Lime Bars image

Even if your cookie cache is already full,you have to stuff in a batch of lime bars. Shortcake crust is tender and buttery-good. The topping has a delicate lime essence that is much more refined than lemon bars.

Yield 48-72 bars

Number Of Ingredients 7

2 cups flour
1/2 cup powdered sugar
1 cup butter or 1 cup margarine
4 eggs
2 cups sugar
1 dash salt
1/3 cup fresh lime juice

Steps:

  • In bowl, combine flour and powdered sugar; cut in butter.
  • Press into 13x9" pan.
  • Bake 350°F for 20-25 minutes.
  • Meanwhile, beat eggs on high till pale yellow.
  • Gradually add sugar and salt and lime juice.
  • Continue beating on high.
  • Pour over hot crust.
  • Bake another 20-25 minutes until golden brown. Sprinkle with more powdered sugar. Cool and cut into bars.
  • Makes 4 1/2 dozen.
  • NOTE- You may add 2 drops of green food coloring to egg mixture for that lime green color -- .

1 cup granulated sugar
2 eggs
2 tablespoons flour
2 teaspoons lime zest
2 tablespoons lime juice
1/2 teaspoon baking powder
1/4 teaspoon salt
2 -3 drops green food coloring

Steps:

  • Heat oven to 350°F.
  • Mix flour, margarine and powdered sugar.
  • Press into ungreased 8x8x2 or 9x9x2 inch baking pan, building up 1/2 inch edges.
  • Bake 20 minutes.
  • Beat remaining ingredients unil light and fluffy,about 3 minutes,pour over baked layer.
  • Bake until no indentation remains when touched in the center, about 25 minutes.
  • Cool and then sprinkle with powdered sugar.
  • Cut into 1 inch squares.

2 cups all-purpose flour
1 cup cold butter
½ cup confectioners' sugar
2 cups white sugar
4 eggs
¼ cup all-purpose flour
¼ cup lemon juice, or more to taste
1 teaspoon baking powder
1 teaspoon lemon zest, or to taste
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.
  • Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.
  • Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.
  • Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.

1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350ºF.
  • Mix first 3 ingredients until blended; press onto bottom of 13x9-inch baking dish. Bake 10 min.; cool.
  • Bring 1 cup water to boil. Add to gelatin mixes; stir 2 min. until completely dissolved. Stir in remaining water; set aside. Blend sweetened condensed milk and sour cream in blender until smooth. Add gelatin mixture; blend well. Pour over crust.

1 cup boiling water
1 prepared angel food cake (8 inches), cut into 1-inch cubes
1 package (8 ounces) reduced-fat cream cheese, cubed
1/2 cup sugar
2 teaspoons lemon juice
1-1/2 teaspoons grated lemon zest
1 carton (8 ounces) reduced-fat whipped topping, thawed, divided

Steps:

  • In a small bowl, dissolve gelatin in boiling water. Refrigerate until mixture just begins to thicken, about 35 minutes. Place cake cubes in a 13x9-in. dish coated with cooking spray; set aside., In a small bowl, beat cream cheese until smooth. Beat in the sugar, lemon juice and zest. 1 cup chilled unsalted butter, cut into small pieces
1/2 cup powdered sugar
1/4 cup slivered almonds, finely ground
1 teaspoon grated lime peel
1/4 teaspoon salt
1 1/2 cups sugar
4 large eggs
3/4 cup fresh lime juice
1 teaspoon baking powder
Additional powdered sugar

Steps:

  • Preheat oven to 350 degrees F. Generously butter 13x9inch baking pan. Combine 2 cups flour, butter, 1/2 cup powdered sugar, ground almonds, lime peel and salt in processor and process until moist clumps form. Press onto bottom of prepared pan. Bake until edges are golden, about 20 minutes. Whisk sugar, eggs, lime juice, baking powder and remaining 1/4 cup flour in large bowl until well blended. Pour over hot crust. Bake until topping is set and lightly golden, about 25 minutes. Cool in pan on rack. Sift additional powdered sugar over top. Cut into squares.

1/3 cup sweetened flaked coconut, toasted and cooled
1/4 cup confectioners' sugar
1/4 teaspoon salt

1 cup sugar
1/3 cup flour
1/2 cup fresh lime juice, plus
2 tablespoons fresh lime juice
1 tablespoon freshly grated lime zest
1/3 cup sweetened flaked coconut, toasted and cooled

Steps:

  • For crust: Preheat oven to 325F.
  • Butter and flour an 8-inch square baking pan, knocking out excess flour.
  • Blend together with fingertips flour, butter, coconut, confectioners’ sugar and salt until mixture resembles coarse meal.
  • Pat mixture into prepared pan and bake in middle of oven 25-30 minutes, or until golden-brown.
  • Reduce oven temperature to 300F.
  • Make filling: Whisk together eggs and sugar until combined well and stir in flour, lime juice and zest.
  • Pour filling mixture over crust and bake in middle of oven for 20 minutes.
  • Top custard with coconut garnish and bake 5-10 minutes longer, or until just set.
  • Cool on rack and chill 1 hour.

  • In large bowl, mix limeade and yogurt with wire whisk until blended. Beat in pudding mix until well blended. Let stand 5 minutes to thicken. Stir lime peel into yogurt mixture. Gently stir in whipped topping and food color until desired green color.
  • Pour yogurt mixture over cooled crust; spread evenly. Refrigerate at least 2 hours before serving.
  • For squares, cut into 6 rows by 4 rows. Serve each square topped with extra whipped topping, lime slice and mint leaf.
