Provided by beckie

Categories     Main Dish / Soup

Time 25m

Yield 4

Number Of Ingredients 11

6 roma tomatoes (~ 1 1/2 lbs), peeled, seeded, & chopped
1 cup cucumber, peeled, seeded, & diced
1/2 cup red pepper, seeded & diced
1/3 cup red onion, diced
1 lime, juiced
2 tsp balsamic vinegar
1/4 cup olive oil
~3/4 cup tomato juice
3/4 tsp salt
2 cloves garlic, minced
1/4 cup basil, sliced as garnish

Steps:

  • Mark an "X" in the bottom of your tomatoes. Bring a medium pot of water to a boil and add tomatoes. Cook ~ 20 seconds and transfer to an ice bath (ice and water) for ~ 2 minutes.
  • Peel, seed (over a fine mesh strainer), and dice tomatoes. Reserve tomato juices in a large bowl and add tomatoes to the juices. Toss the seeds out.
  • Add cucumbers, red peppers, red onion, lime juice, balsamic vinegar, olive oil, tomato juice, and salt to tomatoes and stir.
  • Add garlic and 1 cup of mixture to a blender and blend it up!
  • Transfer back to the bowl with the raw chunky ingredients and stir.
  • Gazpacho tastes best when chilled for a couple hours but can be eaten right away.
  • Add salt to taste and garnish with basil. Happy Eating! Beckie

For a bright, refreshing summer soup, try Alton Brown's Gazpacho recipe, loaded with fresh, crunchy vegetables and herbs, from Good Eats on Food Network.

Provided by Alton Brown

Categories     appetizer

Time 2h45m

Yield 4 servings

Number Of Ingredients 15

1 1/2 pounds vine-ripened tomatoes, peeled, seeded and chopped
Tomato juice
1 cup cucumber, peeled, seeded and chopped
1/2 cup chopped red bell pepper
1/2 cup chopped red onion
1 small jalapeno, seeded and minced
1 medium garlic clove, minced
1/4 cup extra-virgin olive oil
1 lime, juiced
2 teaspoons balsamic vinegar
2 teaspoons Worcestershire sauce
1/2 teaspoon toasted, ground cumin
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons fresh basil leaves, chiffonade

Steps:

  • Fill a 6-quart pot halfway full of water, set over high heat and bring to a boil.
  • Make an X with a paring knife on the bottom of the tomatoes. Drop the tomatoes into the boiling water for 15 seconds, remove and transfer to an ice bath and allow to cool until able to handle, approximately 1 minute. Remove and pat dry. Peel, core and seed the tomatoes. When seeding the tomatoes, place the seeds and pulp into a fine mesh strainer set over a bowl in order to catch the juice. Press as much of the juice through as possible and then add enough bottled tomato juice to bring the total to 1 cup.
  • Place the tomatoes and juice into a large mixing bowl. Add the cucumber, bell pepper, red onion, jalapeno, garlic clove, olive oil, lime juice, balsamic vinegar, Worcestershire, cumin, salt and pepper and stir to combine. Transfer 1 1/2 cups of the mixture to a blender and puree for 15 to 20 seconds on high speed. Return the pureed mixture to the bowl and stir to combine. Cover and chill for 2 hours and up to overnight. Serve with chiffonade of basil.

OUR FAVORITE GAZPACHO

Our Favorite Gazpacho image

With summer time coming up, I began thinking of my favorite summer recipes. At the top of the list is this gazpacho recipe. Gazpacho is a cold soup, full of vegetable's, with Hispanic origins; it is sometimes called "salad-soup." There are many kinds of gazpacho. This one is a chunky tomato-based one. It does have "heat" but you can control the amount to suit yourself -- or leave it out entirely. I like to substitute a can of Snap-E-Tom (or Spicy V-8) for an equal amount of tomato juice; that provides enough heat for us. I have also make this into a salad using Knox gelatin. Soften the gelatin as directed, then dissolve it in the required amount of tomato juice (according to package directions). Then add the remaining ingredients. The recipe for this gazpacho is very old; it came from Farm Journal.

