WAFFLE-GRILLED HAM AND CHEESE
Make a few extra waffles on the weekends, and turn the leftovers into this kid-favorite sandwich. (Okay, so maybe it's an adult-favorite, too!)

Steps:
- Lay 2 of the waffles on a counter or cutting board. Place a half-slice of cheese on top of each waffle. Spread some mustard over the cheese if using. Fold each ham slice in half, and place on top of the cheese slices. Layer another half-slice of cheese over each piece of ham. Top with the remaining waffles to form a sandwich.
- Heat a nonstick skillet or cast-iron pan over medium heat.
- Grease the skillet with some butter. Place the sandwiches in the pan, and cook until golden on the underside and the cheese starts to melt, 2 to 3 minutes. Flip the sandwiches, and cook until golden on other side and the cheese fully melts, about 2 more minutes. Serve hot or wrap in foil to pack for a school lunch or picnic.
- Make it Your Own: For an Italian spin on this sandwich, swap in prosciutto for the ham and mozzarella for the Swiss.
WAFFLE-IRON HAM AND CHEESE PANINIS
Golden-brown, crisped bread that is still tender inside with gooey cheese, salty ham, peppery arugula, sweet onion, pungent Dijon mustard and smooth mayonnaise; this sandwich is everything a sandwich aspires to be. Whether you serve these as part of a meal or as part of your game day party food, you are sure to score big.

Steps:
- Preheat your waffle iron or panini maker according to manufacturer's instructions.
- Spread the top of one piece of bread with mayonnaise and Dijon. Arrange 3 pieces of the ham on the bread, top with 1 piece of the provolone cheese, half of the arugula, the onions, the other half of the arugula, last piece of cheese, and the remaining 3 slices of cheese. Finally, spread the remaining piece of bread with more Dijon and mayonnaise and put that side down on top of the sandwich. Generously butter the top of the bread.
- Open the waffle iron, hold the sandwich together and carefully invert it so the buttered top is facing down on the waffle iron. Quickly butter the piece of bread that is now on the top and close the waffle iron. You may need to weight the top of the waffle iron down until the sandwich begins to compress. A heavy pan or can of something that will not be damaged by heat is a good bet.
- Toast until the sandwich is compressed and the outside is a crispy, deep golden brown. In my waffle maker, set on high, that took about 5 minutes.
- Use tongs or a spatula to carefully remove the sandwich from the waffle iron and transfer it to a cutting board. Cut in half (or quarters) and serve hot.
HAM-AND-CHEESE WAFFLEWICHES WITH KALE CHIPS

- Make the kale chips: Preheat the oven to 275 degrees F. Cut off the tough stems of the kale, then cut the leaves into 1 1/2-inch pieces. Toss the kale on a baking sheet with the olive oil and 1/2 teaspoon salt; spread in a single layer. Transfer to the oven and bake, flipping halfway through, until crisp, about 20 minutes.
- Meanwhile, make the sandwiches: Combine the apple and honey mustard in a medium bowl. Spread evenly onto 4 frozen waffles and top with the ham and cheese. Cover with the remaining waffles to make 4 sandwiches.
- Heat 2 tablespoons butter in a large nonstick skillet over medium heat. Add the waffle sandwiches and cook until golden, about 3 minutes per side, adding the remaining 2 tablespoons butter when you flip. Remove to a cutting board and cut the sandwiches in half. Serve with the kale chips.
HAM AND CHEESE WAFFLES
Steps:
- Fold the ham, cheese and pepper into the prepared waffle batter in a large bowl.
- Preheat a waffle iron and coat with cooking spray. Pour some batter into the waffle iron, spreading it into the corners. Close the lid and leave it closed until the waffles are cooked through and golden brown in spots, 6 to 8 minutes. Continue until all the batter has been used.
- Cut the waffles into sticks, transfer to plates and serve with maple syrup.
GRILLED HAM AND CHEESE SANDWICH

- To assemble the sandwiches, butter both sides of each bread slice. Lay ham and cheese on one slice and cover with the another slice. Trim the crusts off the sides.
- Heat a saute pan over medium-low heat, then fry the sandwiches until the cheese starts to melt and the sandwiches are golden brown, about 3 minutes on each side. You may need to add more butter to the pan.
- Remove the sandwiches to paper towels to drain, let them cool for 1 minute, then cut into quarters diagonally and serve 3 quarters each per serving.

- In a medium bowl stir together the flour, sugar, basil, baking powder, and salt. Add egg, milk, shredded cheese, and oil. Stir just until moistened. Add batter to a preheated, lightly greased waffle iron and bake according to manufacturer's directions. When done, use a fork to lift waffle off waffle iron. Repeat with remaining batter. You should have 8 4-inch waffles.
- For each sandwich, spread waffles with mustard. Layer ham, sliced cheese, and arugula on half of the waffles. Top with remaining waffles, spread side down.
- Heat a griddle or 12-inch skillet over medium heat. Add butter until melted. Add sandwiches. Cook for 4 minutes or until cheese is melted, turning once.

- Preheat waffle iron on high until just beginning to smoke. Reduce heat to moderate and brush generously with some butter.
- Spread butter on 1 side of 8 bread slices and turn slices over. WAFFLE IRON GRILLED CHEESE SANDWICHES
More method than recipe, I heated up my panini maker one night to make a grilled cheese, only to find out that I'd left the waffle plates inside. Instead of changing out the plates, I used them anyway and I loved the outcome. The sandwich gets super crispy but the cheese is still soft and gooey inside the little squares. It's my 'go to' method for grilled cheese now. Serve with spicy pickled veggies on the side!

- Preheat the waffle iron on low.
- Spread a thin, even layer of butter on one side of each piece of bread.
- Pile the cheese and ham on the unbuttered side of one slice of bread, and put the open-face sandwich in the waffle iron as far away from the hinge as possible. (This allows the lid to press down on the sandwich more evenly.) Place the second slice of bread on top, with the buttered side up, and close the waffle iron.
- Check the sandwich after 3 minutes. About halfway through, you may need to rotate the sandwich 180 degrees to ensure even pressure and cooking. If you'd like, you can press down on the lid of the waffle iron a bit to compact the sandwich, but do so carefully-the lid could be very hot. Remove the sandwich from the waffle iron when the bread is golden brown and the cheese is melted.
- Spread the Maple Butter on the outside of the sandwich. Slice in half diagonally and serve.
