This is from reciperewards.com and is good for a lot of different meats. I decided to put the minimun eight hours for marinading in the prep time, because there is no cooking involved, just the putting together of the ingredients for the marinade.

1 tablespoon fresh parsley, chopped
1 tablespoon fresh cilantro, chopped or 1/2 teaspoon lime zest
1/3 cup lime juice
1/4 cup tomato juice 1/4 teaspoon salt
1/8 teaspoon red pepper sauce
2 garlic cloves, finely chopped
2 teaspoons vegetable oil

Steps:

  • Mix all ingredients in shallow non-metal dish or resealable plastic bag. Add up to 3 pounds chicken, pork or beef, turning to coat with marinade.
  • Cover dish or seal bag and refrigerate, turning meat occasionally, at least 8 hours but no longer than 24 hours.
  • Remove meat from marinade; discard marinade. Grill meat as desired.
  • Yield: 8 servings.

8 -10 very green mangoes, peeled & finely diced
2 tablespoons catsup
1/2 teaspoon mustard (sweet, dark is best)
1/4 teaspoon pepper
2 tablespoons onions, finely chopped
1 teaspoon salt
2 teaspoons Worcestershire sauce

Steps:

  • Mix all the ingredients, refrigerate until chilled.
  • Serve with soda crackers as an appetizer.
  • Garnish the bowl with cilantro or parsley.

1/3 cup lime juice
1/4 cup tomato juice
1 tablespoon fresh cilantro or 1 tablespoon fresh parsley, chopped
2 teaspoons vegetable oil
1/4 teaspoon salt
1/8 teaspoon red pepper sauce
2 garlic cloves, finely chopped

Steps:

  • Using a shallow non-metal dish or reasealable plastic bag add all the ingredients and mix together well.
  • Up to 3 pounds of beef, chicken, or pork can be placed in the marinade and refrigerated for 8 hours but no longer than 24.
  • Cover the dish or seal the plastic bag and turn meat occasionally.
  • Grill meat to desired doneness and discard remaining marinade.

3 tablespoons fresh lime juice
3 tablespoons olive oil, divided
4 tablespoons finely chopped fresh cilantro or 4 tablespoons parsley, divided
4 teaspoons minced garlic, divided
1 1/2 teaspoons kosher salt, divided
1/4 teaspoon sugar
6 (5 ounce) tilapia fillets
3/4 cup long-grain rice
1 cup chopped onion
2 oranges, peeled, seeded, coarsely chopped
1 (28 ounce) can diced tomatoes, un-drained
1 (15 ounce) can black beans or 1 (15 ounce) can pinto beans, drained, rinsed
1 teaspoon dried oregano leaves
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper

Steps:

  • For the tilapia marinade, combine lime juice, 1 tablespoon olive oil, 2 tablespoons cilantro, 1 teaspoon garlic, 1/2 teaspoon salt, and sugar in a shallow dish.
  • Add tilapia and marinate 15 minutes, turning once.
  • To prepare the bean and rice mixture, cook the rice according to package and keep warm while the tilapia is marinating.
  • Preheat oven to 400 degrees. In a large, skillet or saucepan, heat 2 tablespoons olive oil on medium heat. Add remaining garlic and onions; sauté until translucent, about 5 minutes, stirring. Add 2 tablespoons cilantro, oranges, tomatoes, beans, oregano, 1 teaspoon salt, pepper, and cayenne.
  • Cook, uncovered, until hot, 7 to 8 minutes, stirring occasionally.
  • Transfer hot rice to a 9 by 13 inch baking dish. Spoon the bean mixture on top of rice and gently blend. Slightly overlap tilapia fillets on top and scrape marinade over fillets.
  • Bake 16 to 20 minutes.
