Making this jelly every year in the summer is a tradition in my family. I often give this jelly as a gift.-Marge Hagy, Brewster, Washington

Provided by Taste of Home

Time 30m

Yield 5 cups.

Number Of Ingredients 5

12 large corncobs
4 cups water
1 package (1-3/4 ounces) powdered fruit pectin
4 cups sugar
Yellow food coloring

Steps:

  • Cut corn kernels from cobs and reserve for another recipe. In a stockpot, place corncobs and water; bring to a boil. Cook, uncovered, 10 minutes., Discard cobs; strain liquid through cheesecloth. Liquid should measure 3 cups. Add additional water if necessary., Return to stockpot and stir in pectin. Bring to a full rolling boil. Add sugar and bring back to a boil. Skim foam and add a few drops of food coloring. Transfer to covered jars; refrigerate up to 2 weeks.

12 sweet corn cobs
1 lb brown sugar

Steps:

  • Boil the corncobs about 45 minutes in 3 pints of water. Take out the cobs, strain, and add 1 pound of brown sugar. Boil this down until you get a nice syrup consistency.
  • This makes a nice substitute for maple molasses. Enjoy!

Number Of Ingredients 4

2 cups white sugar
3/4 cup water
1/4 teaspoon cream of tartar
1 pinch salt

Steps:

  • Combine all ingredients in a large saucepan.
  • Bring to a boil, stirring constantly.
  • Reduce heat to a simmer and put cover for 3 minutes to get sugar crystals off the sides of the pan.
  • Uncover and simmer, stirring often, until it reaches the soft ball stage.
  • Cool and store in a covered container at room temperature.
  • Your syrup should keep for about 2 months.
  • Makes about 2 cups.
