2 cups small curd cream-style cottage cheese
2 large eggs
1-1/4 cups all-purpose flour
1 teaspoon salt
3 tablespoons butter, melted, divided
1 small onion, chopped
Sour cream

Steps:

  • In a large bowl, combine cottage cheese and eggs. Stir in the flour, salt and 1 tablespoon butter. , In a Dutch oven, bring 3 qts. of water to a boil. Reduce heat. Drop batter by tablespoonfuls into simmering water, stirring gently to prevent sticking; cook pierogi in batches for 4-6 minutes or until slightly firm. Remove with a slotted spoon to paper towels to drain; cool slightly. , In a large skillet, saute onion and pierogi in remaining butter until lightly browned. Serve with sour cream.

9 uncooked lasagna noodles
4 large baking potatoes, peeled and cut into 1-inch chunks
½ cup milk
1 tablespoon butter
1 teaspoon onion salt, or to taste
salt and black pepper to taste
1 cup shredded Cheddar cheese
1 pound bacon
1 onion, chopped
2 cups dry cottage cheese
1 egg
1 teaspoon onion salt, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Once the water is boiling, stir in the lasagna noodles, about 3 or 4 at a time, and return to a boil. Cook the noodles uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 10 minutes per batch. Drain well in a colander set in the sink, and lay the cooked noodles flat on waxed paper or aluminum foil while you finish cooking the rest of the noodles.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x11-inch baking dish.
  • Place the potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Using a potato masher, mash the potatoes with the milk and butter until smooth. Stir in 1 teaspoon of onion salt, and season with salt and pepper. Set the mashed potatoes aside to cool. When cooled, mix with shredded Cheddar cheese.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and almost crisp, about 10 minutes. Place the onion into the hot bacon fat, and cook and stir until the onion is translucent, about 8 minutes. Break the bacon into pieces with a spoon or spatula, and set the bacon and onion aside. Mix the cottage cheese, egg, and 1 teaspoon of onion salt in a bowl.
  • To make the casserole, place 3 lasagna noodles into the prepared baking dish, and spread with the cottage cheese mixture in an even layer. Top the cottage cheese with 3 more lasagna noodles, then spread potato-cheese mixture in a layer. Top the mashed potato layer with 3 more noodles, then spread the bacon and onion into an even layer on top of the casserole.
  • Cover the casserole with aluminum foil, and bake in the preheated oven until the cheese is melted and the casserole is hot, about 30 minutes. Allow to set for about 10 minutes before serving.

One of my employees made this for a Christmas party a few years back. I loved it and so did everyone else. I got the recipe from her and added some things over the years. No complaints were heard : )

1 lb penne pasta
2 (4 ounce) cans mushrooms (pieces and stems works fine)
1 (10 1/2 ounce) can cream of mushroom soup
1 (27 ounce) can sauerkraut (the package kind in the cooler section works well too)
5 tablespoons butter
1 medium onion
1 (16 ounce) package Polish sausage (I like the turkey kind)

Steps:

  • Boil water for pasta.
  • While water is boiling add 3 Tablespoons of Butter to a medium sized skillet.
  • Dice up one medium sized onion and add to skillet.
  • Saute until clear. Add mushrooms after being drained.
  • Add Polish Sausage after being sliced.
  • Sautee for about 5-7 minutes to heat through.
  • Cook pasta according to package.
  • Drain noodles.
  • Add saurkraut to hot pot and turn heat to medium. Add 2 Tablespoons of Butter while noodles drain.
  • Combine the saurkraut and sausage mixture into to pot. Mix around.
  • Add noodles and combine thoroughly. Put heat to medium low for 5-7 minutes.
  • Enjoy!

A great recipe from the "Barnwell Cookbook." I make this often, and it can be made ahead, and then just put in the fridge until you are ready to cook it. I often make it the night before, and let it sit in the fridge. A real keeper, and Canadian Favourite!

15 lasagna noodles
2 cups cottage cheese
1 egg
1/4 teaspoon onion salt
1 cup grated cheddar cheese
2 cups mashed potatoes
1/4 teaspoon salt
1/4 teaspoon onion salt
1 dash pepper
1 cup butter or 1 cup margarine
1 cup chopped onion

Steps:

  • Cook noodles as directed on package.
  • Line the bottom of a 9x13-inch pan with the noodles.
  • In medium sized bowl mix cottage cheese, egg and 1/2 tsp of onion salt together.
  • Spread of noodles.
  • cover with another layer of noodles.
  • Now mix cheddar cheese with potato, salt, 1/2 tsp of onion salt and pepper.
  • Spread this over noodles.
  • Cover with yet another layer of noodles.
  • Melt butter in frying pan and sauté onion slowly until clear and soft.
  • Pour over noodles and cover.
  • Bake 30 minutes in 350° oven.
  • Let stand 10 minutes before cutting.
  • Serve with sour cream and grated cheddar.
  • Yummy.

This is my Fiance Joey's grandma's famous recipe.... YUMMY.... I am not a sauerkraut or mushroom lover at all, but when all mixed together can't even taste it...

1 lb spiral shaped pasta
1/2 cup butter
1 (8 ounce) can mushrooms (need one cup)
1 (8 ounce) can sauerkraut (need one cup)
1 small onion
Lawry's Seasoned Salt, garlic salt, onion salt, pepper and packet of brown gravy powder mix

Steps:

  • in oven proof casserole dish, put one pound of HALF COOKED spiral noodles (water drained out) in it -- (make sure it's large enough).
  • in another saute pan, saute 1 small onion, chopped small, and one stick of butter.
  • Pour butter and onions over pasta in a casserole dish and mix together.
  • then add --
  • canned mushrooms, equal to about 1 cup and about one cup of sauerkraut, then mix together again, so the pasta, onions, mushrooms, sauerkraut are all evenly mixed together --
  • then add the following seasonings.sprikled LIGHTLY.over the pasta mixture --
  • onion salt, garlic salt, lawtry's seasoned salt and pepper and brown gravy mix powder -- once again stir together, until well mixed --
  • put dish covered in oven at 350 degrees for 20-25 minutes --
  • 1 pound of pasta will serve 5-6 servings or approximately 20 side dish servings -- .

  • Preheat oven to 350 F and spray a lasagna pan* with non-stick spray or lightly grease with butter.
  • In a large pot of boiling water, cook the potatoes until fork-tender and ready to mash. Drain and mash the potatoes* and mix with cheddar cheese, 1/2 tsp onion salt and pepper. Set aside.
  • While the potatoes are cooking, cook the lasagna noodles as directed on the package; drain. Place 3 cooked lasagna noodles side by side in the bottom of the lasagna pan.
  • Prepare the cheese mixture in a medium-sized bowl by combining the cottage cheese, egg, and remaining 1/2 tsp onion salt. Cover the bottom layer of noodles with all of the cheese mixture. Top with another 3 lasagna noodles.
