SAVORY SKILLET BURGERS
A last-minute quick meal turned into a family favorite. Best homemade skillet burgers I have ever had and they are surprisingly not too bad for you! Making them into sliders on lightly toasted sourdough is an amazing gourmet treat for guests! My boyfriend got out the ketchup, and after one bite of these burgers he put the ketchup away. These burgers are perfect as-is--you don't even need buns!

Steps:
- Lightly oil a large skillet and put over low heat.
- Mix ground beef, egg whites, sun-dried tomatoes, goat cheese, sea salt, steak seasoning, and parsley in a large bowl. Shape into 5 hamburger patties.
- Put patties in the skillet and cook for 5 minutes. Flip and cook another 5 minutes. Increase heat to medium or medium-high, cover, and continue to cook, flipping occasionally, until burgers are cooked through and juicy, 5 to 10 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top with liquid hickory smoke seasoning.

GOURMET BURGERS WITH SUN-DRIED TOMATO

- Drain tomatoes, reserving 1/3 cup oil; set aside. In a large skillet, saute sliced onions in 3 Tbsp. reserved oil until softened. Add vinegar. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 30-40 minutes., Meanwhile, chop sun-dried tomatoes and transfer to a large bowl. Add the red onion, seasonings and remaining 7 tsp. of the reserved oil. Crumble beef over mixture and mix lightly but thoroughly. Shape into 16 thin patties. Place 2 tablespoons goat cheese on the center of 8 patties. Top with remaining patties and press edges firmly to seal., Grill burgers, covered, over medium heat until a thermometer reads 160° and juices run clear, 5-7 minutes on each side., Place buns, cut side down, on grill until toasted, 1-2 minutes. Serve burgers on buns with onions and, if desired, mixed greens.

- Pulse 1 cup of the corn and the eggs in a food processor until it reaches the texture of chunky hummus, not completely liquefied.
- In a mixing bowl, whisk together the cornmeal, flour, cornstarch, and baking powder. Stir in the remaining 1/2 cup corn, the corn-egg mixture, the scallions, sun-dried tomatoes, salt, and pepper. Crumble the goat cheese over the corn mixture and fold it inches Adjust the seasonings.
- Heat the oil in a sauté pan over medium heat. Drop the mixture by heaping 1/4-cup portions into the hot skillet, pressing gently with a spatula to round them into burger shapes. Cook until golden brown on the bottoms, 4 to 5 minutes (lower the heat if they cook too quickly). Carefully flip and cook until firm and browned, another 4 or 5 minutes.

Steps:
- Combine all ingredients in a large bowl, adjusting quantities to taste (I've never measured). The soy sauce is used in place of salt, apparently it doesn't dry the meat out like salt would and adds extra flavour (tip from the Chris Evans show on BBC Radio 2).
- Mix thoroughly by hand.
- Cover with cling film and place in the fridge for at least an hour.
- Form into patties and fry/bbq until browned.
- Enjoy!

- Heat the 3 T oil in a large skillet over medium heat.
- Add the tomatoes and shallots sauteing until shallots are soft, around 6 minutes.
- Add the water, vinegar, and sugar.
- Cover and cook for 5 minutes, stirring twice.
- Remove from heat and stir in mint.
- In another large skillet melt the 4 T butter over medium heat.
- Add the leeks and saute until golden, around 8 minutes.
- Remove from heat, and stir in goat cheese and thyme.
- Lightly season with salt and freshly ground black pepper, white if you prefer.
- Preheat oven to 400 degrees.
- Lightly grease two cookie sheets and set aside.
- Place 1 phyllo sheet on work surface, brush with butter and top with another sheet.
- Cut into five 3x14 inch strips.
- Place 1/2 T of goat cheese mixture at the base of 1 strip, repeat with the other Top each with 1 t of the sun-dried tomato mixture.
- Fold 1 corner over the filling, and continue, folding down the strip like a flag, forming a triangle.
- Place on prepared cookie sheet.
- Repeat until all the fillings are used.
- Brush tops with butter.
- Bake in the preheated oven for 15 minutes.
- Serve hot or at room temp.
