DOUBLE COATED CHICKEN WITH CORN FLAKES
This recipe is from the back of the Kellogg's box . It is different than other baked chicken because it is dipped in batter and then rolled in cornflake crumbs producing an extremely crunchy chicken. I like to add some garlic powder to the batter and some smoked paprika to the flakes for an extra boost in flavor. I also suggest brining the chicken for four hours in 4 cups of water and a handful of kosher salt and a handful of white sugar. This makes your chicken very moist and flavorful and greatly improves the texture.

BAKED CHICKEN THIGHS COATED WITH CORN FLAKE CRUMBS
I like these so much that I make them often. The sriracha scarcely adds any heat at all (mainly flavor), so don't worry about spiciness. For overall crispiness, I usually bake the thighs on a baking rack that's been placed over a foil-lined half-sheet pan. And don't omit the sugar, as it helps the coating adhere to the chicken. By the way, Kellogg's® Corn Flakes® Crumbs are usually sold in supermarkets near the bread crumbs and coating mixes, not in the cereal aisle.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a half-sheet pan with aluminum foil. Place a baking rack on top.
- Place corn flake crumbs in a bowl.
- Mix teriyaki sauce, sriracha sauce, paprika, rice vinegar, and sugar together in a large bowl until sauce has a thick consistency.
- Place chicken thighs in the bowl with the sauce. Tumble thighs together until completely coated. Smear sauce onto any bare spots and under any loose flaps of skin.
- Place 1 thigh into the bowl with the corn flakes. Spoon crumbs on top using a tablespoon. Press crumbs onto the thigh using the back of the spoon, pressing the thigh down into the crumbs to coat the underside. Turn over and repeat pressing. Place onto the baking rack, skin-side up. Repeat with remaining thighs and crumbs, placing largest thighs in the corners of the rack to receive the most heat.
- Bake in the preheated oven for 30 to 40 minutes depending on the size of the thighs. Reduce oven temperature to 325 degrees F (165 degrees C) and continue baking, 15 to 20 minutes. Turn thighs over to help undersides crisp up. Bake until no longer pink at the bone and the juices run clear, 15 to 20 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Let the thighs rest on the baking rack for at least 15 minutes before serving.

GOOD AND SPICY MEATBALLS WITH CORN FLAKES
Found on Kellog's web site and placed on Zaar for safekeeping. Sounds like the basis for a great meal with buttered noodles or rice. An easy sandwich or appetizer for football games too. OAMC adaptable because I am sure this will freeze well. Kelloggs had a 30 minute preparation time which must be inaccurate, so I guess-timated something that seems more reasonable.

10 BEST CORN FLAKES SUBSTITUTES - SUBSTITUTE COOKING
From substitutecooking.com
- Breadcrumbs. Corn flakes are usually used to coat or bind other ingredients, so breadcrumbs are a great replacement for corn flakes. For example, if you need corn flakes to top baked goods and meats for that crispy exterior, you can use breadcrumbs instead to give it that same crunch on top.
- Panko breadcrumbs. Panko breadcrumbs are Japanese breadcrumbs. And they are much crispier than standard breadcrumbs and work exceptionally well for deep frying foods such as chicken.
- Biscuits. Digestive biscuits, when crushed, can also be a great substitute for corn flakes but should be used in sweeter dishes, as they wouldn’t work in more savory dishes.
- Crisps. Potato crisps are salty and crunchy, and when crushed, are a brilliant alternative to corn flakes in savory recipes. They can be used as a crunchy topping for macaroni cheese.
- Instant mashed potato flakes. Instant mashed potatoes have a flaky texture and a salty flavor, making them a good substitute for corn flakes. You can use them as a coating for something or deep-fry them.
- Crackers. Crackers are a great substitute for corn flakes as they have a similar texture. When crushed, they have the same consistency as corn flakes and be used for both savory and sweet recipes.
- Croutons. If you have pre-made croutons, try crushing them in a plastic bag or in a blender. This should give you a similar consistency to corn flakes, as corn flakes often need to be crushed if used in savory recipes such as deep-fried chicken.
- Oats. Oats or granola can be a good substitute for corn flakes if the corn flakes are used whole, for example as a topping. They are also better to be used in sweeter recipes.
- Wheat Thins. Wheat thins are a popular breakfast food in Scandinavia and can have many toppings on them. When broken up, they also have a similar consistency to cornflakes and are quite crunchy when cooked.
- Bran Flakes. Finally, bran flakes are a good substitute for corn flakes in both sweet and savory recipes. They resemble corn flakes almost identically, except they are made of bran, so therefore contain more fiber.

- Replace bread crumbs or fried onions. Many casseroles call for bread crumbs or fried onions on top. Even simple mac & cheese tastes better with a crunchy topping.
- Zucchini fritters. Kelloggs.com has over a hundred recipes that use corn flakes - everything from baked fruit crisp to stuffed chicken breast to these delicious-looking zucchini fritters.
- Make a crunchy coating for chicken, fish, or shrimp. Whisk together one cup of milk and one egg. Add in one cup of flour, a half teaspoon of salt, a pinch of pepper, and some onion and/or garlic powder to taste.
- Crunchy potato wedges. Cut 3-4 medium potatoes into wedges. Brush with egg white, then dip into crushed cornflakes. Sprinkle wedges with seasoned salt, Parmesan cheese, and/or your favorite spice blend (ranch dressing salad dressing mix, taco seasoning, cajun seasoning, or even a combination of several individual spices).
- Baked cheese sticks. Another gem from Kelloggs.com, and I almost scrapped the rest of the list to go make them. They sound amazing.
- Peanut butter squares. This is one of my favorite sweet treats. Melt a cup of peanut butter, one cup of corn syrup, and a cup of brown sugar (in the microwave or over medium heat on the stove).
- Cookies. I found all kinds of cookie recipes, including these chocolate, marshmallow and caramel cookies and these buttery cookies.
- Cereal granola. Bring ¾ cup sugar, ½ cup corn syrup, and ¼ cup butter to a boil over medium heat. Boil for one minute, then remove from heat. Stir in 6 cups cornflakes, 1 cup peanuts, and ½ cup dried cranberries.
- Pie crust. Combine a cup of crushed cornflakes with 2 tablespoons sugar, 2 tablespoons melted butter, and 2 tablespoons of light corn syrup. Bake at 350 for 5 minutes, until golden.
- Fried ice cream. There are two ways to make fried ice cream. For both, you make ice cream balls and then refreeze them for 3 hours or overnight (to get them really firm).
