MAMALIGA CU BRANZA (CORNMEAL MUSH WITH CHEESE)

Mamaliga Cu Branza (Cornmeal Mush With Cheese) image

Mamaliga is a traditional Romanian Recipe. When one thinks of mush, it is usually unappealing. If you are familiar with and like Polenta, here is the Romanian version. We call it Mamaliga. When I was a child, my mother would serve Mamaliga, on its own, with fish, or other meats, instead of bread. It is equally good the next day, because it can be cut into pieces, and dipped into a tocana (stew) or ciorba de fasole (bean soup). The next day, Mamaliga may be served for breakfast, fried with bacon, or sausages.

CORNMEAL PUDDING WITH CHEESE

Cornmeal Pudding with Cheese image

_Elarji_ (Adapted from The Georgian Feast) This very cheesy cornmeal pudding, made here with grits, is a perfect accompaniment to [Georgian Pork Stew](/recipes/recipe_views/views/103831). The surprise is that ordinary supermarket mozzarella works better than fresh as a substitute for the Georgian sulguni cheese for which this recipe was designed.

Time 30m

Yield Makes 4 to 6 (side dish) servings

Number Of Ingredients 4

3 cups water
3/4 teaspoon salt
3/4 cup old-fashioned grits (white hominy)
3/4 lb mozzarella, cut into 1/2-inch cubes

Steps:

  • Bring water and salt to a boil in a heavy medium saucepan. Add grits gradually, stirring, and return to boil. Simmer over low heat, stirring, until thick and porridgelike and grains are tender, about 18 minutes.
  • Increase heat to moderate and add mozzarella a little at a time, stirring, until melted into grits. (Mixture will be stringy but pliable.) Serve piping hot.
