breakfast sausages, even if there's no sausage in them! This mixture makes enough for 5 pounds of ground meat. Use either ground pork or ground turkey, or a mixture of the two. Listen to our editor, Christine Pittman, explain briefly how to make this seasoning mix, with some great tips along the way, by clicking the play button below: [sc name="breakfastsausageseasoningrotd"][/sc]

Provided by Christine Pittman

Time 5m

Number Of Ingredients 8

5 tsp. dried sage
5 tsp. salt
2 tsp. black pepper
½ tsp. garlic powder
½ tsp. dried thyme
¼ tsp. crushed red pepper flakes (optional)
⅛ tsp. ground cloves

Steps:

  • Combine all ingredients in a small bowl.
  • Use immediately or store in a sealed container at room temperature for up to 2 months.

COUNTRY SAUSAGE

Country Sausage image

Provided by John Martin Taylor

Categories     Pork     Sausage

Yield Makes about 3 pounds

Number Of Ingredients 10

3 pounds fatty pork or 2 pounds lean pork and 1 pound pork fat
1 tablespoon salt
1/2 teaspoon black peppercorns
1 teaspoon hot red pepper flakes
1/2 teaspoon rubbed sage or 3 or 4 fresh leaves
1 teaspoon Quatre-Epices
1 teaspoon herbes de Provence or Italian seasoning
1 teaspoon fresh rosemary leaves or 1/2 teaspoon dried
1/2 teaspoon fresh thyme leaves or 1/4 teaspoon dried
6 to 8 feet of cleaned hog casings (optional)*

Steps:

  • If your meat grinder comes with a coarse and a fine grind attachment, grind the meat first through the coarser disk. Put all the remaining ingredients in a spice mill or blender and process until ground evenly. Add the ground seasonings to the meat and mix in well. In a frying pan on top of the stove, fry a little piece of the sausage and taste for seasoning. Correct the seasoning to your own taste. If you think the sausage is too fatty, you may add some more lean meat (and it needn't be pork: veal is fine, and oysters are delicious); you may want more hot peppers.
  • Put the properly seasoned forcemeat through the fine grinder.
  • If you are stuffing the sausage into casings: Run the mixture through the meat grinder set on the fine setting (and with the sausage stuffer attached and the casings tied at one end and placed over the end of the funnel, ready to be filled). Tie off stuffed sausages into 4-inch links. Cover the sausages and place immediately in the refrigerator.
  • You can smoke some or all of the sausage - or partially smoke it. And you can freeze the sausage as well.

  • Toss all the ingredients in a stainless steel bowl until well combined. Cover and refrigerate for 2 hours.
  • If using a meat grinder: Put your meat grinder parts or attachment in the freezer to chill at the same time you put the ingredients in the refrigerator. Set up your meat grinder with the smallest die according to the manufacturer’s directions. Working in batches, feed the meat mixture into the grinding tube and grind the sausage mixture into a separate bowl. If not using a meat grinder: See the note following the recipe about having your butcher grind the pork for you. Mix the pork with the remaining ingredients by hand. (Do NOT toss everything in a food processor or you’ll end up emulsifying the fat and meat proteins, which is a scientific way of saying you’ll end up with a very strangely textured sausage.)
  • Measure about 2 ounces (57 grams or about 1/4 cup) sausage and gently press it between your palms into a 2-inch (5 cm) patty that’s about 1/2 inch (12 mm) thick. Repeat until all the sausage has been used. [Editor’s Note: We prefer sausage patties for their ease of making and cooking. If you prefer sausage links and have the know-how, by all means, go ahead and put the sausage mixture in casings.] Place the sausage patties in a resealable plastic bag, separated by squares of wax or parchment paper, and stash in the fridge for up to 4 days or in the freezer for up to 6 months. (If freezing the sausage, be sure to safely thaw the meat prior to cooking.)
  • To cook the sausage patties, warm a cast-iron skillet or a sauté pan over medium heat for 1 minute. Add a few patties, being careful not to crowd the pan, and cook, turning every couple of minutes, until browned on both sides and cooked through in the center, about 10 minutes. The pork should register at least 145°F on an instant-read thermometer. Serve immediately.
