HERB-BUTTERED CORN ON THE COB
Steps:
- In a food processor, combine the basil, parsley, garlic, lemon zest, a big pinch of salt and a few grinds of pepper. Pulse until everything is thoroughly chopped and combined. Add the butter and pulse until thoroughly mixed. Scrape the butter mixture out of the food processor onto a piece of plastic wrap or parchment paper and form into a log. Store in the refrigerator until ready to use.
- Preheat a grill or a grill pan for medium-high heat. Lightly oil the grill grates. Grill the corn, rotating it as it cooks, until lightly charred in places, 3 to 4 minutes per side.
- Remove the corn from the grill, smear each ear with a generous amount of the herb butter and serve.

- Place corn in a large soup/stock pot and fill it with enough water to cover the corn.
- Bring water to a boil and add 2 Tbsp of sugar (1 Tbsp for a smaller pot and 2 for a huge one).
- Cover, reduce heat to medium and boil 15 minutes. When time is up, sample few kernels of corn before turning off. "Older" corn may take a few more minutes to cook. Kernels should be crisp-tender.
- Remove from heat and drain. Butter and pepper your corn if you like. Best to eat it fresh, or wrap it in foil and save it for later.

- Heat an outdoor grill or a stovetop grill to high. Peel back husks of corn, but do not remove. Remove all silk from corn and coat corn with cooking spray. Sprinkle corn with salt and smooth husks back into place. Rub each husk with water and place directly on grill. Grill, turning occasionally, until kernels soften and husks blacken, 10 to 12 minutes. Pull back husks and serve corn with 1 teaspoon flavored butter.
- For each flavored butter:
- Using a spoon, mix butter with respective ingredients. Roll each into a log shape and wrap in plastic wrap or wax paper. Refrigerate until firm, 2 to 3 hours, then soften to room temperature before serving.

- Preheat oven to 350 degrees F. Place corn, in its husks, directly on the oven rack. Roast until tender and cooked through, about 40-45 minutes. Peel down the husks. Rub each ear of corn with 1 tablespoon butter. Serve immediately, sprinkled with chili powder, cotija, cilantro and lime juice.
ROASTED CORN ON THE COB WITH CILANTRO LIME BUTTER

- Preheat oven to 400 degrees F.
- Coat each ear of corn in 2 tablespoons of the cilantro lime butter and wrap individually in foil. Roast until hot and steaming, about 25 minutes. Serve with extra butter on the side.
- Put the butter in a mixing bowl and, using a rubber spatula, mix in the cilantro, lime zest, lime juice, salt and cayenne. Use immediately or refrigerate.

- Preheat Barbeque.
- Pull off the husks and silks and boil the corn cobs in a large saucepan of salted water until tender.
- Drain the corn cobs and leave to cool.
- Melt butter in a saucepan and add the olive oil, crushed garlic, salt, pepper and stir to blend.
- Pour the mixture into a shallow dish.
- In another shallow dish, blend the breadcrumbs and parsley.
- Roll the corn cobs in the melted butter mixture and then into the breadcrumb mixture until they are well coated.
- Cook the corn cobs on a hot barbeque for about 10 minutes, turning frequently, until the breadcrumbs are golden brown.
