I made up this recipe many years ago, because I loved the corn dogs you buy at carnivals but could not find a recipe for them. Great served with mustard.

1 cup yellow cornmeal
1 cup all-purpose flour
¼ teaspoon salt
⅛ teaspoon black pepper
¼ cup white sugar
4 teaspoons baking powder
1 egg
1 cup milk
1 quart vegetable oil for frying
2 (16 ounce) packages beef frankfurters
16 wooden skewers

Steps:

  • In a medium bowl, combine cornmeal, flour, salt, pepper, sugar and baking powder. Stir in eggs and milk.
  • Preheat oil in a deep saucepan over medium heat. Insert wooden skewers into frankfurters. Roll frankfurters in batter until well coated.
  • Fry 2 or 3 corn dogs at a time until lightly browned, about 3 minutes. Drain on paper towels.

3/4 cup yellow cornmeal
1 tablespoon sugar
1 large egg
3/4 cup cheddar cheese (optional)
2/3 cup cold water
6 hot dogs

Steps:

  • Mix Bisquick, cornmeal, sugar, egg and water.
  • Add cheese, if desired.
  • Pour 1/3 of batter into a greased loaf pan (9x5x3-inch).
  • Place 3 hot dogs on top of batter.
  • Repeat with 1/3 of batter and rest of hot dogs.
  • Pour over rest of batter.
  • Bake at 400° for 40 minutes.
  • Remove from pan and cool 10 minutes before slicing.

1 cup biscuit mix
1/2 cup cornmeal
2/3 cup milk
1 egg
1 tablespoon unsalted butter, melted
1 tablespoon liquid honey
2 lbs hot dogs, cut into 1 inch pieces (about 8)

Steps:

  • *Preheat oven to 200°F.
  • *16 cup saucepan or deep fryer.
  • * Candy/deep-fry thermometer.
  • In a large saucepan over medium heat, heat about 4 inches of oil until thermometer registers 360°F.
  • In a large bowl, blend biscuit mix, cornmeal, milk, egg, butter and honey to make a smooth batter. Let stand for 10 minutes. Pat wieners pieces dry. Dip wiener pieces, one at a time, into mixture, coating all sides.
  • Place wiener pieces in hot oil, 4 at a time, and deep fry, turning once, until golden brown, about 15 seconds per side. Remove with a slotted spoon and place on paper towels to absorb excess oil. Transfer to an ovenproof platter and keep warm in preheated oven. Make sure oil is the correct temperature before adding each batch.
  • Serves 12 for appetizers or 8 as a main dish.
  • TIP: If you are using jumbo wieners, you will only need 4. Use beef or chicken dogs interchangeably.
  • VARIATION: For a little bite, add 1 teaspoons hot pepper flakes to the batter prior to frying.

1 cup all-purpose flour, plus more for dredging
2 tablespoons sugar
1 1/2 teaspoons baking powder
1 teaspoon mustard powder
Kosher salt
1 cup milk
2 large eggs
2 tablespoons peanut oil, plus more for frying
8 hot dogs

Steps:

  • Whisk the cornmeal, flour, sugar, baking powder, mustard powder and 1 1/2 teaspoons salt in a large bowl. Whisk the milk, eggs and peanut oil in another bowl, then add to the cornmeal mixture and whisk until smooth. Pour the batter into a tall drinking glass, reserving any extra batter.
  • Heat 3 to 4 inches peanut oil in a large, wide saucepan over medium heat until a deep-fry thermometer registers 365 degrees F. Spread some flour in a shallow dish. Thread each hot dog three-quarters of the way onto an 8-inch wooden skewer. Dredge the hot dogs in flour, tapping off the excess.
  • Working in batches, dip the hot dogs into the glass of batter; let the excess drip back into the glass, then lower the hot dogs into the hot oil. Fry, turning, until golden, 4 to 5 minutes per batch. (Refill the glass with batter as needed.) Remove the corn dogs with tongs and drain on a paper towel-lined plate; season with salt.

