SICILIAN PASTA AND BROCCOLI
This is a simple dish my grandmother made for me when I was a child. Now I make it for my daughter, Xea, and she loves it. As the broccoli takes on a toasty brown color, it develops a delicious nutty flavor that even picky kids will like.

- Heat the water for your pasta while you prepare the broccoli.
- In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.
- Prepare the penne according to the package directions. Drain the pasta and toss it in the pot with the broccoli, garlic, and olive oil. If the mixture seems dry, add a little more oil.
- Toss in the Parmigiano-Reggiano cheese, stir, and garnish with the parsley.
BROCCOLI AND MACARONI WITH LOTS OF GARLIC

- Separate the broccoli into florets. Peel the tough skin from the stem and slice. Finely mince the garlic into very small pieces. In a large pot add the oil and heat until hot but not smoking over medium heat. Add the garlic and cook for 3 to 4 minutes. Add the broccoli, toss to coat and reduce to low heat. Cover and cook until tender about 15 to 20 minutes. Add the salt, ½ of the grated Parmesan cheese and garlic powder. Toss to distribute and cook for another few minutes. While the broccoli is cooking bring a large pot of water with ½ tablespoon of salt to the boil. Cook the macaroni for 10 minutes or until al dente. (Tender but still with some bite). Drain well. Add the pasta to a large serving bowl. Pour the broccoli and garlic mixture over the macaroni. Season with black pepper and red pepper flakes (as desired to taste). Toss until thoroughly combined. Sprinkle the remaining parmesan cheese on top. Serve warm.

GARLIC OIL SAUTEED PASTA WITH BROCCOLI

- In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
- Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
- Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
- Cook's Note: Use pasta water if the pasta was made fresh.
- Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.
ELBOW MACARONI WITH CRISPY BREADCRUMBS AND BROCCOLI

- Bring a large pot of salted water to a boil. Meanwhile, in a large skillet over medium heat, add 2 tablespoons olive oil. Add the breadcrumbs and toast, stirring constantly, until they are crisp and golden, 4 to 5 minutes, taking care not to let them burn. Scrape into a small bowl and toss with the lemon zest and parsley and then season with salt.
- Add the pasta to the boiling water and cook according to the package directions until al dente while you make the sauce. Wipe out the skillet used to toast the breadcrumbs and return it to medium-high heat. Add the remaining 4 tablespoons olive oil and, when the oil is hot, add the broccoli and toss to coat. Saute until it turns bright green, 2 to 3 minutes, then add the garlic and pepper flakes. Cook until the garlic is fragrant, about 1 minute, then pour in the stock. Simmer until the broccoli is tender, 5 to 6 minutes.
- When the pasta is done, scoop it out of the water with a spider or a small strainer and add directly to the sauce, reserving the pasta water. Simmer the pasta with the sauce just to blend the flavors, 1 to 2 more minutes, then drizzle with a tablespoon or so of olive oil and toss again.
- If the sauce seems dry, add up to 1/2 cup pasta water. Off the heat, stir in the cheese. Serve in warmed bowls and sprinkle with the breadcrumb mixture.
ONE-POT BROCCOLI MAC AND CHEESE
In the time it takes to make boxed macaroni and cheese, you can have a homemade version that's creamy with lots of sharp Cheddar, studded with broccoli and doesn't require making a roux. Instead, the sauce is thickened by the pasta's starch: As the noodles cook in milk, the milk thickens to the consistency of cream and the pasta absorbs the seasonings. Here, that's garlic powder, but you could also use mustard powder, ground cayenne or grated nutmeg like in traditional mac and cheese. The broccoli pieces end up soft and sweet, but if you want more bite, add them halfway through cooking.

- In a large pot or skillet, combine the macaroni, broccoli, milk, salt and garlic powder. Add 3 cups of water, and stir to combine. (The pasta may not be fully submerged. That's OK!) Bring to an active simmer over medium-high. Reduce the heat to medium to gently simmer. Cook, stirring often to ensure even cooking and to keep things from sticking to the bottom of the pot, until the pasta is tender, and the liquid resembles heavy cream and coats the noodles, 8 to 12 minutes. If the liquid evaporates so much that you don't see any between noodles, add 1/2 cup water. Adjust the heat as needed to maintain a gentle simmer.
- Remove from heat and stir in the Cheddar. Season to taste with salt and pepper. Eat!

