SWEET CORN MAC 'N' CHEESE

- Preheat the oven to 350 degrees F. Move one rack to the top of the oven.
- In a saucepan, simmer the corn with the milk and onion powder, if using, for 5 minutes.
- Combine the cornstarch with about 2 tablespoons water and stir well. Add the cornstarch to the corn mixture and whisk over medium heat for 3 minutes. Season the corn cream with a little nutmeg, salt, pepper and hot sauce if using. Remove from the heat, cover and keep warm.
- Boil the elbow macaroni in full rolling salted water for 4 to 6 minutes. Drain the macaroni well and add to the corn cream. Add the Cheddar, half of the mozzarella and the egg. Stir well. Pour into a 4-cup casserole dish or 12-inch cast-iron skillet and top with the remaining mozzarella.
- In a zip-top plastic bag, lightly crush the croutons using a small mallet or rolling pin. Stir together the oil and crushed croutons and spread over the top of the macaroni and corn mixture. Cook on the top rack until golden, 15 to 20 minutes. Serve with hot sauce.

- 1. Place all the ingredients in a 4 quart crock pot and stir to combine. Turn the crock pot on high and cook for 45 minutes, stir the mixture, cover and cook on high for 30 more minutes. Stir well, then reduce the temp. to low and cook for 1 1/2 hours, or until macaroni is tender.

- Preheat the oven to 350 degrees and spray an 8x8 baking dish with cooking spray.
- Bring a large pot of salted water to a boil. Add in the macaroni noodles and cook for 7-8 minutes, or until al dente. Drain pasta water and return the pot to medium high heat.
- Add the creamed corn, milk and Velveeta cubes to the pan, stirring until melted.
- Add in the mozzarella cheese, corn, garlic powder, dried oregano, salt and pepper. Stir until combined.
- Transfer the macaroni and cheese to the prepared baking dish. Bake for 25 minutes.
- When there is about 5 minutes left remaining of bake time, prepare your topping. Line a small baking sheet with foil. Combine Panko, garlic powder, smoked paprika and chili powder and spread into an even layer on the sheet. Bake for 5 minutes or until toasted.
- Remove the casserole from the oven and sprinkle the topping over it. Let rest 5 minutes before serving.

CASSEROLE SUPREME (HAMBURGER MACARONI CASSEROLE)

- Place the ground beef in a heavy skillet to brown, breaking it up with a spatula. If the meat is on the lean side, add a tablespoon or two of olive oil to the pan.
- Once the meat is about halfway done (some will be browned and some still pink or red), add the onion and garlic.
- Season liberally with salt and pepper.
- Cook until onions and garlic are softened and meat is completely cooked.
- Add the tomatoes and softened cream cheese
- Stir around so the cream cheese melts evenly into the tomatoes.
- Let simmer for about ten minutes or so.
- With the heat on low, stir in the sour cream.
- Taste and adjust the seasonings.
- Fold the sauce into your freshly drained pasta.
- Serve as-is or spoon into individual ramekins or a big old casserole.
- Bake at 350F until the pasta on top has a bit of crunch to it and the casserole is bubbling all around the sides.
- Let sit for ten minutes before serving.
- Enjoy!

- Preheat oven to 350°F with rack about 8 inches from heat source. Place panko in a small bowl. Melt 2 tablespoons of the butter in a large saucepan over medium. Using a rubber spatula, scrape melted butter over panko. Add ¼ cup of the scallions and ⅛ teaspoon of the salt; toss well, and set aside.
- Add remaining 4 tablespoons butter to saucepan; melt over medium. Add flour; cook, whisking constantly, 1 minute. Gradually whisk in warm milk until combined. Bring to a simmer over medium. Reduce heat to medium-low; cook, whisking often, until mixture thickens, about 4 minutes. Remove from heat. Add Cheddar and Gruyère; stir until cheese melts. Stir in pasta, corn, bacon, mustard, garlic, cayenne, and remaining ½ cup scallions and ¼ teaspoon salt.
- Spoon pasta mixture into a 2-quart broiler-safe baking dish. Top evenly with panko mixture. Bake in preheated oven until bubbly, about 20 minutes. Remove from oven.
