My grandmother began making this recipe in the 1950s, and it remains a family favorite today. As simple as it seems, the corn dressing complements the pork beautifully.

- Preheat oven to 325°. Season pork chops with 1/2 teaspoon salt and 1/8 teaspoon pepper. In a large skillet, cook chops in oil over medium heat 2-3 minutes on each side or until chops are lightly browned; drain. , Combine corn, celery, bread crumbs, ketchup, onion, and remaining salt and pepper; place in a greased 11x7-in. baking dish. Top with chops. , Cover and bake 40-45 minutes or until meat is tender.

- In a large skillet, saute onion and green pepper in butter for 3-4 minutes or until tender. Stir in the stuffing mix, corn, pimientos, salt, cumin and pepper. , Cut a pocket in each chop by slicing almost to the bone. Stuff each chop with the mixture. Secure with toothpicks if necessary. , Place in an 11x7-in. baking dish coated with cooking spray. Bake, uncovered, at 375° for 35-40 minutes or until thermometer in the meat reads 160°. - Preheat the broiler. Whisk the buttermilk, mayonnaise, parsley, vinegar, garlic, sugar, 1/4 teaspoon salt, and pepper to taste in a medium bowl. Prick the pork chops all over with a fork. Set on a rimmed baking sheet, season with salt and pepper and drizzle with half of the buttermilk dressing, turning to coat. Let marinate 15 minutes at room temperature.
- Transfer the baking sheet to the broiler and broil until the pork is browned, 4 to 5 minutes per side. Meanwhile, cook the bacon in a skillet over medium heat until crisp, 4 to 5 minutes per side. Remove to paper towels and let cool slightly; roughly chop. Add the corn to the drippings in the skillet and cook, stirring, until browned, about 3 minutes.
- Combine the bacon, corn, coleslaw mix, tomatoes, 1/4 teaspoon salt, and pepper to taste in a large bowl. Toss with the remaining buttermilk dressing. Brush the pork chops with any juices from the baking sheet; serve with the slaw.

PORK CHOPS IN CORN FLAKE CRUMBS
This is an exceptionally easy recipe which is tastes great. You can buy a box of Kellogg's Seasoned Cornflake Crumbs so you don't have to crush them. The box will last a long time. It's usually by the stovetop stuffing or bread. The amount of margarine is approximate - you may need to melt a little more so I would make sure that you have about 1 1/2 sticks on hand just to be on the safe side. If using a tub of margarine 6 tablespoons is a little more than 1/3 cup.

- Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Season the pork with salt and pepper and add to the skillet. Cook until browned and just cooked through, about 3 minutes per side. Remove to a plate and loosely cover with foil to keep warm.
- Wipe out the skillet and heat 1 more tablespoon olive oil over medium-high heat. Add the corn, red onion and 1/2 teaspoon salt. Cook, without stirring, until the corn starts browning, about 3 minutes. Stir and continue cooking until charred and tender, about 2 more minutes. Add the garlic and red pepper flakes and cook until softened, about 30 seconds. Stir in 2 tablespoons vinegar and the honey; remove from the heat.
- Combine the arugula and the remaining 2 tablespoons olive oil and 1 tablespoon vinegar in a large bowl. Season with salt and pepper and toss. Divide the pork and arugula among plates. Stir the basil into the corn mixture and spoon over the pork.
MOM'S CORNY PORK CHOPS

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat olive oil in a large skillet over medium heat, and stir in the garlic. Season chops with salt and black pepper. Pan fry until browned on both sides, about 5 minutes per side. Place the chops into the prepared baking dish, and scatter the onions over the chops.
- Pour water into the skillet, and bring to a boil over medium heat. Scrape up and dissolve all the juices and browned flavor bits from the skillet into the water. Pour the mixture over the pork chops. Spread creamed corn evenly over the pork chops.

SOUTHERN FRIED PORK CHOPS RECIPE
Here's a really quick and simple recipe for some delicious southern fried comfort food. Next to fried chicken, these Southern Fried Pork Chops are a long time family favorite. It really is the "other white meat" as the Pork Council tells us.

- Begin by making the breader.
- In a small mixing bowl, add the Flour, Corn Starch, Garlic Powder, Salt, Black Pepper and Paprika. Stir all ingredients well. Set aside.
- Prepare the egg wash next.
- Break one egg into a small low sided dish.
- Add the buttermilk. Use a fork and stir mixture well.
- Setup your dredge station for convenience.
- One at a time, dip a pork chop in the flour and coat both sides.
- Dip the chop into the egg mixture, coat both sides well.
- Lift and let any excess drip off.
- Place the chop back into the flour mixture and coat both sides and edges.
- Place about 1/2 inch of cooking oil in a skillet over medium heat.
- Test the oil before adding the chops to fry.
- Gently lower the chops into the hot cooking oil, one at a time.
- Watch the bottoms of the chop and when they start to brown, flip the pork chops over. Don't overcrowd the skillet.
- Let the chops fry for about 6-8 minutes or until done but not over cooked.
- Remove the cooked chops from the skillet, place on a paper towel lined plate and let drain.
- Serve warm and Enjoy.
CORN STUFFED PORK CHOPS
DH and I love pork chops-even better than steak--LOL! This is a simple, homey old standby. I have made this at different oven temperatures to fit in with the rest of my oven meal. Love oven meals. At 350 degrees I bake for 1 hour, 325 degrees about 75 minutes, and at 400 degrees about 45 minutes.

- Season pork chops with sage, salt, and pepper on all sides. Melt half the butter in a frying pan over medium heat. Brown pork chops on both sides. Pour in 1/2 cup of stock in the pan, cover, and let simmer for 7 minutes until pork chops are cooked through, flipping halfway through. Remove from pan, and transfer to a tray. Set aside.
- Meanwhile, in a small sauté pan over medium heat, melt half of the remaining butter. Sauté corn until heated through. Stir in orange zest and pimiento. Season with salt and ground black pepper. Remove from heat, and divide equally among 4 plates.
- Make gravy by melting remaining butter in the same pan as the corn. Stir in rosemary and mustard. Sprinkle in flour, and cook, stirring. Whisk in remaining stock, and cook until thickened.