- Melt butter; stir in flour salt and pepper.
- Add milk gradually, stirring constantly.
- Cook until thickened, stirring often.
- Remove from heat and stir in cheese and mayonnaise.
- Cook macaroni in boiling, salted water according to package directions.
- Cook just until tender; do not overcook.
- Drain, rinse, and drain again.
- Place a layer of macaroni, then a layer of chopped cooked broccoli in greased 1-1/2 quart casserole.
- Pour some of the sauce over broccoli.
- Repeat layers, ending with sauce.
- Bake at 350 degrees for about 20 minutes, or until thoroughly heated.
BROCCOLI MACARONI WITH SAUSAGE
This is an old favorite of my husband's that his family used to make, however, I've lightened it up SIGNIFICANTLY! His mom's recipe used salt lard (ick!) and a lot of oil. I love the taste of the broccoli, the pasta and the hot turkey italian sausage. This is a quick easy, low-fat dish that is very satisfying! Even my kids enjoy this one...I hope you do too! Please adjust the garlic and crushed red peppers to your taste. My family likes lots of both! NOTE: IF YOU ARE NOT A FAN OF HOT TURKEY ITALIAN SAUSAGE - USE REAL HOT ITALIAN SAUSAGE. The true recipe calls for real italian sausage but I find this recipe is just as delicious with a great quality hot turkey italian sausage.

- In a medium skillet over medium heat, fry sausage in olive oil until no longer pink (I like it dark and crispy!). Add in the garlic and crushed red pepper and sautee' until lightly golden. Drain and set aside.
- Bring a large pot of water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain.
- Meanwhile, steam the broccoli until tender and reserve the broccoli steaming water.

- Boil 5 cups water with 1 tsp salt and 1 tsp oil.
- Add macaroni and boil until almost done.
- Remove from heat.
- Add the broccoli florets, leave in hot water 2-3 mins til the pasta is completely done, strain.

- Drizzle pasta with 1 tsp oil and set aside.

BROCCOLI MACARONI SALAD
This salad was a big hit at a church function I attended. The lady who brought it told me basically what she had done, and I quickly bought the ingredients and fixed the salad myself the next day so I could jot it down and share with you all. Cook time is for cooking the pasta - also allow cooling time for the pasta (at least 30 minutes). Once assembled, the salad neds to chill as well - at least 1 hour before serving.

- In a large bowl, combine noodles, veggies, raisins, and sunflower seeds.
- In a small bowl, combine mayonnaise, Miracle Whip, vinegar, and sugar well.
- Pour dressing over salad and mix well.

A cheesy household favourite, very quick to prepare and easy to cook. This recipe is based on the use of Colman's Cheddar Sauce. If you don't have that particular sauce, there are lots of ways to whip up a quick cheese sauce.

- Trim the broccoli by removing from the base stem and removing any leaves attached. Always leave a decent amount of stem on each head of broccoli; they're really good for you and tasty. You'll need 3 saucepans for this recipe, so 3/4 fill the first saucepan with cold water (enough to cover the broccoli) and bring it to the boil. Add the broccoli to the pan and simmer for 20 minutes. All of the other cooking will be done within this 20 minutes as well.
- After 8 minutes, bring the 2nd saucepan of water to the boil and add the macaroni. Reduce to simmer and stir occasionally. This will take 10-11 minutes. After another 5 minutes, add your peas to the same saucepan as your pasta and turn it to a medium heat.
- Now take the 3rd saucepan, add your Colman's mixture and the milk and simmer for the remaining time. Stir this mixture constantly, as it will boil over very quickly and you need to remove all of the lumps.
- Once the 20 minutes is finished, drain the peas and pasta and cool down the largest of your saucepans by running it under the cold tap for a couple of seconds. Add the peas and pasta to the saucepan. Drain the broccoli and carefully cut it up into small pieces. Add the broccoli and the cheese sauce to the saucepan and mix it all together thoroughly.
