Steps:
- Preheat oven to 400 degrees F (200 degrees C). Spray 12-cup muffin tin with cooking spray.
- Beat eggs until thoroughly combined. Stir in cottage cheese, diced green chilies, green onions, sweet bell peppers, salt and pepper. Stir to combine. Pour mixture into prepared muffin tin.
- Bake in preheated oven until set, 15 to 20 minutes.
- Loosen muffins from the muffin tin while still hot.

- Preheat oven to 350 degrees F and place unbleached muffin liners into a 12 muffin tin and spray with cooking spray. Alternatively, you could use silicone muffin tin.
- In a large mixing bowl, whisk eggs and egg whites for 30 seconds. Add cottage cheese, mozzarella cheese, onion or garlic powder, salt, pepper, red pepper flakes and stir to combine. Add quinoa, broccoli, parsley and green onions, and mix.
- Fill each muffin with egg mixture 3/4 full and sprinkle with extra mozzarella cheese on top (optional). Bake for 20 minutes and then broil until golden brown crust appears (optional).
- Remove from the oven and let cool about 10 minutes. Serve hot or cold.

- Preheat the oven to 200°C/400°F/gas 6. Line a 12-hole muffin pan with a double layer of paper cases.
- Whiz the almonds in a food processor until really fine, then put in a bowl with the cottage cheese, flour, sun-dried tomatoes and baking powder. Grate in most of the Parmesan and pick in most of the thyme leaves.
- Lightly beat the eggs and add with the oil and 1 tablespoon of water. Season then lightly combine.
- Spoon the batter into the cases and grate over the remaining Parmesan and pick over the remaining thyme leaves.
- Bake for 30 to 35 minutes, or until risen and golden brown. Serve while warm or at room temperature.

COTTAGE CHEESE ONION MUFFINS
This recipe comes from The Original Vidalia Onion Cookbook that I received years ago with a gift box of Vidalia onions. While I haven't made these muffins yet, I love muffins and this sounds like something that would be great with a steak dinner. I'm posting it here since I always forget to dig through my cookbooks now that there are so many great recipes online.

- Preheat oven to 400 degrees.
- Coat muffin tins with cooking spray.
- Sift together flour, sugar and baking soda. Then add remaining ingredients, one at at time, in the order listed in the ingredients. Stir to incorporate each before adding the next.
- Fill muffin tins 1/2 full and bake for 15-20 minutes.
- Cool a few minutes before removing from muffin pan.
- Serve with butter.
CHEESE AND ONION MUFFINS
Steps:
- Preheat oven to 375 F.
- In a non-stick skillet over medium heat stir butter and chopped onion. Sauté for 10-15 minutes until lightly browned.
- In a large mixing bowl mix all dry ingredients together and stir in cheddar cheese and 1/2 cup of parmesan.
- Beat egg, milk, oil and caramelized onions into a separate bowl and add to dry ingredients. Fold gently until just combined.
- Spoon Cheese and Onion Muffins into well-greased cups. Sprinkle the top of each muffin with remaining 1/2 cup parmesan cheese then bake for 15-20 minutes.

- Preheat the oven to 200C/180C Fan/Gas 6 and line a 12-hole muffin tin with muffin cases.
- Measure the flour, baking powder and salt into a large bowl. Mix the butter, egg and milk together in a jug.
- Add the cheese, basil and olives to the bowl of dry ingredients and mix well. Pour in the wet ingredients and gently stir everything together using a fork. Loosely swirl in the sun-dried tomato paste to give a rippled effect through the batter.
- Divide the mixture between the cases and bake in the oven for 18-20 minutes, or until well risen and lightly golden brown.
- Remove from the oven and allow to cool slightly. Serve warm or cold.