1 cup all-purpose flour
2 eggs
3/4 cup milk
1/2 stick butter, melted
1 tablespoon chili powder, eyeball it in your palm
2 teaspoons cumin, eyeball it
2 teaspoons cayenne pepper sauce (recommended: Tabasco or Frank's Red Hot
2 scallions, finely chopped
8 jumbo pork or beef franks
Sweet Relish Slaw Salad, recipe follows
1 bag reduced fat potato chips (recommended: Cape Cod brand or Terra brand Garlic and Onion flavor Yukon chips)
1 cup sweet pickle relish
1/4 cup cider vinegar, eyeball it
3 tablespoons vegetable oil, eyeball it
2 large cloves garlic, crushed
2 bay leaves, dried
3 whole cloves
1 pound shredded cabbage salad (slaw salad mix with carrots and red cabbage, available in produce department marked "Cole Slaw Mix" in 1 pound packages)
Salt and pepper
4 scallions, sliced

Steps:

  • Preheat oven to 425 degrees F.
  • In a shallow dish, combine muffin mix with flour, then stir in eggs, milk and melted butter. Season the mix with chili powder, cumin, cayenne and scallions. The batter will be a thick, sticky biscuit dough. Place a hot dog in the bowl of batter and swoosh it around to coat it. Remove coated dog to a nonstick cookie sheet and use your fingers to spread batter on any exposed dog spots. Don't coat it too thick, just shy of 1/2-inch should do the trick. If it's too thick it will just slide off the dog while it's baking, leaving the dog exposed. If that happens don't sweat it, they will still taste great. Repeat until all 8 are coated. Bake 12 to 15 minutes or until evenly deep brown all over.
  • Serve the oven baked corn dogs with your favorite hot dog condiments. Serve with Sweet Relish Slaw Salad and with some baked or reduced-fat chips alongside the dogs.
  • In the bottom of a medium, shallow bowl combine relish, vinegar, oil, garlic, bay and cloves. Let stand 5 minutes then fish out the garlic, bay and cloves. Add cabbage salad and toss, let stand 10 to 20 minutes in the refrigerator. Season salad with salt and pepper, toss in the scallions then serve.

1 ½ lb russet potato, peeled and cut into 1/4 in (6mm)
2 tablespoons all purpose flour
2 cups all purpose flour
3 tablespoons granulated sugar
1 tablespoon baking powder
½ teaspoon kosher salt
1 cup whole milk, plus 3 tablespoons
1 large egg, beaten
6 all-beef hot dogs, halved crosswise
2 shredded low moisture mozzarella cheeses, 8 ounce (225 g) blocks
2 cups panko breadcrumbs
2 cups korean rice puffs
¼ cup granulated sugar, for sprinkling
yellow mustard
12 wooden skewers

Steps:

  • Fill a large stock pot fitted with a deep-fry thermometer with canola oil. Heat the oil over medium-high heat until the temperature reaches 350°F (180°C). Reduce the heat to medium to maintain the temperature. Set a wire rack over a baking sheet and place it nearby.
  • Prepare the potatoes: Bring a large pot of salted water to a boil. Add the potatoes and blanch for 2 minutes, then drain and transfer to a medium bowl. Let cool to room temperature, 15-20 minutes. Once cooled, sprinkle the flour over the potatoes and toss until well coated, shaking off and discarding any excess.
  • Make the batter: In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In a 2-cup liquid measuring cup, whisk together 1 cup of milk and the egg until well combined.   • For the potato dogs: Roll a battered dog in the floured potatoes, using your hands to pack on the potatoes to ensure they stick. Immediately roll the potato-coated dog in the panko bread crumbs until completely coated.
  • For the crispy rice dogs: Roll a battered dog in rice puffs until completely coated, using your fingers to pack on the puffs as needed.
  • Place the coated dogs in the hot oil, 2-3 at a time, and fry for 2-3 minutes, until golden brown and crispy, using tongs to turn as needed. Transfer to the wire rack and sprinkle all over with sugar (use tongs when turning; the sticks will be very hot). Repeat with the remaining corn dogs to make 4 of each kind.
  • To serve, drizzle ketchup and mustard over the corn dogs.

