SWEET CORNBREAD
These mini honey cornbread loaves are an absolute delight, heaven with every bite.

Steps:
- Pre-heat oven to 425 f/ 220c
- Grease a mini loaf pan.
- Mix dry ingredients in a large bowl and form a well into the middle of the mixture.
- Mix egg, milk, melted butter, oil, and honey in a large mixing bowl. Pour into the well of dry ingredients; mix well.
- Divide batter into the pan, filling the sections ¾ of the way (This makes 12 - 15 loaves).
- Bake for 12-15 minutes, or until golden brown.

- In a large bowl, dissolve yeast in warm water. Add salt, sugar and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into 12-in.-long loaves., Place seam side down on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. , Preheat oven to 450°. Sprinkle loaves with cornmeal. With a sharp knife, make four shallow slashes across the top of each loaf. Bake 15-20 minutes or until golden brown. Cool on a wire rack.

CORNMEAL HARVEST LOAVES

Steps:
- In bowl of a standing electric mixer (or a large bowl if kneading by hand) stir together lukewarm water, sugar, yeast, and 1 cup cornmeal and let stand until foamy about 5 minutes. In another bowl stir together flour and salt and gradually stir enough flour mixture into cornmeal mixture to form a soft dough. With dough hook knead dough, adding any remaining flour mixture if dough is too sticky, 5 minutes, or until smooth and elastic. (Alternatively, dough may be kneaded on a floured surface with floured hands until smooth and elastic, 10 to 15 minutes.)
- Put dough in an oiled deep bowl, turning to coat with oil. Cover bowl loosely and let dough rise in a warm place 2 hours, or until doubled in bulk. (Alternatively, dough may be allowed to rise, covered, in refrigerator overnight.)
- Punch down dough and divide into 4 pieces. Roll each piece between hands to form a 14-inch loaf and put 2 loaves on each of 2 large baking sheets. With a knife or kitchen scissors make eight to ten 2-inch-long diagonal cuts down length of each loaf and pull open to make decorative holes (exaggerate openings as they will become smaller during rising and baking).
- Cover loves loosely and let rise in a warm place until doubled in bulk, about 45 minutes.
- Preheat oven to 400°F.
- Sprinkle loaves with remaining 2 tablespoons cornmeal and bake in upper and lower thirds of oven 25 minutes, or until golden, switching baking sheets between upper and lower oven racks halfway through baking. Cool loaves on racks.
CORNBREAD LOAF
I made a few minor changes to the original recipe printed in Bon Appetit (December 1992). Original recipe was printed as a request for corn bread served in Le Bus resturant.

- Preheat oven to 350-degrees F.
- Spray 9 x 5-inch loaf pan with cooking spray and dust with corn meal.
- Mix first six ingredients (flour- salt) in large bowl.
- Mix eggs, melted margarine/oil, milk in small bowl.
- Add egg mixture and corn to dry ingredients.
- Stir until combined.
- Pour batter into pan.
- Bake for 1 hour.
ARIZONA CORNBREAD

- In a large bowl, combine the first six ingredients; set aside. In a saucepan, heat the sour cream, oil and onions to 120°-130°. Add to cornmeal mixture; beat until blended. Beat in eggs, cheese, corn and jalapenos. Stir in enough flour to form a stiff dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into 2 loaves. Grease two 9x5-in. loaf pans; dust with additional cornmeal. Place loaves seam side down in prepared pans. Cover and let rise until doubled, about 30 minutes. , Brush butter over loaves. Bake at 375° until golden brown, 30-35 minutes; cover loosely with foil if top browns too quickly. Remove from pans to wire racks to cool.
