After enjoying this coleslaw for years at many church functions, I finally asked for the recipe. It can be put together in no time, so it's perfect for last-minute guests.

Number Of Ingredients 9

1 cup mayonnaise
1/2 cup sugar
1/3 cup cider vinegar
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
1/2 medium head cabbage, shredded
2 medium carrots, shredded
1 celery rib, shredded

Steps:

  • Place the first six ingredients in a blender or food processor. Cover and process on high until the sugar is dissolved, about 30 seconds. In a large bowl, combine cabbage, carrots, celery and dressing; toss to coat. Serve immediately.

1 tablespoons sugar
1 1/2 cups self-rising flour
1/2 cup cornstarch
3 teaspoons seasoned salt
2 teaspoons paprika
1/2 teaspoon baking soda
1/2 cup biscuit mix
1 envelope Italian dressing mix
1 envelope onion soup mix
1 whole chicken, cut into pieces
2 eggs
1/4 cup cold water
1 cup corn oil for frying

Steps:

  • Combine sugar, self-rising flour, cornstarch, salt, paprika, baking soda, biscuit mix, Italian dressing mix and onion soup mix in a 4-cup bowl. Mix to blend the ingredients thoroughly. Blend the egg and water. Dip the chicken pieces in egg mixture and then into dry coating mix and repeat so each piece is double coated. Pre-heat the oil in a heavy skillet. Brown pieces skin-side down for 4 to 6 minutes. Use medium high heat. Turn and brown underside of pieces a few minutes. Transfer to an oiled or Pam-sprayed pan. Cover with foil, sealing it on only 3 sides of pan. Bake at 350°F for about 45 to 50 minutes. Remove foil, then bake another 5 minutes until the coating is crisp.

1/2 cup real mayonnaise
1/2 cup milk
1/3 cup sugar
1/4 cup Miracle Whip
2 teaspoons cider vinegar
2 teaspoons pineapple juice
1 teaspoon lemon juice
1/4 teaspoon coriander powder
1/4 teaspoon salt (or to taste)
1 teaspoon minced fresh white onion (use a garlic press)
4 cups finely chopped cored green cabbage
1/3 cup finely chopped peeled carrot

Steps:

  • ADD the following DRESSING ingredients into a large bowl: 1/2 cup real mayonnaise, 1/2 cup milk, 1/3 cup sugar, 1/4 cup Miracle Whip, 2 teaspoons cider vinegar, 2 teaspoons pineapple juice, 1 teaspoon lemon juice, 1/4 teaspoon coriander powder, 1/4 teaspoon salt (or to taste).
  • CUT 1-2 small wedges of white onion, each to the size of a garlic clove; PLACE onion wedge into garlic press; SQUEEZE onion pulp and juice to measure 1 teaspoon; ADD to other ingredients in bowl.
  • WHISK together DRESSING ingredients until smooth, creamy and opalescent, using a wire whisk.
  • CHOP COLESLAW ingredients to specifications, using a food processor if desired (4 cups cabbage should be cut to approximately 1/4 inch pieces; 1/3 cup carrots should be cut to approximately 1/8 inch thick x 1/4 inch long pieces.
  • ADD prepped COLESLAW ingredients into large bowl containing DRESSING.
  • BLEND all ingredients together until combined.
  • COVER and refrigerate at 4 hours to overnight (I like it best the second day).
  • COMBINE coleslaw well before serving.
  • SERVE with your favorite dish (or by itself as I often do).
  • ENJOY!

Steps:

  • 1. Chop all vegetables fine. Add sugar, salt and oil. Add mayo to the consistency you like.
  • 2. A post online from someone who used to work for Lee's says they made this 50 lbs at a time, and noted that they use cottonseed oil rather than vegetable oil.

I figured there are enough KFC recipes here that it's time Church's chicken grabbed the spotlight! Haven't made this, but I like the idea of first frying, and then baking the chicken.

1 tablespoon sugar
1 1/2 cups self-rising flour
1/2 cup cornstarch
3 teaspoons seasoning salt
2 teaspoons paprika
1/2 teaspoon baking soda
1/2 cup biscuit mix (such as Bisquick)
1 envelope dried Italian salad dressing mix
1 envelope onion soup mix
2 eggs, mixed with
1/4 cup cold water
1 cup corn oil
1 (3 lb) fryer chickens, cut up into pieces

Steps:

  • Combine all the dry ingredients in a 4-cup container.
  • Mix to blend the ingredients thoroughly.
  • Store tightly covered at room temperature up to 3 months.
  • To use: Dip the chicken pieces in egg mixture and then into dry coating mix and back into egg to coat the pieces evenly but lightly and finally back into dry mix.
  • Have oil piping hot in heavy skillet.
  • Brown pieces skin-side down for 4 to 6 minutes.
  • Use medium high heat.
  • Turn and brown underside of pieces a few minutes.
  • Transfer to an oiled or Pam-sprayed 9x13x2-inch pan.
  • Cover pan with foil, sealing it on only 3 sides of pan.
  • Bake at 350 degrees for about 45 to 50 minutes.
  • Remove foil.
  • Bake another 5 minutes just to crisp the coating.
  • Serves 4.
