GRILLED CORN CHOWDER

Grilled corn, peppers and scallions form the base for this hearty summer chowder. Serve with a crusty baguette or country bread and you've got a full vegetarian meal. Leftovers are great for quick lunches and will keep in the fridge for several days.

Number Of Ingredients 15

4 ears sweet corn, husked
1 small red bell pepper, cored and cut into 4 planks
1 bunch scallions (6 to 7), trimmed
Extra-virgin olive oil, for brushing
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1 pound new potatoes, cut into 1/2-inch chunks
2 stalks celery, chopped
3 tablespoons all-purpose flour
2 teaspoons fresh thyme leaves
1/2 teaspoon smoked paprika
4 cups low-sodium chicken broth
3/4 cup heavy cream
1/4 cup fresh Italian parsley leaves, chopped
Hot sauce, for serving, optional

Steps:

  • Prepare a grill for medium heat.
  • Brush the corn, bell pepper and scallions lightly with olive oil. Season with salt and pepper. Grill, turning as needed, until the vegetables are charred and just tender, 8 to 10 minutes for the corn, about 6 minutes for the peppers and 2 to 3 minutes for the scallions. Let cool.
  • Cut the corn kernels from the cobs and place it in a medium bowl. Chop the bell pepper. Finely chop the scallions, keeping the white parts separated from the green parts.
  • Melt the butter in a medium Dutch oven over medium heat. Add the scallion whites, potatoes and celery. Cook, stirring occasionally, until the celery softens, 3 to 4 minutes.
  • Sprinkle in the flour, thyme, paprika, 1 teaspoon salt and several grinds of black pepper. Stir until the flour evenly coats the vegetables, about 1 minute. Add the broth and 1 cup water and whisk to combine. Bring to a simmer, adjust the heat and simmer until the potatoes are almost tender, 8 to 10 minutes.
  • Stir in the corn, peppers and cream and return to a rapid simmer. Cook until the soup is thickened and the vegetables are tender, 8 to 10 minutes. Season with more salt and pepper if desired. Stir in the scallion greens and parsley. Serve with hot sauce if using.

3 slices center-cut bacon
1 cup chopped red bell pepper
1 cup chopped onion
4 cloves garlic, minced
2 cups fresh corn kernels (3-4 ears)
3 tablespoons water, divided
½ teaspoon salt
1 tablespoon all-purpose flour
2 cups low-sodium chicken broth, divided
¼ cup dry white wine
8 ounces Yukon Gold potatoes, peeled and diced
5 sprigs fresh thyme, plus leaves for garnish
¼ cup half-and-half
½ tablespoon butter
½ teaspoon ground pepper

Steps:

  • Cook bacon in a large saucepan over medium heat until crisp, 8 to 9 minutes. Transfer the bacon to a paper towel-lined plate, reserving 1 Tbsp. drippings in the pan. Crumble the bacon and set aside.
  • Add bell pepper, onion, and garlic to the pan; cook, stirring often, until browned and tender, 6 to 8 minutes. Transfer the bell pepper mixture to a medium bowl; set aside. Add corn, 2 Tbsp. water, and salt to the pan; cook, stirring often, until the corn is golden, 4 to 5 minutes. Stir in the remaining 1 Tbsp. water, scraping the bottom of the pan to loosen any browned bits.
  • Return the bell pepper mixture to the pan. Stir in flour; cook, stirring constantly, for 1 minute. Stir in 1/4 cup broth and wine; cook, stirring constantly and scraping the bottom of the pan to loosen browned bits, for 1 minute. Stir in potatoes, the remaining 1 3/4 cups broth, and thyme. Cover and bring to a boil. Reduce heat to low and simmer until the potatoes are fork-tender, 15 to 18 minutes.
  • Remove and discard the thyme sprigs. Transfer 2 cups of the soup to a blender. Remove center piece of lid (to let steam escape), secure the lid on the blender, and cover with a kitchen towel. Puree until smooth (use caution when blending hot liquids). Return the blended soup to the pan. Stir in half-and-half and butter. Divide between 4 bowls; sprinkle with pepper and garnish with the crumbled bacon and thyme leaves, if desired.

2 cups low-salt chicken broth, divided

Steps:

  • Blend 2 cups corn and 1 cup broth in blender until almost smooth. Melt butter in large saucepan over medium-high heat. Add next 3 ingredients; sauté 5 minutes. 4 tablespoons butter (can use a little less)

4 cups whole kernel corn, canned is fine
4 potatoes, peeled and diced (or use as many as desired)
1 (14 ounce) can condensed cream of mushroom soup, undiluted
1 (10 ounce) can sliced mushrooms, drained
3 cups half-and-half or 3 cups whole milk
1 small medium green bell pepper, seeded chopped
1 small red bell pepper, seeded and chopped
1/2 lb bacon, cooked and crumbled (or to taste)
salt & fresh ground pepper (to taste, I use seasoned salt)
1 pinch cayenne pepper (optional or to taste)
grated parmesan cheese (optional)

Steps:

  • In a saucepan sauté onion and garlic in butter for about 3 minutes or until tender.

2 bay leaves
4 1/2 cups vegetable broth
8 ears of corn, shucked (or 6 - 7 cups frozen or canned)
1lb. potatoes (any regular or sweet), cubed into 1/2 inches*
3/4 cup raw cashews or 1 can (14oz) coconut milk or cream
salt + pepper, to taste
chopped fresh parsley, chives, or green onions
red pepper flakes
a sprinkle of smoked paprika or nutritional yeast
Coconut Bacon
shredded vegan cheese

Steps:

  • If using cashews, soak 3/4 cup of raw cashews in warm water for 5 minutes. Drain. Puree the cashews with 3/4 cup of water. Set aside. If using canned coconut milk, skip this step.
  • In a large dutch oven, heat oil/water over medium heat, add onion, celery, and red bell pepper, saute for 7 minutes. Add the garlic, thyme, and optional smoked paprika after 5 minutes.
  • Add the corn, potatoes, bay leaves, and vegetable broth, bring to a boil, reduce heat, cover askew, and simmer for 15 minutes (or until potatoes are fork-tender). Add the vegan cream or coconut milk 5 minutes before soup is done. Remove from heat.
  • Let chowder cool a few minutes and remove the bay leaves. Transfer 2 - 3 cups of the soup to a blender and puree. Add back to the soup, stir well, and season to taste with salt and pepper. For a thicker soup, puree up to half. Soup will thicken upon standing.
  • Ladle into individual bowls and top with your favorite toppings.
  • Serves 4 - 6