20 -25 hot dogs
2 (8 1/2 ounce) boxes Jiffy cornbread mix
3 cups shredded sharp cheddar cheese

2 cups creamed corn (1 regular size can)

Steps:

  • Preheat oven to 350°F.
  • Put beans into large baking pan.
  • Slice hot dogs into 1/2 inch slices and add to beans.
  • Bake for 15-20 minutes.
  • While bean and hot dog mixture is in the oven,Mix cornbread mix, milk, eggs, creamed corn, and cheese in a large bowl.
  • Once bean and hot dog mixture has baked for 15-20 minutes, spread cornbread mixture gently on top to cover.

Two dishes that we love involving cornbread are corn dogs and good ole southern cornbread dressing. So we asked ourselves... Why not combine the two? That's just what we did. It turned out better than I could have hoped!! In 2 hours I made 2 pans because everyone wanted seconds and thirds! This casserole is savory yet slightly sweet. It is cheesy and meaty. In one word... Perfect!

1 large onions, chopped finely (my favorite!) or 1 cup of sliced green onion (my favorite!)

2 cups shredded cheddar cheese
2 eggs
1 1/2 cups milk

  • Preheat oven to 400°F.
  • In a skillet, combine celery, onions and butter. Saute for 5 minutes. Pour into a large bowl.
  • Cut the hot dogs into fourths lengthwise. Then cut each hot dog strip into 4 pieces.
  • Pour hot dog pieces into the same skillet you used for the celery/onion mixture, saute hot dog pieces for 5 min or until lightly browned.
  • Add the browned hot dog pieces into the celery/onion mixture bowl.
  • In another large bowl, combine; eggs, milk, sugar, sage, and pepper.
  • Add 1/2 of the hot dog /celery mixture and 1 1/2 cups of the shredded cheddar cheese, into the milk mixture. Stir in the corn bread mix.
  • Spread the mixture into a 13x9 backing dish.
  • Top with the remaining half of the hot dog/celery mix. Sprinkle remaining 1/2 cup of cheese over the top.
  • Bake, uncovered, at 400°F for approx 35 minutes, or until a knife inserted in the center comes out clean.
  • Enjoy!
  • **If your kids are gonna freak at the sight of celery, leave it out and add a shake or two of celery salt.

2 cups celery, thinly sliced
2 tablespoons butter or 2 tablespoons margarine
1 1/2 cups green onions, sliced
1 1/2 lbs hot dogs
2 eggs
1 1/2 cups milk
2 teaspoons rubbed sage
1/4 teaspoon pepper
17 ounces cornbread-muffin mix
8 ounces sharp cheddar cheese, shredded

Steps:

  • In skillet, saute celery in butter for 5 min.
  • Add onions; saute 5 min.
  • Place in a large bowl; set aside. Cut hot dogs lengthwise into 1/4s, then cut into 1/3s.
  • In the same skillet, saute hot dogs for 5 min. or until lightly browned; add to vegetables. set aside 1 cup.
  • In a large bowl, combine eggs, milk, sage and pepper.
  • Add the remaining hot dog mixture. Stir in corn bread mixes.
  • Add 1 1/2 cup cheese. Spread into a shallow 3 quart baking dish.
  • Top with reserved hot dog mixture and remaining cheese. Bake, uncovered, at 400 degrees for 30 min. or until golden brown.
  • NOTES : I just use my own corn bread recipe.

Pour the liquid mixture into the dry mixture and stir lightly until the batter has mostly come together but still has some small lumps (Grandma’s notes specify to use a whisk. I do what Grandma says. It’s always for the best.)
  • Fold the sliced hot dogs and onions (if using) into the batter gently just until combined. Scrape the batter into the greased baking dish and level the top. If using the jalapeno rings, arrange evenly over the top of the batter. Slide the baking dish into the oven and bake for 30 minutes, or until the top is golden brown and it tests done*.
