Corn casserole is a favorite Thanksgiving side dish. It has a sweet, golden, bready layer and a delicious, creamy corn center. Just how it should be!

2 15 ounce cans creamed corn
1 15 ounce can whole corn (drained)
1 cup soda (or saltine) crackers (crushed)
1/2 cup milk
1/2 cup sugar
3 eggs
3 tablespoons flour
3 tablespoons butter (melted (or bacon grease, see notes above))

Steps:

  • Preheat oven to 350-degrees.
  • Combine all ingredients in a large bowl, mix well.
  • Pour mixture into a greased 9x13 glass baking dish.
  • Bake for 1 - 1 1/2 hours or until cooked through and golden brown on top.
  • Tip: If you like it more bready, bake longer. It will become more like a cornbread. If you like it more like a corn pudding, bake for less time.

My mother won an award many, many years ago with this recipe in the Arizona Republic newspaper. I think it is delish and so different from a lot of other corn casseroles. Everybody I know asks for this recipe so I am giving it to everyone! Enjoy!

¼ cup butter
1 large onion, diced
½ large green bell pepper, diced
1 (4 ounce) jar chopped pimento peppers
2 eggs
1 (8 ounce) package corn muffin mix (such as Jiffy®)
1 (4 ounce) can diced green chiles
1 (15.25 ounce) can whole kernel corn, with liquid
1 (15.25 ounce) can creamed corn
1 pint sour cream
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking pan.
  • Melt butter in a skillet over medium heat. Add onion, bell pepper, and pimento peppers and saute until tender, about 5 minutes.
  • Combine eggs, corn muffin mix, green chiles, whole corn, and creamed corn in a large bowl with the onion mixture. Stir together and pour into the prepared baking pan. Drop sour cream by the spoonful on top of the mixture; cover with Cheddar cheese.
  • Bake in the preheated oven until casserole is firm, about 45 minutes.

We added Cheddar and chives to this classic and quick side that goes from mixing bowl to oven in less than 10 minutes. It bakes up golden brown and puffy -- perfect for a potluck or holiday gathering.

One 15-ounce can whole corn kernels, drained
One 15-ounce can creamed corn
1 large egg
1 1/2 cups shredded sharp Cheddar
1 cup yellow cornmeal
1 cup sour cream
6 tablespoons unsalted butter, melted
1/4 cup chopped fresh chives
1/4 cup sugar
2 teaspoons baking soda
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the whole corn, creamed corn, egg, Cheddar, cornmeal, sour cream, butter, chives, sugar, baking soda, 1 1/2 teaspoons salt and a generous amount of black pepper to a large bowl and stir until well combined.
  • Pour the mixture into a 2-quart baking dish and bake until lightly golden on the outside and set in the middle, 30 to 35 minutes.

This is always requested over and over again. I love it and I don't really like corn. My best friend made this once and convinced me to try it, now it's a tradition to make for all holidays.

1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can cream-style corn
1 cup sugar
1 egg
¼ cup butter, melted and divided
2 sleeves buttery round crackers (such as Ritz®), crushed and divided

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Stir whole kernel corn, cream-style corn, sugar, egg, and about 3/4 of the melted butter together in a casserole dish. Fold about half the crushed crackers into the corn mixture. Sprinkle remaining crushed crackers over the top of the mixture and drizzle with the remaining butter.
  • Bake in preheated oven until beginning to brown, 25 to 30 minutes.

4 ounces canned pimento, diced
1 (4-ounce) can diced green chiles
1 teaspoon ground cumin
Salt and ground black pepper
1 tablespoon chopped parsley leaves

  • In a medium bowl, combine corn, pimento, green chiles, and cumin. Mix well and season to taste with salt and black pepper. Garnish with fresh parsley.

1 1/2 cups shredded sharp yellow Cheddar
One 4-ounce jar chopped pimientos, well drained
One 8-ounce brick cream cheese, at room temperature
1 teaspoon hot sauce, or more to taste
1 teaspoon Worcestershire sauce, or more to taste
1 large clove garlic, grated
4 ears corn
2 tablespoons vegetable oil
4 spring onions or scallions, sliced on the bias, whites and greens separated
1 small bundle fresh thyme
1 fresh bay leaf
Chicken stock, for simmering

Steps:

  • Preheat a cast-iron pan over high heat.
  • Combine the Cheddar, pimientos, cream cheese, hot sauce, Worcestershire and garlic in a food processor; pulse to a paste-like consistency and set aside.
  • Cut the corn off the cob and set aside (do not discard the cobs). Add the oil to the pan, then add the corn and let char. Add in the scallion whites and cook a few minutes.
  • Meanwhile, in a medium pot, add the corn cobs, thyme bundle and bay leaf, and cover with chicken stock. Simmer 15 minutes, then strain and use to thin the pimiento cheese. Serve the corn with the pimiento cheese.

1 can corn (don't drain)
1 (6 ounce) box Jiffy cornbread mix
8 ounces sour cream
1/2 cup cheese, grated
1/2 onion, chopped fine
1/2 bell green bell pepper, chopped fine
1 jar chopped pimiento, drained

Steps:

  • Heat oven to 350.
  • Melt stick of butter in 13x9 pan.
  • Mix all other ingredients, except cheese, in a bowl until well blended.
  • Pour in buttered dish.
  • Top with cheese.
  • Bake for about 45 minutes til brown on top.

2 tablespoons green bell pepper, chopped
2 cups whole kernel corn, drained

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium heat, stirring until evenly browned, about 10 minutes. Drain the bacon on a paper towel-lined plate, leaving the grease in the skillet. Stir the onion and bell pepper into the skillet, and cook until the onion has softened and turned translucent, about 5 minutes. Add the corn, pimentos, and reserved bacon. Cook and stir until heated through, 3 to 5 minutes. Season with salt and pepper before serving.

  • Fry bacon, drain and set aside. Cook onion and green pepper in 3 tablespoons of the bacon drippings then add cracker crumbs to the skillet with the green pepper and onions and brown just a little. Set this aside.
