Costa Vida is a Mexican Restaurant style of food. This is my copy cat recipe. With the sweetness of this pork it pairs well with extra spicy salsa or top it off with extra sliced jalapeno's.

PORK
5 lb pork roast
3 c coke
8 oz can tomato sauce
1/2 c brown sugar
1 Tbsp cayenne pepper
6 clove garlic
2 large carrots grated
2 small jalapeno pepper seeded and diced
1 medium onion chopped
1 cup coke and 1/2 cup sugar
COSTA VIDA RICE
2 c jasmine rice
32 oz chicken broth
1 Tbsp better than bouillon chicken bouillon
1 c cilantro chopped
4 green onions chopped
2 limes juiced
salt to taste

Steps:

1. For the pork Place all the ingredients except for the last 1 cup of coke and 1/2 cup sugar in crock pot. cook on high 6 hours. Remove pork and shred with two forks. Add pork back to pot and add the last cup of coke and 1/2 cup sugar to pot. Cook on low 3 more hours
2. For the rice Place the broth and bouillon in a large pan. Bring to a boil. Add the rice and simmer covered for 20 minutes. Remove from heat and add the cilantro, green onions, and lime juice. Let sit covered for 10 more minutes. Season with salt.
3. Serve the rice with the pork in flour or corn tortillas. Garnish with desired condiments.

One of my favorite restaurants is Costa Vida and their sweet pork is to die for. I have looked everywhere for a similar recipe. Of course Costa Vida won't give out the recipe, but this is close.

Ingredients

1 (3 -5 lb) boneless pork roast
1 cup salsa
1 cup brown sugar, packed

Steps:

Place ingredients in a greased slow cooker. Cover and cook on LOW heat for 8-10 hours.
Shred pork with a fork. Keep lid off after shredding for about 15 minutes so juice will thicken.
Use meat in burritos, tacos, or salads.
If freezing, keep juice and freeze with meat.

This has become a staple in our home. We absolutely LOVE this pork. There is a restaurant chain here in Utah called Costa Vida and this is as close as we have come to replicating the sweet pork they make there for the burritos/salads/etc.

Ingredients

4 -5 lbs pork roast
12 ounces salsa (We usually use Pace Picante Medium(but we have used homemade salsa with great results)
1 1/2 cups brown sugar
1 tablespoon vegetable oil (Just enough to coat the skillet)
kosher salt
fresh ground black pepper

Steps:

Heat the oil in a skillet over high heat--we prefer to use Cast-Iron for searing, so if you have one, use it.
Rub the Salt and Pepper all over the roast.
Sear the Roast in the skillet for 1-2 min per side.
Toss the seared Roast in your crock-pot.
sprinkle the Brown Sugar over the roast and then dump the salsa over the top of that.
Cook on Low for 10-12 hours. You will know when the roast is done, because it will shred easily with a couple of forks.
Shred the pork right there in your crockpot and mix it all up with the drippings and other liquids.
Serve as a filling for tacos/burritos or on top of salads.

(1) 19oz. Red Enchilada Sauce
(1 can) Dr. Pepper or 20oz
(1 tsp.) Salt
(1/4 tsp.) Garlic Salt
(1 1/2 cup) Brown Sugar
(1 Tbsp) Fresh Cilantro

Steps:

Wrap meat in foil. Put in roasting pan and bake at 275 degrees for 5 hours. Pull the meat out and let it cool for 30 minutes then shred. In separate bowl, mix the enchilada sauce, Dr. Pepper, salt, garlic salt, brown sugar and chopped cilantro. Pour over meat and mix.
