With its sugar-cone crust and layers of bananas and strawberry ice cream, this pretty pie never seems to last long...especially when our grandchildren visit. It's a favorite year-round, but we really enjoy it in summer, when fresh strawberries are plentiful.

- In a large bowl, combine the crushed ice cream cones, pecans and butter. Press onto the bottom and up the sides of a greased 10-in. pie plate. Refrigerate for at least 30 minutes., In another large bowl, combine vanilla ice cream and mashed bananas. Spread over the crust; cover and freeze for 30 minutes. , Arrange sliced bananas over ice cream; cover and freeze for 30 minutes. , Top with strawberry ice cream; cover and freeze for about 45 minutes., Hull and halve strawberries; place around edge of pie. Mound or pipe whipped topping in center of pie. Cover and freeze for up to 1 month. Remove from the freezer about 30 minutes before serving.

- Preheat the oven to 350 degrees F. Grease a 9- by 5-inch loaf pan.
- Roughly chop 1/2 cup of the walnuts, and finely chop the remaining 2 tablespoons, keeping them separate.
- Whisk together the flour, sugar, roughly chopped walnuts, baking powder, cinnamon, nutmeg and salt in a medium bowl.
- Whisk together the oil, eggs, vanilla and zest. Fold in the bananas and strawberries. Fold the oil mixture into the flour mixture until just combined (it's OK if there are some lumps). Transfer the batter to the prepared pan, and sprinkle the top with the finely chopped walnuts.
- Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.

- Slice 1 cup strawberries; refrigerate for later use. Chop remaining strawberries; set aside.
- Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
- Whisk in COOL WHIP. Stir in chopped strawberries. Refrigerate 20 to 30 min. or until mixture is very thick and will mound. Spoon into crust.

- In medium saucepan, combine sugar, cornstarch and salt.
- Blend together egg yolks and milk.
- Stir small amount of milk mixture into dry ingredients, making a smooth paste.
- Gradually blend in remaining milk mixture.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Allow to boil for one minute.
- Remove from heat and stir in Vanilla.
- Cool quickly by setting pan in bowl of ice or cold water and stirring for a few minutes.
- Arrange Strawberries in the bottom of the pie shell, reserving about 1/4 of them for garnish.
- Pour half of the custard over berries.
- Layer bananas over custard layer and top with remaining custard.
- Cover and refrigerate for at least 3 hours.

COLD STRAWBERRY/BANANA PIE
This recipe has gone through a lot of metamorphis'(sp) if you have the correct spelling let me know. I found this originally on vegweb.com and couldn't find a strawberry glaze to my liking - so here it is, at last. I have learned a lot about "vegan" cooking and recipes - I hope nothing in this recipe offends anyone. They have said that the pie-crust is vegan and also the glaze I chose to prepare. The pie must chill 5-6 hours.

- Strawberry Glaze:.
- In a 3 quart saucepan, bring the sugar and water to a boil.
- Sugar and water mixture boiled forms a simple syrup - mixture will thicken slightly.
- Add strawberries and simmer for 15-20 minutes, then strain.
- Serve hot or cold.
- Make the Pie:.
- Take crust and starting with bananas layer them on the bottom.
- Then layer strawberries.
- And so on, ending with strawberries on top, until crust is full.
- Pour glaze on top so it covers the pie and fruit on the bottom is also covered.
- Refrigerate for 5-6 hours.
- Garnish with strawberries and served with whipped cream, if desired.
- *Experiment with a 3rd layer of sliced Kiwi.

- Preheat oven to 450°. Unroll crust into a 9-in. pie plate; flute edge. Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. I modified this recipe from one I got at a WW meeting. 4 points for the whole pie - 1 point per serving. It can be put in a low fat graham cracker crust but don't forget to count the points. I'M MODIFYING THIS RECIPE BECAUSE I'VE FOUND THAT I LIKE IT BETTER IF I USE A LITTLE MORE WATER AND IT'S EASIER TO SPREAD IN THE PIE PLATE IF YOU ADD THE STRAWBERRIES TO THE SAUCE BEFORE HAND. - Dissolve Jello in 1 cup of boiling water, dissolve pudding mix in 1/2 cup hot (not boiling) water. Combine jello and pudding and microwave on high for 2 minutes. ADD STRAWBERRIES TO SAUCE GENTLY STIR UNTIL FULLY COATED, POUR OVER BANANAS.

- Mix the flour, powdered sugar and salt in a large bowl, until combined. Scatter the pieces of cold butter over the dry ingredients and cut in with a pastry blender or two butter knives. There will be pieces of butter that are the size of oatmeal flakes and butter the size of peas. Beat the egg yolk with a fork and add a little of the egg yolk at a time to the flour mixture. Mix for a ten seconds at a time. When the egg is in, mix until the dough forms clumps and curds. Turn the dough out onto a work surface and, very lightly and sparingly, knead the dough just to incorporate any dry ingredients that may have escaped mixing.
- Butter a 9-inch pie or tart pan. Press the dough evenly over the bottom and the sides of the pan. Press the crust so that the pieces cling to one another, but not so hard that the crust loses its crumbly texture. Freeze the crust for at least 30 minutes before baking.
- Preheat the oven to 375 degrees. Butter the shiny side of a piece of foil and fit the foil, butter side down, tightly against the frozen crust. Bake the crust for 25 minutes. Carefully remove the foil. If the crust is puffed, gently press it down with your fingers. Bake the uncovered crust for 8 to 10 more minutes.
