1 salmon fillet, 1 1/4 pounds
2 tablespoons butter or margarine, melted
1/4 teaspoon salt
3/4 cup fresh white bread crumbs, 1 slice
1/4 cup grated Parmesan cheese
2 tablespoons thinly sliced green onions
2 teaspoons grated lemon peel
1/4 teaspoon dried thyme leaves

Steps:

  • Heat oven to 375°F. Spray shallow baking pan with cooking spray. Pat salmon dry with paper towel. Place salmon, skin side down, in pan; brush with 1 tablespoon of the butter. Sprinkle with salt.
  • Mix bread crumbs, cheese, onions, lemon peel and thyme in small bowl. Stir in remaining 1 tablespoon butter. Press bread crumb mixture evenly on salmon.
  • Bake uncovered 15 to 25 minutes or until salmon flakes easily with fork. Serve immediately.

This is very quick, very healthy, and very easy. I served this with a quick and easy saute (see: "Quick Sauteed Curry Style Vegetables" in my recipes).

6 -8 ounces salmon fillets
2 tablespoons mediterranean olive oil
1/2 lemon
1/2 teaspoon fresh thyme leave
1/4 teaspoon garlic powder
1/4 cup freshly grated parmesan cheese
salt
black pepper

Steps:

  • Cooks tip: don't worry about the skin before cooking. It helps to keep the fish moist and flavorful, and comes away easily when the fish is cooked.
  • Preheat oven to 425 F./broil.
  • In a small rectangular baking dish, pour oil and the juice from the lemon.
  • Coat both sides of the fish in the oil/juice; season fish with salt, pepper, thyme leaves, and garlic powder; place Parmesan on a plate and press fish side down into the Parmesan (not the skin side) and place fish fish side up (skin side down) in the baking dish. Sprinkle any escaped cheese onto top of the fish.
  • Broil about 4-6 inches from element (top rack) for 10-12 minutes, or until fish flakes easily.

2 (6- to 8-ounce) skin-on salmon fillets, each about 1-inch thick
1/2 teaspoon kosher salt (such as Diamond Crystal), plus more to taste
Freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
Lemon wedges, for serving

Steps:

  • Position one oven rack 6 inches from the broiler heat source then heat the broiler. Season the salmon fillets all over with ½ teaspoon salt and a couple of grinds of pepper and place them on an aluminum foil-lined sheet pan, skin side down.
  • In a small bowl, whisk the oil and mustard until well mixed. Brush the tops and sides of the salmon with this mustard mixture.
  • Broil until the salmon is opaque with a deep brown crust, about 6 to 8 minutes for medium-rare. (The center of the fillets will be dark pink, if you pierce one with a paring knife and take a look.) If your fillets are thinner, reduce cooking time by 1 to 2 minutes. If you prefer more well-done fish, add 1 or 2 minutes to the cooking time.
  • Squeeze a lemon wedge all over the cooked salmon fillets, then serve salmon with more lemon wedges on the side.

3 cups fresh green beans

Steps:

  • Pour dressing over salmon in shallow dish. Refrigerate 20 min. to marinate.
  • Heat broiler. Remove salmon from marinade; discard marinade. Place salmon on rack of broiler pan or in shallow baking pan. Broil, 6 inches from heat, 5 min. or until salmon flakes easily with fork. Meanwhile, steam green beans.

2 pounds salmon, skinned and deboned
2 tablespoons olive oil
1 lemon
½ tablespoon chopped fresh dill, or more to taste
½ tablespoon garlic powder, or more to taste
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Rub salmon down in olive oil. Cut your lemon in half and set 1 half off to the side. Cut the other half into 1/4-inch thick slices. Lay them on a broiler pan and lay the salmon on top of them. You just need enough to cover the bottom of the salmon so it's not touching the pan. Sprinkle with dill, garlic powder, salt, and pepper. Lightly squeeze the remainder of the lemon over the whole salmon; not too much, you don't want your seasoning to run off.
  • Cook in the center of the preheated oven on a low broil until easily flaked with a fork but still juicy, 15 to 20 minutes.

vegetable oil cooking spray
2 cups hot cooked brown rice
4 cups arugula or 4 cups uncooked Baby Spinach

Steps:

  • Sprinkle salmon filets evenly with salt and pepper.
  • Place filets, lemon rind, 1 tbls. lemon juice, 1 tbls. oil, and 1 teaspoons rosemary in a large zip-top freezer bag. Seal and turn to coat. Chill 30 minutes.
  • Remove filets from marinade, discarding marinade. Place filets, skin side down on a rack coated with cooking spray in an aluminum foil lined broiler pan.
  • Broil fish 5 1/2 inches from heat 10 to 12 minutes or until filets flake with a fork.
  • Arrange rice and arugula on a serving platter;top with filets.
  • Whisk together remaining 2 tbls. lemon juice and 1 tbls. oil; drizzle evenly over filets.