Categories     Vegetable

Time 35m

Yield 6 serving(s)

Number Of Ingredients 16

2 1/2 cups tomato juice
2 tablespoons olive oil
2 -3 tablespoons red wine vinegar
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon Worcestershire sauce
1 garlic clove, minced
2 teaspoons minced parsley
1 cup peeled finely chopped tomatoes (may use drained canned tomatoes)
1/2 cup finely chopped celery
1/2 cup finely chopped cucumber
1/2 cup finely chopped green pepper
1/3 cup finely chopped green onion
2 tablespoons butter
1 garlic clove, minced
1 cup bread cubes (from 1 slice bread)

Steps:

  • Early in the day, combine all but the crouton ingredients in glass bowl and stir to mix. Cover and chill thoroughly several hours (or overnight).
  • To prepare Homemade Croutons, melt butter in small skillet; add minced garlic and saute very briefly. Add bread cubes, cut from day-old bread, tossing to coat. Saute until crisp and golden. You may want to double the crouton recipe.
  • To serve, ladle into chilled soup bowls. Pass Homemade Croutons separately for diner to spoon atop their gazpacho.

BEST GAZPACHO

Best Gazpacho image

More of a drink than a soup, served in frosted glasses or chilled tumblers, gazpacho is perfect when it is too hot to eat but you need cold, salt and lunch all at the same time. Gazpacho is everywhere in Seville, Spain, where this recipe comes from, but it's not the watered-down salsa or grainy vegetable purée often served in the United States. This version has no bread and is a creamy orange-pink rather than a lipstick red. That is because a large quantity of olive oil is required for making delicious gazpacho, rather than take-it-or-leave it gazpacho. The emulsion of red tomato juice, palest green cucumber juice and golden olive oil produces the right color and a smooth, almost fluffy texture.

Provided by Julia Moskin

Categories     dinner, easy, lunch, quick, soups and stews, appetizer

Time 20m

Yield 8 to 12 servings, about 1 quart

Number Of Ingredients 8

About 2 pounds ripe red tomatoes, cored and roughly cut into chunks
1 Italian frying (cubanelle) pepper or another long, light green pepper, such as Anaheim, cored, seeded and roughly cut into chunks
1 cucumber, about 8 inches long, peeled and roughly cut into chunks
1 small mild onion (white or red), peeled and roughly cut into chunks
1 clove garlic
2 teaspoons sherry vinegar, more to taste
Salt
1/2 cup extra-virgin olive oil, more to taste, plus more for drizzling

Steps:

  • Combine tomatoes, pepper, cucumber, onion and garlic in a blender or, if using a hand blender, in a deep bowl. (If necessary, work in batches.) Blend at high speed until very smooth, at least 2 minutes, pausing occasionally to scrape down the sides with a rubber spatula.
  • With the motor running, add the vinegar and 2 teaspoons salt. Slowly drizzle in the olive oil. The mixture will turn bright orange or dark pink and become smooth and emulsified, like a salad dressing. If it still seems watery, drizzle in more olive oil until texture is creamy.
  • Strain the mixture through a strainer or a food mill, pushing all the liquid through with a spatula or the back of a ladle. Discard the solids. Transfer to a large pitcher (preferably glass) and chill until very cold, at least 6 hours or overnight.
  • Before serving, adjust the seasonings with salt and vinegar. If soup is very thick, stir in a few tablespoons ice water. Serve in glasses, over ice if desired, or in a bowl. A few drops of olive oil on top are a nice touch.

AUTHENTIC GAZPACHO RECIPE – THE BEST SPANISH GAZPACHO
Why is gazpacho served cold? It’s believed that gazpacho originates in the south of Spain, where temperatures in summer can go up to 48°C (118°F). A cold soup is necessary to stay hydrated and refreshed during such hot weather. That said, before refrigeration gazpacho would have been served at room temperature (but never warm/cooked).
