Mary Berry's Coffee and Walnut Cake, rich, decadent, with a silky coffee icing, and a moist, crunchy coffee sponge. One of my favourite desserts that makes an excellent choice for any party or celebration.

200 g self-raising flour
200 g unsalted butter, soften
4 eggs
200 g sugar
1 tsp baking powder
1/2 cup chopped walnuts
2 tbsp expresso coffee (( or any instant coffee, preferably fine rather than granules))
400 g icing sugar
200 g unsalted butter, soften
2 tsp expresso coffee ((or any other instant coffee, preferably fine rather than granules).)
4 tsp milk
walnut halves to decorate the top

Steps:

  • Start by making the sponge.
  • In a bowl, add the butter and sugar and cream until smooth.
  • Add the eggs one by one, mixing well to incorporate.
  • Add the sifted flour, instant coffee, baking powder and chopped walnuts, and mix well.
  • Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
  • Grease and flour 2 round cake tins with detachable walls (mine have a diameter of 20 cm /8 inches).
  • Pour the batter in, and level it with the back of a spoon or a spatula.
  • Bake for 20-25 minutes or until a skewer inserted in the middle of the cakes comes out clean.
  • Transfer to a cooling wrack and leave to cool completely.
  • To make the icing, sift the icing sugar, add the soften butter, expresso coffee and milk to a food processor, and blitz until smooth.
  • Spread half of the icing over the first sponge, top with the second sponge, and ice the top with the remaining buttercream.
  • Decorate with walnut halves.

250g pack softened butter, plus extra for the tins
100ml strong black coffee (made with 2 tbsp coffee granules), cooled
280g self-raising flour
250g golden caster sugar
½ tsp baking powder
4 eggs
1 tsp vanilla extract
85g walnut, 2 tbsp roughly chopped, the rest finely chopped
100g icing sugar, sifted, plus a little extra for dusting
150ml double cream
100g mascarpone, at room temperature

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter 2 x 20cm springform cake tins and line with baking parchment. Set aside 2 tbsp of the coffee for the filling.
  • Beat the butter, flour, sugar, baking powder, eggs, vanilla and half the remaining coffee in a large bowl with an electric whisk until lump-free. Fold in the finely chopped walnuts, then divide between the tins and roughly spread. Scatter the roughly chopped walnuts over one of the cakes. Bake the cakes for 25-30 mins until golden and risen, and a skewer poked in comes out clean. Drizzle the plain cake with the remaining coffee. Cool the cakes in the tins.
  • Meanwhile, make the filling: beat together the icing sugar, cream and mascarpone, then fold in the reserved 2 tbsp coffee. Spread over the plain cake, then cover with the walnut-topped cake and dust with a little icing sugar.

Retro favourite coffee and walnut cake in a cupcake version, with a choice of luxurious mascarpone topping or classic buttercream

100g butter , well softened
100g light muscovado sugar
100g self-raising flour
2 large eggs
2 tsp instant coffee , mixed with 100ml/3½fl oz boiling water, then cooled
25g walnut half , chopped, plus 12 more for the tops
200ml tub mascarpone (you'll find this with the soft cheeses)
2 tbsp light muscovado sugar

Steps:

  • Heat oven to 180C/fan 160C/gas 4 and make sure there's a shelf ready in the middle. Line a 12-hole bun tin with fairy cake cases. Beat the butter, sugar, flour and eggs with 4 tsp of the coffee and a pinch of salt until creamy. Stir in the chopped walnuts.
  • Spoon the mix into the cases (start by adding 1 heaped tsp to each, then go back and top them up - that way they should all be of equal size), then bake for 18-20 mins until light golden and springy. Cool for a few mins in the tin, then lift the cakes out and cool completely on a rack.
  • Put the mascarpone, 3 tsp more of the coffee and the sugar into a large bowl, then beat together. Spread a dollop of the coffee cream onto the top of each cake, then finish with a walnut half. The cakes are best if they're iced fairly near the time of eating, so if you're making ahead, whip up the mascarpone mix, keep in the fridge, beat it again, then spoon onto the cakes just before serving. Un-iced cakes will keep up to 2 days in an airtight container.

This is unashamedly rich and luscious. Firstly, coffee and walnuts have a great affinity; secondly, so do coffee and creaminess; and thirdly, because the cake is soaked in coffee syrup, it's also meltingly moist.

1½ level tablespoons instant coffee mixed with 2 tablespoons boiling water
3 oz (75 g) walnut halves
6 oz (175 g) self-raising flour
1½ level teaspoons baking powder
6 oz (175 g) softened butter
6 oz (175 g) golden caster sugar
3 large eggs at room temperature
1 level tablespoon instant espresso coffee powder
2 oz (50 g) demerara sugar
1 level tablespoon instant espresso coffee powder
1 rounded tablespoon golden caster sugar
10 walnut halves, reserved from the sponge cake
9 oz (250 g) mascarpone
7 fl oz (200 ml) 8 per cent fat fromage frais

Steps:

