2 cups flour (measured with a spoon, not sifted)
2 teaspoons baking soda
1 teaspoon salt
3 Tablespoons granualted sugar
2 eggs
2 1/3 cups low fat buttermilk (1% or less)
butter for cooking

Steps:

  • Preheat a pancake griddle to 350 degrees F. Prepare the butter by leaving it out at room temperature.
  • In a medium bowl, whisk together the eggs and buttermilk. Add flour, baking soda, salt, and sugar and mix just until combined.
  • Grease your griddle with butter and pour in 1/2 cup of batter. When the batter hits the griddle, level it out with the back of a spoon or ice cream scoop.
  • Once your batter starts to bubble and the edges are set, flip your pancake and cook for another two minutes.
  • Repeat steps 3 and 4 for each pancake.
  • Serve warm.

Hope this helps avoid any confusion. *** I absolutely adore the pancakes served at Cracker Barrel, especially their pecan pancakes. This recipe comes from the Cracker Barrel Cookbook. In my experience, you need to make sure that your cooking surface is well greased or you get leathery pancakes.

2 cups sifted all-purpose flour
2 teaspoons baking soda
1 teaspoon salt (heaping)
1 tablespoon sugar
2 eggs
2 cups buttermilk
oil (for cooking) or butter (for cooking)
butter, and
maple syrup, for serving

Steps:

  • Mix all ingredients together until incorporated, but do not over mix.
  • Heat a griddle or non stick pan under med. - med. high heat, and grease with a little butter or oil (more if you like a crispy edge).
  • Drop batter using a 1/4 cup measuring cup onto hot pan. Once the bottom side is golden, flip and brown remaining side.
  • Serve with butter and real maple syrup.

4 cups all-purpose flour
¼ cup sugar
2 teaspoons baking soda
2 teaspoons salt
1½ teaspoons baking powder
4 eggs (room temperature)
4 cups buttermilk

Steps:

  • In a large mixing bowl, mix together flour, sugar, baking soda, salt, and baking powder.
  • In another mixing bowl, beat eggs and buttermilk together until well blended.
  • Stir wet ingredients into dry ingredients until they are just combined (be sure to not overmix).
  • Pour batter onto hot griddle (you may want to add a little bit of oil or non-stick cooking spray to the griddle first if it is not a non-stick griddle).
  • Flip over pancake when bubbles form on the top and then cook for a few more minutes until the other side is golden brown.
  • Serve with your favorite toppings and syrups and serve.
