Cool Herb Dip for Blanched Vegetables image

Immersing vegetables briefly in boiling water brightens their colors and makes them crisp-tender; it also lets you cook them partially to use in recipes later.

1 cup loosely packed fresh basil leaves
1 cup reduced-fat sour cream
1/2 cup reduced-fat mayonnaise
1 tablespoon grainy mustard
1 tablespoon fresh lemon juice
Coarse salt and ground pepper

Steps:

  • In a food processor or blender, combine basil, sour cream, mayonnaise, mustard, and lemon juice. Season with salt and pepper.
  • Process until combined and basil leaves are finely chopped. Season with more salt, pepper, and lemon juice as desired. Cover, and refrigerate until thickened and chilled, about 20 minutes. Dip will keep up to 3 days.

Number Of Ingredients 9

3/4 pound small beets
1 small garlic bulb, 1/4 inch sliced off top
2 tablespoons drained prepared horseradish
1 tablespoon olive oil
1 tablespoon red-wine vinegar
1/4 cup whole almonds, toasted
1/8 teaspoon dried sage
coarse salt and ground pepper
3 pita breads (6-inch), lightly toasted, cut into 3/4-inch-wide strips

Steps:

  • Preheat oven to 425 degrees. Wrap beets and garlic separately in packets of foil. Place on a baking sheet. Bake garlic until soft, about 40 minutes; continue cooking beets until tender, about 20 minutes more. Cool in packets. With paper towels, rub off beet skins; transfer beets to a food processor.
  • Squeeze garlic from skin into processor. Add horseradish, oil, vinegar, almonds, and sage; pulse until combined. Season with salt and pepper. Serve with pita strips.

Steps:

  • Beat cream cheese and Catalina dressing until fluffy.
  • Serve with raw vegetables for dipping, or pipe onto raw vegetables that are cut into attractive bite-size pieces using a pastry bag and serrated tip.
  • Notes: Don't over-beat, and keep as cool as possible.
  • If it sits in a warm place too long, it tends to seperate; no harm done, but it looks rather strange.
  • The new'light' versions of the ingredients will work,but if made completely fat-free the texture is not as pleasing.
