2-1/2 cups butter, softened
2 cups sugar
2 large eggs, room temperature
1/4 cup 2% milk
2 teaspoons vanilla extract
7-1/2 to 8 cups (30 to 32 oz.) all-purpose flour
4 teaspoons baking powder
1 teaspoon salt

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, about 5 minutes. Beat in eggs, milk and vanilla. In another bowl, whisk 7-1/2 cups flour, baking powder and salt; gradually beat into creamed mixture, adding more flour if necessary. Divide dough into four 2-cup portions. Refrigerate, covered, until needed., Basic Cookie Dough may be used to prepare the following recipes: Crumb-Topped Date Bars, Cherry Surprise Cookies, Chocolate Mallow Cookies or Jelly Sandwich Cookies.

24 Oreos (2 cups | 268g Oreo crumbs)
4 tbsp (56g) butter, melted (salted or unsalted is fine)
35 Oreos (3 cups |403g Oreo crumbs)
5 tbsp (70g) butter, melted (salted or unsalted is fine)

Steps:

  • Add the Oreos to a food processor or blender and grind into fine crumbs. You do not need to remove the filling from the Oreos.
  • 2. Add the Oreo crumbs to a bowl and combined with the melted butter.
  • 3. Pour the mixture into your pie pan or springform pan (I like to grease mine to ensure no sticking) and press into an even layer on the bottom and up the sides.
  • 4. For a no bake crust (pie or cheesecake), you can refrigerate it for 30 minutes before adding your filling. If you are going to bake it, bake at 350 degrees for 8-10 minutes.

1 cup brown sugar
1/4 cup granulated sugar
1 cup unsalted butter (softened to room temperature)
2 1/2 teaspoons vanilla extract
1 teaspoon salt
2 cups all purpose flour
2 tablespoons milk (plus more if needed)
1 cup miniature chocolate chips

Steps:

  • Heat treat your flour by placing it in a microwave safe bowl and heating on high for 50-60 seconds until the internal temperature reaches 166°F.
  • In a large bowl using a hand mixer or stand mixer, cream together the brown sugar, granulated sugar, and butter. Beat until fluffy and light in color, about 1 minute. Beat in the vanilla and salt until combined.
  • Beat in flour until just combined. Add milk one tablespoon at at time and beat until dough starts to come together. Stir in the miniature chocolate chips with rubber spatula.

1 1/2 cups (175 g) finely ground chocolate cookie crumbs
5 to 8 tablespoons (70 to 115 g) unsalted butter, melted

Steps:

  • Preheat the oven to 350°F (175°C).
  • Crumble the cookies into the work bowl of a food processor and process until finely ground. Alternatively, you can put them in a bag and whack them with a rolling pin until finely crushed. Pour the butter into the crumbs and mix (hands are best for this) until the butter is fully incorporated and the texture is that of wet sand. Firmly press the crumbs against the sides of a 9-inch (23-cm) pie pan, then against the bottom of the pan (the underside of a measuring cup works well for smoothing the bottom crust). Chill the crust for at least 15 minutes to help prevent it from crumbling when serving.
  • Bake the crust for 10 minutes, or until fragrant. Remove it and allow it to cool before filling.

85g/3oz plain flour
100g/3½oz unsalted butter, softened
75g/2¾oz soft light brown sugar
50g/1¾oz caster sugar
1 tsp vanilla bean paste
75g/2¾oz dark chocolate chips
vanilla ice cream, to serve

Steps:

  • Start by heat-treating the flour to kill any bacteria. This can be done in the microwave, in a frying pan or in the oven. If using a microwave, tip the flour onto a plate and microwave on medium-full power for 90 seconds, stirring the flour every 15 seconds. For the frying pan method, tip the flour into a heavy-based frying pan and place over a medium heat, stirring almost constantly for about 4 minutes until the flour is hot. To heat-treat flour in the oven, preheat the oven to 170C/150C Fan/Gas 3½, tip the flour onto a baking tray in an even layer and heat for 5 minutes until the flour is hot, stirring halfway through. The flour must be cooled to room temperature before mixing the cookie dough.
  • Beat the butter until smooth. Add both sugars and beat for 2-3 minutes until pale and creamy. Add the vanilla and mix well.
  • Sift the cooled flour over the mixture and mix until smooth, then stir in the chocolate chips.
  • Chill slightly before serving, or store in the fridge until ready to use, crumbled and stirred through ice cream.

2 Tablespoons cinnamon, ground

Steps:

  • Preheat the oven to 400°F degrees and line a baking sheet with parchment paper, set aside.
  • In a small bowl whisk together the granulated sugar and cinnamon.
  • Chop pecans (if using) and set aside.
  • Melt butter in a small microwavable bowl at 50 percent power until melted.
  • Place pie crust dough on a lightly floured surface and gently roll the dough with a rolling pin in the the shape of a rectangle. Trim edges with a sharp knife as needed.

  • Seal the cookie dough with a little butter and pinch the edges to seal the seam.
  • Starting with the short end roll the pie crust dough into a log. Slice into 12 pieces.
  • Place on the prepared baking sheet and bake for 9-12 minutes or until the cookies are light golden brown.
  • Cool on a baking rack and sprinkle with confectioners's sugar.
