The clue's in the title with this one - it's not the prettiest recipe in the world, but boy is it comforting and super-delicious. Let the recipe flex to what you've got in the house - check out the easy swaps below for ideas.

600 g ripe mixed-colour cherry tomatoes
4 cloves of garlic
200 g rosemary focaccia
1 x 660 g jar of white beans
12 chipolatas, the best quality you can afford

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Halve the cherry tomatoes, peel and finely slice the garlic, and tear the bread into bite-sized chunks.
  • Place it all in a 30cm x 35cm roasting tray, pour in the beans and their juice, drizzle with 1 tablespoon each of olive oil and red wine vinegar, add a splash of water, and mix it all together.
  • Quickly pinch and twist each chipolata in the middle to make it into two mini ones, then randomly dot them around your bake, lightly pressing them into the beans and tomatoes.
  • Roast for 45 minutes, or until everything is golden, bubbling and delicious.

I'm not sure where this recipe came from, but it is so good! I have experimented with various ways of cutting the chopping the cabbage and tried different types of sausage, and they have all been enjoyed by me and my family. The most important thing to remember is to drain the fat and excess liquid as directed, or the casserole will be thin and watered down.

1 1/4 lbs Italian sausage
5 cups cabbage, coarsely chopped or 4 cups cabbage, finely chopped
3/4 cup sharp cheddar cheese, grated
3/4 cup sour cream (not low-fat)
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Remove casing from sausage and brown in skillet. Drain fat.
  • Stir in cabbage, cover, and cook over medium heat for 10 minutes or until cabbage is tender-crisp. Drain any extra liquid.
  • Stir in remaining ingredients and put in a lightly greased 9x9 baking dish.
  • Bake, uncovered, at 375 F for 20 minutes.

This egg, cheese, and sausage bake is good for a breakfast party.

1 ½ pounds bulk pork sausage
3 ½ cups milk, divided
8 eggs
¾ teaspoon dry mustard
8 slices bread, torn into small squares
2 cups shredded mozzarella cheese
1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Beat 2 1/2 cups milk, eggs, and mustard in a large bowl.
  • Spread bread squares into the bottom of a baking dish. Layer mozzarella cheese atop the bread and top with sausage. Pour the egg mixture over the entire dish. Cover the baking dish with plastic wrap and refrigerate 8 hours to overnight.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Stir cream of mushroom soup and 1 cup milk together in a bowl. Remove and discard plastic wrap from baking dish. Pour soup mixture over the 'bake.'
  • Bake in preheated oven until hot in the center, about 90 minutes.
