SALLY'S IRISH SODA BREAD

Sally was an old Irish neighbor who promised me that this recipe was so easy that even "non-Irish" people like me could make it. She was right! Now I can also celebrate St. Pat's Day with some yummy soda bread!

Number Of Ingredients 9

2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup milk
1 teaspoon vinegar
1 egg, slightly beaten
1/2-1 cup raisins (soak in hot water and squeeze)
1/4 cup butter (room temperature)

Steps:

  • Mix flour, baking powder, baking soda, and sugar.
  • Cut in butter until consistency of cornmeal.
  • Add raisins to mix.
  • Add vinegar to milk to make sour milk.
  • Mix egg into sour milk.
  • Pour milk mixture into flour mixture just until flour is wet.
  • Do not overmix!
  • Grease a cast iron skillet or loaf pan with Pam or butter.
  • Pour mixture into pan.
  • Take a knife and slash an X down the middle of batter.
  • Bake at 350-375 degrees for 40-45 minutes or until toothpick comes out clean.

Balkan-Style Savory Cornbread image

Savory, salty, and tangy, this cornbread is great for breakfast, lunch, or a snack. The recipe is a mashup of Bulgarian banitsa and Bosnian razljevak. Serve warm, topped with plain yogurt or eat it by its lonesome self. If you love sweet cornbread, this probably isn't your cup of tea.

1 tablespoon butter
2 tablespoons cornmeal for dusting
1 cup all-purpose flour
½ cup semolina flour
½ cup cornmeal
2 teaspoons baking powder
1 teaspoon salt
4 cups chopped fresh spinach
3 cups buttermilk
1 cup brine-packed feta cheese, crumbled
4 eggs, lightly beaten
⅔ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter 9x13-inch baking pan; sprinkle 2 tablespoons cornmeal on bottom.
  • Sift all-purpose flour, semolina flour, 1/2 cup cornmeal, baking powder, and salt together in a bowl. Whisk spinach, buttermilk, feta cheese, eggs, and vegetable oil together in a separate large bowl. Stir flour mixture into spinach mixture just until pourable batter forms. Pour batter into prepared baking pan.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.

This is dangerously delicious. I put it on Lemon Sugar Cookies, but I'm not sure what this wouldn't go well with (ha ha). Recipe courtesy of Sally's Baking Addiction. This makes enough for 12-16 cupcakes or a 9x13 quarter sheet cake.

Number Of Ingredients 6

1 cup unsalted butter, softened to room temperature
4 1/2 cups confectioners' sugar
2 1/2 tablespoons fresh lemon juice
2 tablespoons heavy cream
2 teaspoons lemon zest
1 pinch salt, to taste

Steps:

  • With a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on medium speed until creamy--about 2 minutes.
  • Add confectioners' sugar, lemon juice, heavy cream, and zest with the mixer running on low.
  • Increase to high speed and beat for 3 minutes.
  • Taste and add salt as needed.
  • Add up to 1/2 cup more confectioners' sugar if frosting is too thin or another tablespoon of cream if frosting is too thick.
  • Cover tightly and store for up to 1 week in the refrigerator or up to 3 months in the freezer.
  • After freezing or refrigerating, thaw in the refrigerator, bring to room temperature then beat the frosting for a few seconds so it's creamy again. You may need to add a little milk or heavy cream if it's too stiff.
