- Heat oven to 400 degrees. In a medium bowl, whisk together flour, cornmeal, baking powder, baking soda, salt, and sugar. Using your fingers or a pastry cutter, cut butter into flour mixture. Using a wooden spoon, stir in 3/4 cup buttermilk until the mixture holds together.
- Line a baking sheet with parchment paper. On a lightly floured work surface, roll out dough to a 1-inch thickness. Using a 2-inch-round cookie cutter or a drinking glass, cut out eight rounds, and place on prepared parchment; discard scraps of dough. Brush tops of biscuits with remaining tablespoon buttermilk. Bake until golden and puffy, about 12 minutes. If desired, spread with butter or honey. Serve warm.

Stir in 2/3 cup half-and-half and 1 tablespoon honey; let sit 5 minutes. Pat into a 1/2-inch-thick square on a floured surface and cut into 8 pieces; shape into rounds and brush with half-and-half. Bake at 425 degrees F on a parchment-lined baking sheet until golden, 12 to 15 minutes.

- Set a rack in the center of the oven and preheat oven to 450 degrees F. Line a baking sheet with two layers of parchment paper.
- In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, sugar, and salt. Rub 2 tablespoons of the butter into the flour mixture with your fingertips, until it is completely incorporated. Work the remaining butter into the flour until it's in even, pea-sizes pieces. Gently stir in the buttermilk to make a loose dough.
- Turn the dough out onto a lightly floured work surface. Pat the dough into a 1/2-inch-thick rectangle. Fold the dough in thirds like a business letter. Pat the dough into a 5 by 8-inch rectangle about 3/4 inch thick. Use a 2- to 3-inch round cutter to make 6 biscuits, and put biscuits on the prepared baking sheet. Press together the scraps of dough, cut 2 more biscuits, and place them on the baking sheet.
- Bake until the tops are lightly browned, about 15 minutes. Cool slightly on a rack before serving.
CORNMEAL BISCUIT SAUSAGE DRESSING

- For the cornmeal biscuits: Preheat the oven to 450 degrees F. Heat a 12-inch cast-iron skillet over low heat.
- Whisk together the cornmeal, flour, thyme, sugar and salt in a large bowl. Pour in 5 tablespoons butter and the buttermilk and stir until just combined. Pour the remaining tablespoon butter into the hot skillet. Turn off the heat and use a teaspoon scoop or a couple of spoons to form the dough into tiny drop biscuits into the skillet-they will be touching. Bake until golden, 12 to 15 minutes.
- For the dressing: Remove the skillet from the oven and transfer the biscuits to a plate. Wipe out the skillet and return it to the stove over medium-high heat. Melt 1 tablespoon butter in the skillet, then add the sausage and break it up with the back of a wooden spoon. Cook until browned and crisp, about 5 minutes. Transfer the sausage to a bowl with a slotted spoon, leaving any remaining fat in the skillet. Add the remaining tablespoon butter and let melt, then add the onion and celery to the skillet and cook until both have softened and started to brown, 3 to 4 minutes. Return the sausage to the skillet and stir in the salt and pepper. Pour about 1 cup chicken broth into the skillet and scrape up any browned bits at the bottom. Add the mini biscuits and the saltines. Pour the remaining 2 1/2 to 3 cups broth into the skillet a little at a time, stirring to coat and distribute everything evenly; it should be moist, but not wet. Sprinkle the thyme leaves over the top and transfer the skillet to the oven. Bake until the top is golden brown and the liquid has evaporated, 15 to 20 minutes.
- Let rest for 5 minutes before serving. Serve hot or at room temperature.

- Preheat oven to 425F.
- Mix dry ingredients together.
- Cut in butter, then add milk to make a soft dough. Let sit 10 minutes.
- Meanwhile, turn 8 soufle bowls upside down and wrap foil onto the outside. Grease well.
- Divide dough into 8 equal pieces and shape each over a bowl.
- Brush with egg and sprinkle more cornmeal over, if desired.
- Bake for 20-30 minutes. Let cool for a few minutes to let the bowls harden. Lift bowls off with foil, turn right-side-up, and fill with supper.

- Preheat oven to 450 degrees. Cover a baking sheet with foil.
- Combine flour, cornmeal, baking powder, salt, cayenne pepper and sugar in a food processor and process to blend. Add the butter and pulse until the mixture is uniformly crumbly. Transfer to a mixing bowl.
- Mix the egg and buttermilk together. Using a fork or your fingertips, lightly stir them into the dry ingredients so the mixture can be gathered together to form a ball of soft dough. Turn out onto a lightly floured board.
- Pat the dough until it is uniformly one-half-inch thick or a shade thicker. Cut into one-and-one-half-inch rounds. You can re-form the scraps and cut those. Place the dough rounds on the baking sheet and bake until medium brown on the bottom and just beginning to brown on top, about 15 minutes. Remove from the oven and serve, or allow to cool, then warm before serving.

- In a large bowl, combine the first six ingredients. Cut in shortening until mixture resembles coarse crumbs. In a small bowl, combine sour cream and egg; add to dry ingredients just until moistened. Turn onto a lightly floured surface; knead 8-10 times., Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a greased baking sheet. - Preheat the oven to 450 degrees F.
- Invert a 6-cup muffin tin and spray the underside with vegetable oil cooking spray.
- Stir together the biscuit mix, milk and cayenne in a medium mixing bowl.
- Shape into a ball.
- Turn out onto floured surface and knead 2 to 4 times.
- Divide the ball into 6 pieces.
- Roll each piece into a 6-inch circle.
- Place 1 dough circle over each muffin cup.
- Press around the cup to form a bowl shape.
- Bake for 12 to 15 minutes, until lightly browned.
- Let cool slightly. Remove the biscuit bowls and reserve.

- In large bowl, whisk together the all purpose flour, cornmeal, baking powder, sugar, salt and cayenne pepper. Add the cubed, cold butter. Using pastry blender, cut in butter until crumbly, with about pea-sized pieces of butter. Add the green onion and shredded cheese and stir to coat with flour. Pour about half of the milk into the bowl and stir in. Begin adding the remaining milk, adding it a bit at a time and stirring between additions, adding only as much milk as is needed until the dough comes together in a moist, but not sticky dough. There should be any dry flour visible in the bowl, especially on the bottom. You may not need all the milk (or you may need a splash more). Just use what you need.
- Turn the dough out onto floured surface and with lightly floured hands, knead gently a couple of time, then pat into a round about 1-inch thick.
- Line a baking sheet with parchment paper and sprinkle with a little cornmeal. Transfer the round of dough onto the parchment. Using a sharp knife, cut the round into 8 equal-sized wedges, then use a spatula to move the wedges apart, so there is some space between each wedge. Brush the top of the biscuits with buttermilk or milk and sprinkle with a bit of coarse salt, if using. Bake for 18 to 20 minutes or until golden.
