- In a small bowl, whisk the first 9 ingredients; set aside. Cook edamame and soba noodles according to package directions; drain. Rinse noodles in cold water; drain again., Just before serving, combine the coleslaw mix, carrots, green onions, noodles and edamame in a large bowl. Add dressing; toss to coat. Garnish with sesame seeds.

Steps:
- Mix the dressing ingredients in a bowl. Taste and adjust sweet, heat, tang(lime). Chill for 15 mins.
- Cook the noodles according to instruction on the package. (Simmer in boiling water for 4 to 5 mins for the wheat + buckwheat soba). Drain and rinse with cold water.
- Add the noodles to a bowl and add a tsp of oil or sesame oil and toss to coat.
- Add the veggies and half of the green onions to the bowl.
- Add the dressing to the bowl and toss well.
- Taste and adjust. Add salt or soy sauce for saltier, a bit more sweetener if needed, lime or vinegar for tang.
- Garnish with green onions, crushed nuts(optional) and sesame seeds (optional). Chill and serve.

COLD SOBA NOODLE SALAD RECIPE

- Gather the ingredients.
- Cook the soba noodles according to the package directions. Rinse with cold water and drain well. Set aside.
- Make the dressing. Combine the oil, lime juice, ginger, vinegar, sesame oil, honey, and chili sauce in a small mixing bowl. Season with salt and pepper and mix well until combined.
- In a large bowl, combine the soba noodles, cucumber, carrot, bell pepper, radish, spring onion, and cilantro. Add the dressing and toss well to combine. Taste for seasoning.

GINGER SOBA NOODLES
This is a delicious cold salad inspired by the sesame noodles served at my favorite deli. It can be served as a side dish or a healthy, vegan main course. The 4 servings listed are for small main course portions.

Steps:
- Boil water and prepare soba noodles according to package directions. Drain and rinse them while they are still a bit firm or they will become mushy.
- Meanwhile, heat a large non-stick pan over medium-high heat. Press excess liquid out of tofu, then cut into 1-inch squares. Spray pan with cooking spray and add tofu, arranging into one layer. Saute for about 6-8 minutes, turning often to brown all sides of the blocks.
- Combine all dressing ingredients. Either whisk together or blend in a blender (I use a Magic Bullet).
- In a large bowl, combine carrot, green onions, bell pepper, cooled tofu, and soba noodles. Pour dressing over and toss.
- This can be eaten immediately, but I recommend refrigerating for one hour, then letting it come to room temperature.

- Toast sesame seeds in a dry non-stick pan on medium heat till golden brown.
- Bring a pot of water to boil and add salt. Put in the soba noodles and cook for about 6 minutes or until tender but not mushy. Plunge drained soba into bowl of ice water.
- In a large mixing bowl, mix vinegar, soy sauce, honey and oil. Add drained, cooled soba and chopped spring onions and mix well.
- Mix in toasted sesame seeds and toss well. Adnd give that lemon wedge a good squeeze. Mix well.

SOBA SALAD WITH MISO DRESSING
Superfast veggie dinner or side dish. Courtesy of Mark Bittman, the Minimalist, from the October 1 2009 NY Times. He's not sure whether to call this a warm salad or a room-temperature noodle dish. I love edamame beans, and buying them frozen is fine for this dish. Pick up a bag of pre-washed spinach for this too. Tossing the spinach with the warm noodles and veggies should wilt the spinach, or stir fry them together in a little water to wilt a bit more. Soba noodles are a staple of Japan. They have a slightly firm texture and nutty flavor.

- Bring a large pot of water to a boil and salt it. Drop in the noodles and carrot and cook until tender, 2 to 4 minutes; add the edamame for about 30 seconds to 1 minute just to warm, then drain everything in a colander. Set aside.
- In a large salad bowl, whisk together the soy sauce, lime juice, miso and mirin or sugar. Add spinach, noodles, carrot, edamame, scallion and toss; then taste and season with salt and pepper as needed. Garnish with grated ginger at the table.
