This is an exceptionally easy recipe which is tastes great. You can buy a box of Kellogg's Seasoned Cornflake Crumbs so you don't have to crush them. The box will last a long time. It's usually by the stovetop stuffing or bread. The amount of margarine is approximate - you may need to melt a little more so I would make sure that you have about 1 1/2 sticks on hand just to be on the safe side. If using a tub of margarine 6 tablespoons is a little more than 1/3 cup.

Steps:

  • Preheat oven to 350 degrees.
  • Cover baking sheet with foil and spray with non-stick cooking spray (or lightly coat with cooking oil).
  • Dip pork chops in melted margarine.
  • Coat generously with corn flake crumbs.
  • Place in a single layer on the baking sheet.
  • Drizzle with remaining melted butter.
  • Bake for about 1 hour. You don't have to turn these over.

1/4 cup extra-virgin olive oil
4 bone-in pork chops (1/2 to 3/4 inch thick; about 1 3/4 pounds)
Kosher salt and freshly ground pepper
5 ears of corn, kernels removed (or 3 cups thawed frozen corn)
1 red onion, thinly sliced
3 cloves garlic, thinly sliced
1/4 to 1/2 teaspoon red pepper flakes
3 tablespoons white balsamic or white wine vinegar
2 tablespoons honey
1 5-ounce container baby arugula (about 8 cups)
1 cup torn fresh basil

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Season the pork with salt and pepper and add to the skillet. Cook until browned and just cooked through, about 3 minutes per side. Remove to a plate and loosely cover with foil to keep warm.
  • Wipe out the skillet and heat 1 more tablespoon olive oil over medium-high heat. Add the corn, red onion and 1/2 teaspoon salt. Cook, without stirring, until the corn starts browning, about 3 minutes. Stir and continue cooking until charred and tender, about 2 more minutes. Add the garlic and red pepper flakes and cook until softened, about 30 seconds. Stir in 2 tablespoons vinegar and the honey; remove from the heat.
  • Combine the arugula and the remaining 2 tablespoons olive oil and 1 tablespoon vinegar in a large bowl. Season with salt and pepper and toss. Divide the pork and arugula among plates. Stir the basil into the corn mixture and spoon over the pork.

3 tablespoons olive oil
3 cloves garlic, minced
4 (8 ounce) pork chops
salt and ground black pepper to taste
¼ cup minced onion
½ cup water
1 (15 ounce) can cream-style corn

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat olive oil in a large skillet over medium heat, and stir in the garlic. Season chops with salt and black pepper. Pan fry until browned on both sides, about 5 minutes per side. Place the chops into the prepared baking dish, and scatter the onions over the chops.
  • Pour water into the skillet, and bring to a boil over medium heat. Scrape up and dissolve all the juices and browned flavor bits from the skillet into the water. Pour the mixture over the pork chops. Spread creamed corn evenly over the pork chops.
  • Bake the pork chops in the preheated oven until the pork is tender and no longer pink in the middle, about 45 minutes. An instant-read meat thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

4 boneless pork chops
1 cup flour
1-1/2 tbsp paprika
1 tsp fresh ground pepper
1 tsp salt
1-1/2 tsp cayenne
3 eggs
1 tbsp hot sauce
canola oil for frying

Steps:

  • Mix flour, paprika, pepper, salt, and cayenne together in a shallow plate.
  • Beat eggs and hot sauce together in a small bowl, transfer to a shallow plate.
  • Lightly cover a pork chop in plastic wrap and bash it with the flat side of a meat hammer (from the middle outward) until it is half the thickness it was when you began.
  • Repeat with other pork chops.
  • Add enough oil in a heavy high sided pan (like a Dutch oven) to reach half way up the pork chop.
  • Dredge each pork chop in flour, egg, then flour again and place on a rack. Allow to dry for about 5 minutes while your oil is heating.
  • Pre-heat oil until it reaches 360 F.
  • Carefully slip one pork chop into the oil and set a timer for 5 minutes. Ideally, you want the temperature to stay between 360-375 F so keep a close eye on it.
  • When the timer beeps, carefully flip the pork chop over and fry for another 5 minutes. Remove and place on a paper towel covered plate.
  • Repeat with the rest of the pork chops, adjusting the temperature as needed.
  • Enjoy with more hot sauce.

DH and I love pork chops-even better than steak--LOL! This is a simple, homey old standby. I have made this at different oven temperatures to fit in with the rest of my oven meal. Love oven meals. At 350 degrees I bake for 1 hour, 325 degrees about 75 minutes, and at 400 degrees about 45 minutes.
