CREAMY TUNA & EGG SALAD
I was hungry for egg salad but wanted it to have a bit more omphf and some more protein to last in my gut, so I added tuna. I have both mayo and miracle whip in the recipe just in case some don't like the tang of miracle whip, so it tones it down somewhat.

Steps:
- Put eggs into a pot with cold water and bring to a boil.
- Once the water is boiling, cover the pan and remove from the burner. Set your timer for ten minutes.
- Cut up onion and drain tuna while the eggs cook.
- Once the eggs have done their 10 minute soak, rinse with COLD water to stop the cooking process.
- Continue to rinse the eggs until you can hold them to remove the shell.
- Remove the shell, rinse away any shell particles and cut into chunks (or small pieces if you like a finer texture).
- Mix the egg, tuna, onion in a bowl with a fork.
- Add mayo, Miracle Whip, ground mustard, paprika, salt and pepper and mix until blended.
- Enjoy on bread or toast; or top a plate of mixed greens with tomatoes. You could also stuff tomatoes with the salad. A perfect summer meal when you don't want to turn on the oven!

- Combine all ingredients in a medium bowl, mix thoroughly.
- Chill.
- Goes well with crackers or as a sandwich spread!
COMPLETELY DIFFERENT TUNA & EGG SALAD (NO MAYO)
Not your usual tuna or egg salad, this can be enjoyed as is, in a sandwich, on top of greens, or any other way that sounds good to you. If you want to add a touch of mayo for creaminess, go ahead- but it's plenty good without! You can change up the ingredients to suit what you have on hand, or what you like- chopped pickles instead of capers, oil packed tuna instead of water packed, different herbs, shallot instead of green onion... This is just how I first made it based on what was in my kitchen.

- Combine tuna, eggs, capers, pepper, onion and tarragon gently in a bowl.
- Whisk together vinegar, oil, salt and pepper in another small bowl.
- Fold the dressing into the tuna mixture. Taste for seasoning, and add more salt or pepper as needed.
- Chill for 1 hour for flavors to combine, then serve.
HEALTHY ALTERNATIVE TUNA SANDWICH (NO MAYO!)
I came up with this concoction one day when I was craving eggs and tuna and hand no mayo. So, in order to create the consistency desired to hold the tuna together I decided to add the yolk of a sunny-side up egg. The result was delicious and healthier than traditional tuna & mayo sandwiches! I have also tried this recipe with my brother and his buds agreed! I hope your taste buds will enjoy it as much as mine did! For a lighter meal, skip the bread and place tuna over a bed of lettuce!

- Open can and drain tuna. Place in a small bowl.
- Cook egg sunny-side up style. Make sure not to over cook yolk.
- Combine cooked egg with tuna. Using a fork, pop the egg yolk and cut up egg white. Mix well till yolk is evenly distributed.
- Add in olive oil, onion, basil, salt and pepper.
- Spread tuna over one slice of bread, place tomato rounds and leaf lettuce on top and then the other slice.
- Bite into it and enjoy!

TASTY TUNA MELT, NO MAYO
This tuna melt tastes incredibly rich and uses no mayo. It's a versatile recipe too. You can change the type of bread or cheese, spice it up or down, or even switch it to salmon instead of tuna, and it always comes out great. The lime juice "pre cooks" the tuna and makes it seem creamier, so you don't need any mayonnaise. It makes 4 sandwiches if your bread slices are small, but only 2 or 3 larger sandwiches if you use big slices of bread.

- Lightly toast the bread slices in a toaster.
- Combine the onions, parsley, and tuna in mixing bowl. You can add hot sauce or other spices if you want to jazz it up.
- Add the lime juice to the bowl and mix it all up with a fork. You can substitute lemon juice for lime juice if needed.
- Place the bread on a baking sheet. Cover each slice with the tuna mixture.
- Cut the cheese into slices and then cover each sandwich with a thin layer of cheese.
- Place the sandwiches under the broiler for 3 to 4 minutes, or until the cheese is melted and bubbling a bit.
- (Optional) You can also add a fresh slice of tomato or avocado to each sandwich and then broil for 1 or 2 more minutes. (If you broil much longer than that the tomato or avocado can get mushy).
- (Optional) If you like a firmer sandwich, melt a tablespoon of butter in a skillet and then transfer the cooked sandwiches to the skillet. Cook on medium heat for about 2 minutes, until the bottom of the bread is buttery and firm.
- Serve them while they're hot.
MY FAVORITE NO-MAYO EGG SALAD
I don't like mayonnaise and so I never have it in the house. I do, however, like egg salad, and I adjusted it to make it without the mayo. Pretty close to the original but tastier and healthier! If it seems too dry, add more yogurt, 1 teaspoon at a time. Enjoy on top of toast or in a sandwich.