  • First of all you need to toast all the walnuts, so spread them on a baking sheet and place in the pre-heated oven for 7-8 minutes. After that, reserve 10 halves to use as decoration later and finely chop the rest. Take a very large mixing bowl, put the flour and baking powder in a sieve and sift it into the bowl, holding the sieve high to give it a good airing as it goes down. Now all you do is simply add all the other cake ingredients (except the coffee and walnuts) to the bowl and, provided the butter is really soft, just go in with an electric hand whisk and whisk everything together until you have a smooth, well-combined mixture, then fold in the coffee and chopped walnuts. This will take about 1 minute but, if you don't have an electric hand whisk, you can use a wooden spoon and a little bit more effort. What you should end up with is a soft mixture that drops off the spoon easily when you give it a sharp tap; if not, add a spot of water. Divide the mixture between the prepared sandwich tins, spreading the mixture around evenly. Then place the tins on the centre shelf of the oven and bake them for 30 minutes. While the cakes are cooking you can make up the syrup and the filling and topping. For the syrup, first place the coffee and sugar in a heatproof jug, then measure 2 fl oz (55 ml) boiling water into it and stir briskly until the coffee and sugar have dissolved, which will take about 1 minute. Next, the filling and topping, and all you do here is place all the ingredients, except the reserved walnuts, in a bowl and whisk them together till thoroughly blended. Then cover the bowl with clingfilm and chill till needed. When the cakes are cooked, ie, feel springy in the centre, remove them from the oven but leave them in their tins and prick them all over with a skewer while they are still hot. Now spoon the syrup as evenly as possible over each one and leave them to soak up the liquid as they cool in their tins. When they are absolutely cold, turn them out very carefully and peel off the base papers - it's a good idea to turn one out on to the plate you're going to serve it on. Then spread half the filling and topping mixture over the first cake, place the other cake carefully on top and spread the other half over. Finally, arrange the reserved walnut halves in a circle all around. It's a good idea to chill the cake if you're not going to serve it immediately. COFFEE WALNUT LAYER CAKE

This is a subtle cake: the coffee tempers the sweetness, and the buttery sweetness keeps it all mellow. Even if you don't make cakes, this one is a cinch. Don't be alarmed if the two sponge layers look thin when you unmold them. They are meant to be, because the cake gains a lot of height with its frosting. This cake is all about old-fashioned, homespun charm, so don't worry about how messy it looks: however the frosting goes on is fine. If you want to fully cover the sides of the cake, make a double batch of the frosting.

Steps:

  • Heat oven to 350 degrees. Butter two 8-inch cake pans, and line base of each with parchment paper. In food processor, combine 1/2 cup walnut pieces and sugar. Process to a fine powder. Add butter, flour, baking powder, salt and eggs. Process to a smooth batter.
  • Add 2 tablespoons milk to coffee mixture and pour this down feed tube with motor running. Mixture should be just soft enough to drop from a spoon; if not, add more milk. Divide cake batter between two pans. Bake until risen and springy to touch, about 25 minutes. Cool on a rack for 10 minutes, then remove from pan and place on rack. Remove parchment paper. Cool completely. You may want to level them if they domed in the oven.
  • For frosting: Place confectioners' sugar and salt in food processor and pulse until lump-free. Add butter and process until smooth. Add coffee mixture down feed tube and pulse until well blended.
  • Place one cake upside down on a plate or cake stand. Spread with about half the frosting. Place second cake right side up on frosting, and cover top and sides in a swirly pattern. Place a walnut half in center of cake, and gently press remaining halves into top of cake, around the edge.

100g/3½oz unsalted butter, softened, plus extra for greasing
100g/3½oz caster sugar
2 large free-range eggs
100g/3½oz self-raising flour
1 level tsp baking powder
50g/1¾oz chopped walnuts
1 tbsp coffee essence
75g/2¾oz unsalted butter, softened
225g/8oz icing sugar, sifted
2 tsp milk
2 tsp coffee essence
8 walnut halves, to decorate

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Lightly butter two loose-bottomed 18cm/7in sandwich tins and line the bases with baking paper.
  • Put the butter, sugar, eggs, flour, baking powder, walnuts and coffee essence in a large mixing bowl and beat together (using an electric hand whisk if you have one) until well combined and smooth.
  • Divide the mixture evenly between the tins. Level the surface using a spatula or the back of a spoon.
  • Bake for 20-25 minutes, or until an inserted skewer comes out clean. Leave the cakes to cool in the tins for 5 minutes, then run a small palette knife or rounded butter knife around the edge of the tins and carefully turn the cakes out onto a wire rack. Peel off the paper and leave to cool completely.
  • For the filling and topping, beat the butter and gradually add the icing sugar. Add the milk and coffee essence and beat until smooth.
  • Choose the cake with the best top, then put the other cake top-down onto a serving plate and spread with half the coffee icing. Sandwich together with the other half. Ice the top of the cake and decorate with the walnut pieces to serve.

  • For the sponge Preheat oven to 190C. Grease and line a 6" cake tin. Sift the flour + baking powder + salt 3 times. Keep aside. Beat the eggs, coffee and sugar well with hand beater over gently simmering water till it triples in volume. A thick ribbon of batter should fall falls and holds in place for at least 5 seconds (beat for approx 10minutes). Gently fold in the sifted flour; mix lightly so that air doesn't escape. Turn gently into tin and bake for 20-25 minutes till done. Don't overbake or sponge will be dry. Once done, remove from tin after 5 mins and leave on rack to cool completely. Cut horizontally into 2 layers.
  • For Filling Topping: Whip all ingredients together until you get desired consistency. Cream should be thick and holds peaks. Adjust sugar if need be.
  • Assembling: Use about 1/3 to sandwich the cake, and frost the sides and top with the rest. Leave to set for about 20 minutes in the fridge.
  • For the lace border Melt the chocolate in a ziploc bag. Snip a TINY hole in one corner for piping. To make a border for the cake, measure the height of the border that you would like, and the circumference of the cake. Cut our parchment paper to this measure and squiggle patterns or doodle with melted chocolate on it. (If you are unsure, keep a pattern under the parchment and trace out with melted chocolate). Wait for it to almost set, where the paper is still flexible and the chocolate is not set hard. Wrap it around the cake and press gently to the frosted sides so that the pattern sticks to the sides. Chill for about 30 minutes in the fridge to set the chocolate. Gently peel off the parchment.
