1 tsp. oil
1 small onion, sliced
1 clove garlic, minced
1 tsp. dried rosemary leaves, crushed
1/4 cup KRAFT Lite Balsamic Vinaigrette Dressing, divided
1 can (15-1/4 oz.) pear halves in juice, undrained

Steps:

  • Cook chops in oil in large nonstick skillet on medium-high heat 3 min. on each side or until browned on both sides. Remove chops from skillet; set aside.
  • Add onions, garlic, rosemary and 2 Tbsp. dressing to skillet; stir. Cook 3 min., stirring occasionally. Return chops to skillet. Add pears and remaining dressing; simmer on medium 10 min. or until chops are done (160ºF).
  • Serve chops topped with the sauce.

  • Heat butter in a skillet over medium heat; cook pork chops in the melted butter until cooked through, 10 to 15 minutes. Remove pork chops from skillet and cut into bite-sized pieces.

4 teaspoons Kosher salt
2 teaspoons black pepper
2 teaspoons garlic powder
1 teaspoon onion powder
3 pounds thinly sliced pork shoulder blade steaks
2 tablespoons canola or avocado oil
2 tablespoons unsalted butter
1 yellow onion, halved and thinly sliced
3 tablespoons all-purpose flour
2 1/4 cup low-sodium beef broth
1 tablespoon Worcestershire Sauce

Steps:

  • In a small bowl, combine salt, pepper, garlic powder, and onion powder. Pat the pork steaks dry with a paper towel and sprinkle both sides liberally with the seasoning. Set aside until ready to use.
  • Add the oil to a large sauté pan over medium-high heat and allow to come to temperature. Add the pork steaks to pan, taking care not to overcrowd the pan and cooking in batches if needed. Cook for 3-4 minutes on the first side, then flip and cook 3-4 minutes more. Remove from the pan and repeat with the remaining pork steaks. Set aside on a plate and make the gravy.
  • Reduce the heat to medium heat and add the butter. As soon as the butter has melted, add the onion to the pan and stir. Cook for about 5 minutes, stirring occasionally until softened and cooked through.
  • Sprinkle the flour over the onion and stir until evenly coated. Then, one big splash at a time, add the beef broth, whisking well after each addition. Once the mixture starts to resemble pudding, add the remaining broth all at once. Add the Worcestershire sauce and whisk to combine. Allow to simmer, 3-4 minutes, until slightly thickened. Remove from the heat.
  • Serve your pork steaks with a ladle full of gravy and enjoy.

3 tablespoons extra-virgin olive oil
1 small onion, thickly sliced

Steps:

  • Preheat the broiler. Slice the pork on an angle into 1-inch-thick pieces; season with salt. Heat a large ovenproof skillet over medium-high heat; add 1 tablespoon olive oil. Add the onion and bell peppers; season with 1/2 teaspoon salt and cook until the vegetables are crisp-tender and slightly browned, 4 to 6 minutes. Transfer to a plate.

4 pork chops, about 1-inch thick and 6 to 7 ounces each, see notes
Salt, to taste
1 tablespoon all-purpose flour
1 teaspoon chili powder, see our homemade chili powder recipe
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1 tablespoon neutral oil like avocado oil or vegetable oil
1 cup low-sodium chicken stock, see our homemade chicken stock recipe
1 tablespoon apple cider vinegar
2 teaspoons honey or brown sugar
1 tablespoon butter
2 tablespoons chopped fresh parsley, optional

Steps:

  • Take the pork chops out of the refrigerator and season on both sides with salt - we use just less than 1/4 teaspoon of fine salt per pork chop. Set the chops aside to rest for 30 minutes.
  • Meanwhile, make the spice rub. In a small bowl, mix the flour, chili powder, garlic powder, onion powder, smoked paprika, and 1/2 teaspoon of black pepper.
  • After 30 minutes, use a paper towel to pat the pork chops dry, then rub both sides of the chops with the spice rub.
  • Heat the oil in a skillet (with a lid) over medium-high heat. When the oil is hot and looks shimmery, add the pork. Cook until golden, 2 to 3 minutes.
  • Flip the pork so that the seared side is facing up. If there is a fattier side of the pork, use kitchen tongs to hold the chops, fat-side-down until it sizzles and browns slightly; about 30 seconds.
  • Reduce the heat to low, then cover the skillet with a lid. Cook 6 to 12 minutes or until an instant-read thermometer reads 145° F when inserted into the thickest part of the chop. Cook time depends on the thickness of the chops, so check for doneness at 5 minutes, then go from there, checking every 2 minutes after that. If you do not have a thermometer, you will know they are done, if, when cutting into the chops, the juices run clear.
  • Transfer pork chops to a plate, then cover loosely with aluminum foil. Let the pork rest for 5 minutes.
  • While the pork rests, make the pan sauce. Increase the heat to medium-high, then add the chicken stock, vinegar, and honey. Use a wooden spoon to scrape the bottom of the pan so that any stuck bits of pork come up.
  • Bring the sauce to a simmer and cook until reduced by half. Taste, then adjust the seasoning with additional salt, vinegar, or honey.
  • Slide the skillet off of the heat and when the sauce is no longer simmering, swirl in the butter.
  • Slide the pork chops back into the pan and spoon some of the sauce on top. Alternatively, slice the chops, then place them back into the pan. Scatter fresh parsley over the pork, and then serve.

1 pound bone-in pork chops (about 1.5" -2" thick)
kosher salt
freshly ground black pepper
2 tablespoons ghee, divided (*see note)
2 cloves garlic, smashed and sliced

Steps:

  • Set the pork chop(s) out on a cutting board at room temperature for about 10-15 minutes before you begin cooking.
  • Season both sides of the pork liberally with kosher salt and freshly ground pepper.
  • Place 1 tablespoon of the ghee in a cast iron skillet on the stove top over medium-high heat.
  • Once melted and hot, place the pork in the skillet and cook until bottom starts to turn golden brown around the edges (about 3-4 minutes).

  • For this recipe I use an electric skillet. I’m sure this could be made on the stove top the same way but for years I have used a skillet. Plus, by doing so less grease splatter to clean up.Set electric skillet temperature to 300 degrees Fahrenheit. Add about 3 heaping kitchen tablespoons of solid lard and allow to melt.Once the lard has melted turn the temperature to 350 degrees Fahrenheit and slowly add pork chops.
  • Season Pork ChopsSeason pork chops with salt and pepper and then flip the chops over and season the other side.
  • Fry Pork ChopsCover skillet with lid and allow chops to cook for 15 minutes.After 15 minutes remove lid and turn pork chops over. Repeat this step of frying on each side 2 more times or until the chops are browned to your liking. Note: Any more than 2 turns can result in dry pork chops.
  • FondMy favorite part of making pork chops is getting the dark brown food bits. The culinary world calls that fond!The fond makes for a wonderful brown gravy. So, if you are planning on making gravy with the pork chops do not get rid of the fond.
